Yes, I know they are a seafood restaurant, but Swatow Seafood Restaurant (汕头海鲜) has some of the most beautifully crafted mooncakes I have seen this year. The Flaky Teochew Golden Lotus Blossom Delight (金莎荷花酥) with uniquely crafted golden sand chocolate ball filling, crispy outer layer, is perfect for sharing with friends and family during the festive season.

If lotus flower isn’t your type, how about Flaky Teochew Peach Blossom Double Delight (桃花双拼). Each box contains two pieces of Sweet Coconut Paste Mooncakes (酥皮椰香) and two pieces of Savoury X.O Scallop Paste Mooncakes (酥皮X.O干贝).

The traditional Teochew “La Piah” (潮州双拼大朥饼) pastry, measured 18cm in diameter. Multi-layered crispy skin embraces delectable lotus paste and red bean paste, adorned with five egg yolks. This sweet and savoury combination will surely entice your appetite.

Salmon and Leek Cassolettes with Mussel Hollandaise

Simple ingredients --some dug up in the Kitchen Garden-- make a special dish with these Salmon and Leek Cassolette with Mussel Hollandaise, something you can serve on grand occasions or on a date night! Happy Friday!
Ingredients (serves 4):
1 1/2 tablespoon unsalted butter, softened
1 large Garden Leek
1 tablespoon unsalted butter
1 tablespoon olive oil
450 grams/1 pound fresh salmon fillets
fleur de sel and freshly cracked black pepper, to taste
3 large egg yolks
2 heaped teaspoons Dijon Mustard
1 1/2 lemons
1 1/3 cup unsalted butter, cut into small chunks
1/2 teaspoon freshly cracked black pepper
a small bunch Garden Chives 
1/4 cup good dry white wine (like New Zealand's Tora Bay Martinborough Sauvignon Blanc)
1 cup beautiful mussels, thawed and thoroughly drained
Preheat oven to 165°C/330°F.
Generously butter 4 individual cassolettes or baking tins. Set aside.
Thoroughly rinse Garden Leek under cold water, removing any dirt.
Melt butter with olive oil in a nonstick skillet over medium heat. Cut Leek into thin slices and add them to the skillet. Cook, 5 minutes, until just softened.
Spoon a small bed of Leeks into each cassolette.
Remove the skin from the salmon fillets, and cut them into large cubes.
Arrange salmon cubes onto the bed of Leeks into each cassolette. Season, to taste, with fleur de sel and black pepper. Set aside.
In a medium bowl, combine egg yolks and Dijon Mustard. Thoroughly squeeze in the juice of the whole lemon and the lemon halve. Stir energetically with a whisk, to mix.
Fit the bowl over a small saucepan of simmering water (the bottom of the bowl should not touch the water.)
Without stopping whisking, gradually add butter chunks to the yolk mixture, one at a time. Whisk until butter is fully incorporated and Hollandaise is smooth, shiny and thickened. Season with black pepper.
Finely chop Garden Chives, and stir into the Hollandaise. Gradually whisk in Sauvignon Blanc. Finally, gently fold in the mussels. Remove from the heat.
Spoon Mussel Hollandaise generously onto the salmon and bed of Leeks into each cassolette.
Place them in the middle of the warm oven, and bake, at 165°C/330°F, for 25 minutes.
Serve Salmon and Leek Cassolette with Mussel Hollandaise hot, with a glass of chilled dry white, like Aotearoa New Zealand's Tora Bay Sauvignon Blanc.

Itacho Sushi (板长寿司) is currently holding a Premium Hokkaido Scallop Festival with up to 30 per cent off their range of innovative scallop items. As a seafood lover, I can’t afford to miss this chance to savour the shellfishes. Heading to the branch at ION Orchard on a weekday morning to beat the peak lunch time crowd.

Flipping through the online menu via the tablet, I quickly zoomed in to the Scallop Sushi promotion page and started sending the items to the cart. Took a slightly longer time to decide which are the dishes I wanted as they all look equally delectable. In the meantime, scooped out a small spoonful of wasabi and poured soy sauce over it.

Didn’t have to wait for long before the first plate of sushi was served. From the left are two each of Roasted Salmon Skin Soya Sauce (S$1++ each) and Roasted Salmon Skin Soya Sauce with Cod Fish Caviar Mayo (S$1.20++ each) sushi. The salmon sushi were melt in the mouth soft and so yummy. If not because the restaurant limits each customer to just two pieces per type, I would have order it over and over again.

The three scallop sushi on the right side of the plate are Roasted Scallop Sushi (S$3.50++), Roasted Scallop with Black Truffle Sushi (S$3.90++) and Roasted Scallop with Cod Fish Caviar Sushi (S$3.70++). All three of the scallop items were so fresh and sweet tasting just like those I had in Hokkaido. The toppings on the two of the sushi enhanced the overall flavours to raise it up a notch.

The next plate I ordered is the 3 Kinds Scallop Sushi Set (S$5.80++). The scallops are un-torched and came with different toppings of tobiko mayo (seasoned flying fish roe), black truffle (paste form) and lobster salad with avocado. Again the raw scallops were just so yummy and the toppings complemented the whole package.

The last dish to be served is this Baked Scallop Spicy Salmon Mayo Egg with Rice (S$8.40++). A beautiful dish topped with six scallops, an egg and baked till golden brown. The creamy and spicy salmon mayonnaise completely covered the white rice underneath. The oozing egg yolk added a wholesome goodness to the rice dish. Even as I walked to the cashier to pay the bill, I am already planning on the next trip to try out the other dishes on the menu.
