DAY 15: RAW VEGAN CAULIFLOWER BITES featuring CFC spice blend by my friend @zaccharybird! I’ve been wanting to try out Zac’s spice blend since I met him at the @perthveganexpo in March earlier this year and it took me sooooooo loooooong to finally do it. In case you didn’t know, Zac is the man behind the CFC (Cruelty Free Cauliflower) drumsticks fame! Go check his feed & his original recipe on his website. Got some cauliflower at the TTDI wet market the other day and figured it’d be great to make this dish as part of my 21-day raw vegan challenge. As I don’t deep fry my food, this is a reincarnation as cauliflower bites instead, using the @excaliburdehydrator. Here’s what I did: INGREDIENTS: 1 medium cauliflower, use florets only . *For Spice Blend* - adapted from Zac Bird’s recipe: 3/4 tablespoon Masarang Arenga Forest Sugar from @straitswholefoods 1/2 teaspoon Truffle & Black Garlic Salt (more on that later) 1/2 teaspoon smoked paprika 1/2 teaspoon onion powder 1/2 teaspoon chilli powder 1/4 teaspoon sage 1/4 teaspoon all spice 1/4 teaspoon dried basil Pinch of dried oregano Pinch of turmeric 1/2 teaspoon kala namak 2 teaspoons nutritional yeast 1 tablespoon @clearspringuk organic unpasteurised Japanese Hatcho miso @olivegrov.es EVOO Sweet basil microgreens from @greenpatchmalaysia METHOD: Place all spice blend ingredients into a large bowl. Toss cauliflower florets in spice blend until evenly coated. Place on non-stick dehydrator sheet and dehydrate in Excalibur Dehydrator at 45 C for 3 hours or desired texture. EXPERIMENTING: tempeh chocolate sauce? I was trying to see if I could make a chocolate sauce from the adzuki bean tempeh that @angiesveganpantry so kindly gave me. She did mention that adzuki bean tempeh has a certain sweetness to it and would be good in desserts. It turned out creamy so maybe I can use it as a filling in desserts! 😁 . INGREDIENTS: ~ Handcrafted organic adzuki bean tempeh from @angiesveganpantry ~ Coconut oil ~ Liquid sweetener of choice ~ Cocoa powder from @signaturemarket . I also dehydrated slices of the tempeh in my @excaliburdehydrator until it became crispy. Love how it gets crispy even at a low heat of 45 degrees Celsius. It’s so good as a snack. Served it with my favourite vegan ice cream in KL - @kelava.my🍦 Mr Jazz Guitarist tried it and said that the combination of vegan ice cream, crispy tempeh and chocolate cream worked well even though it sounded quite weird in the beginning. 🍦🍫😋 Do you like to experiment or would you prefer to stick to tried and tested recipes?
