WHAT DOES TEMPEH TASTE LIKE? Tempeh is formed through a diverse group of microorganisms such as fungi, yeasts, lactic acid bacteria and the rhizopus molds. This is how various posts online describes it: 🔹The aroma should be mushroom-like (or yeast-like). A very slight smell of ammonia is normal. 🔹Just a mild, nutty, slightly yeasty flavor. 🔹It should have a smell that many people compare to yeast or mushrooms. I guess I’ve grown up with eating tempeh for such a long time I’m so used to the taste and smell. Also, if you’re used to eating store-bought tempeh in the US or Europe - this is usually pasteurised. That’s why you might find the taste of homemade tempeh different from the ones in the store. But if it’s something that bothers you, here are 4 suggestions which may help you: 1. Steam tempeh for 10-15 minutes may help remove some of the smell. 2. Marinate your tempeh in a flavoursome marinade for 24 hours in the fridge before cooking it. (The Tempeh Making course comes with a Teriyaki Tempeh recipe - try that, the marinade should mask the yeasty taste) 3. This is what a lot of people do in Malaysia - deep fry the tempeh. This is something I don’t advocate though as I doubt you’d get much nutrients left after deep frying. 4. Grill or pan-fry thinly sliced tempeh. Would you like one of my favourite tempeh recipes? EXPERIMENTING: tempeh chocolate sauce? I was trying to see if I could make a chocolate sauce from the adzuki bean tempeh that @angiesveganpantry so kindly gave me. She did mention that adzuki bean tempeh has a certain sweetness to it and would be good in desserts. It turned out creamy so maybe I can use it as a filling in desserts! 😁 . INGREDIENTS: ~ Handcrafted organic adzuki bean tempeh from @angiesveganpantry ~ Coconut oil ~ Liquid sweetener of choice ~ Cocoa powder from @signaturemarket . I also dehydrated slices of the tempeh in my @excaliburdehydrator until it became crispy. Love how it gets crispy even at a low heat of 45 degrees Celsius. It’s so good as a snack. OIL-FREE TEMPEH CURRY (high raw) by #RawChefYin. Mr Jazz Guitarist loves curry, so I made this for him. This one is oil-free as we ate out during lunch and I didn’t feel too good after eating out at the nasi kandar stall. Might be due to the oil and also overcooking. While tempeh is technically not raw as the beans were cooked in the tempeh making process, the rest of the ingredients are raw. I didn’t want to use any heat on it so I used raw food techniques to prepare it, including blending and dehydration. INGREDIENTS Ingredients A 2 stalks of lemongrass, thinly sliced 3 kaffir lime leaves, finely sliced 1 cup freshly squeezed coconut milk (santan) Ingredients B 20 curry leaves 5 red chillies 1 clove garlic 5 macadamia nuts 1-inch ginger root 1 teaspoon coriander seeds 1 teaspoon Masarang Arenga Forest Sugar from @straitswholefoods ½ teaspoon organic salt from @matahariorganic 200 gm organic black bean tempeh from @angiesveganpantry . METHOD 1. Cut tempeh into strips. I usually cut it into 1-inch pieces, ¼ inch thick. 2. Place ingredients A into a blender and blend till smooth. Strain mixture. Pour back into blender. 3. Add ingredients B into blender as well and blend till smooth. This is your curry mixture. 3. Add tempeh slices into a bowl, pour curry mixture over and mix till well coated. 4. OPTIONAL: If you prefer it warm, place bowl of tempeh in a food dehydrator at 45 degrees Celsius for 1 hour. We ate it just as is without dehydrating and it tasted really good! Can you really make TEMPEH without DEHULLING?🤔 Yes, you can. You just need to know what beans/seeds/nuts to use so you don’t need to dehull. Which means you don’t need to remove the skins from the beans. The tempeh in these pictures are made from organic black beans (green kernel inside). I didn’t have to remove the skins and yet they formed beautifully. My students have also successfully made their tempeh without having to dehull. 💯 In fact, in my “How To Make Tempeh From Scratch” online course, I list out 11 other beans/nuts/seeds that don’t require you to spend time trying to get off those skins. “IT’S NOT TEMPEH UNLESS YOU MAKE IT OUT OF SOY BEANS!!” - exclaimed the irate man. He sounded exasperated. “How can you use other beans to make tempeh?”. He was upset that I ran a tempeh making workshop but was using black beans instead of soy beans. He’s of the older generation. I don’t really know what his story is. Maybe soy tempeh means the world to him and he can’t stand seeing these blocks of quinoa and chana dal being “wrongly” labeled as tempeh. Maybe he grew up eating soy tempeh all his life so making it with anything else is just blasphemous. I don’t know. *shrugs* But what I do know is that teaching others how to make tempeh from NON-soy beans has brought a lot of joy to people. My students are happily making chickpea tempeh. Or adzuki bean tempeh. Or mung bean tempeh. Or corn tempeh. Or sunflower seed + pumpkin seed tempeh. 💞 And one annoyed person who holds good memories of soy tempeh should not stop me from doing so. 😮 After reading @kirstenshockey’s extensive and comprehensive book on Miso, Tempeh, Natto & Other Tasty Ferments where she makes tempeh with: ~ ancient grains such as sorghum, millet, teff and quinoa ~ chestnut ~ hazelnut ~ cocoa nib ~ ayocote bean ~ hominy I am more than encouraged to be creative and try out all sorts of variations. SWEET & SOUR TEMPEH SALAD - I tried out a recipe by @melindasoon I just made 2 batches of non-soy tempeh ~ a pumpkin + sunflower seed tempeh ~ kacang dhal + @organiculesuperfoods cacao nibs + @bobsredmill coconut flakes + hazelnuts tempeh And then I saw teacher Melinda Soon sharing her vegan sweet & sour tempeh recipe so I wanted to make it! Watch how I did so on my Facebook Live videos. Here’s what I used (had to tweak her recipe with what I had in my kitchen): - grated ginger - Balsamic vinegar - @mu.soysauce - Masarang Arenga Forest Sugar (unrefined, organic, low GI) - Peppery Chanterelle salt - cold pressed organic sesame oil - chilli I marinated the tempeh and then dehydrated them in my @excaliburdehydrator. After that I made a simple salad by assembling the sweet & sour tempeh with: ~ microgreens from The Farm Asia ~ red radish ~ pomegranate ~ sesame seeds SOOO DELICIOUS!! TEMPEH BALLS by #RawChefYin, adapted from a laddu bliss ball recipe by @straitsroadkitchen. 😍 I was initially going to just follow Chef Sabrina’s recipe but then I didn’t really feel like having anything too sweet today and I thought since it’s tempeh, perhaps I’ll experiment and turn it into a savoury one instead. I’m not quite sure how others feel about it not being sweet but then again, I’ve seen loads of recipes using cacao in a savoury dish, so why not? Here’s what I did… INGREDIENTS: ~ 100g organic, handcrafted chickpea tempeh from @angiesveganpantry ~ 1 piece of spicy preserved beancurd ~ a little liquid from the spicy preserved beancurd ~ 1.5 tablespoons coconut oil spread from @marylebonegroup ~ raw, organic cacao nibs from @organiculesuperfoods METHOD: 1. Cut tempeh into cubes. Place in food processor or blender. I used my @nutribullet. 2. Add in coconut oil, beancurd, beancurd liquid into Nutribullet and blend till it becomes a smooth paste. 3. Leave in fridge for 15 minutes to firm up. 4. Roll into balls and gently press in cacao nibs. Since these were savoury, I ate them with my quinoa for lunch. TEMPEH MILK Having loads of fun experimenting with the handcrafted, organic tempeh that presented to me from @angiesveganpantry.😍 After reading the Tempted by Tempeh book, I decided to try making tempeh milk, adapting the recipe to my taste. Here’s what I did: INGREDIENTS 100 gm organic/homemade tempeh 500ml filtered water 2 dates, pitted ½ vanilla pod Pinch organic salt METHOD Blend all ingredients till smooth. I used it and made it into a smoothie with bananas and pure noni juice (for recipe, refer to my Fun with Ferments eBook). There was a bit of bitterness to it and a strong tempeh taste but once used in the smoothie, the bitterness and tempeh taste disappeared.🍶 . . . What are your favourite ways of cooking tempeh?
