Tiramisu (raw vegan) by #RawChefYin. Made this in May 2019 - reposting it since I want to make it again today! I also got shit from someone who insisted my tiramisu is not raw since I used coffee. I explained it was a cold brew and it’s only 2 tablespoons out of this entire recipe and eventually he deleted his comments. SERIOUSLY - why do people like question you and say “That’s NOT raw”. I mean, come on. The whole idea is to have minimally processed foods, nuts, seeds, vegetables and fruits. That’s what I mainly eat. CHOCOLATE CEREAL BARS - made by Raw Chef Yin as my coursework with @loewdelights via @veecoco_academy.🍫 I was really excited about trying out this recipe and yesterday I couldn’t wait for the day to be over so I could wake up in the morning and make this. This is part of the online Vegan Swiss Chocolates & Sweets course I’m taking with a vegan gourmet chocolate company in Zurich, Switzerland.😍 I changed up a lot of the ingredients because I wanted my version to be healthier. The original recipe called for crunchy cereal but I’ve stopped buying cereal for years as it’s usually highly processed and contains refined white sugar. So here’s what I used instead. The sisters recommend that you use roasted nuts for a better aroma and flavour but for mine, I just used raw nuts and activated them. Which means I soaked them in filtered water, rinsed them and then dehydrated the nuts in my @excaliburdehydrator at 45 Celsius till they are dry and crispy. The soaking to remove the enzyme inhibitors for digestibility. The low heat in the food dehydrator means that the nutrients are not destroyed by the high heat if roasted. The nuts and seeds were still crispy so it worked well. I added some fresh pomegranate too which means these cereal bars can’t keep long but I expect them to be finished in 1-2 days as I made a very small batch and they’re super yummy. DAY 15: RAW VEGAN CAULIFLOWER BITES featuring CFC spice blend by my friend @zaccharybird! I’ve been wanting to try out Zac’s spice blend since I met him at the @perthveganexpo in March earlier this year and it took me sooooooo loooooong to finally do it. In case you didn’t know, Zac is the man behind the CFC (Cruelty Free Cauliflower) drumsticks fame! Go check his feed & his original recipe on his website. Got some cauliflower at the TTDI wet market the other day and figured it’d be great to make this dish as part of my 21-day raw vegan challenge. As I don’t deep fry my food, this is a reincarnation as cauliflower bites instead, using the @excaliburdehydrator. Here’s what I did: INGREDIENTS: 1 medium cauliflower, use florets only . *For Spice Blend* - adapted from Zac Bird’s recipe: 3/4 tablespoon Masarang Arenga Forest Sugar from @straitswholefoods 1/2 teaspoon Truffle & Black Garlic Salt (more on that later) 1/2 teaspoon smoked paprika 1/2 teaspoon onion powder 1/2 teaspoon chilli powder 1/4 teaspoon sage 1/4 teaspoon all spice 1/4 teaspoon dried basil Pinch of dried oregano Pinch of turmeric 1/2 teaspoon kala namak 2 teaspoons nutritional yeast 1 tablespoon @clearspringuk organic unpasteurised Japanese Hatcho miso @olivegrov.es EVOO Sweet basil microgreens from @greenpatchmalaysia METHOD: Place all spice blend ingredients into a large bowl. Toss cauliflower florets in spice blend until evenly coated. Place on non-stick dehydrator sheet and dehydrate in Excalibur Dehydrator at 45 C for 3 hours or desired texture. VEGAN OIL-FREE MEE HOON by #RawChefYin🍜 Mr Jazz Guitarist @azsamad asked me if I could make him a mee hoon (rice vermicelli) dish for him as he missed it so I whipped one up with his favourite ingredients including tempeh!😀 . I made this in the Thermomix using the usual mee hoon recipe and just refused to add any oil. He said it tasted wayyyyy better than the ones cooked in oil coz this was so clean tasting and flavourful. Yipppeee! I added in loads of microgreens from @pintsizegreens to keep the raw element there. Also known as vegetables confetti, microgreens are harvested at cotyledon or first true leaf stage. OIL-FREE TEMPEH CURRY (high raw) by #RawChefYin. Mr Jazz Guitarist loves curry, so I made this for him. This one is oil-free as we ate out during lunch and I didn’t feel too good after eating out at the nasi kandar stall. Might be due to the oil and also overcooking. While tempeh is technically not raw as the beans were cooked in the tempeh making process, the rest of the ingredients are raw. I didn’t want to use any heat on it so I used raw food techniques to prepare it, including blending and dehydration. INGREDIENTS Ingredients A 2 stalks of lemongrass, thinly sliced 3 kaffir lime leaves, finely sliced 1 cup freshly squeezed coconut milk (santan) Ingredients B 20 curry leaves 5 red chillies 1 clove garlic 5 macadamia nuts 1-inch ginger root 1 teaspoon coriander seeds 1 teaspoon Masarang Arenga Forest Sugar from @straitswholefoods ½ teaspoon organic salt from @matahariorganic 200 gm organic black bean tempeh from @angiesveganpantry . METHOD 1. Cut tempeh into strips. I usually cut it into 1-inch pieces, ¼ inch thick. 2. Place ingredients A into a blender and blend till smooth. Strain mixture. Pour back into blender. 3. Add ingredients B into blender as well and blend till smooth. This is your curry mixture. 3. Add tempeh slices into a bowl, pour curry mixture over and mix till well coated. 4. OPTIONAL: If you prefer it warm, place bowl of tempeh in a food dehydrator at 45 degrees Celsius for 1 hour. We ate it just as is without dehydrating and it tasted really good! 🌱RAW VEGAN PANDAN KAYA - new episode of my uncooking show VELICIOUS with Raw Chef Yin! 🍞 What’s kaya, you may ask? Well...I think you can call it a coconut egg jam spread. I used to watch my dad make it from scratch using lots of eggs and sugar and coconut milk and pandan leaves freshly plucked from our garden. Many of us Malaysians have it for breakfast...crispy slices of toast bread, generous amount of butter melting on the toast and sweet, creamy kaya. Extremely comforting but not very healthy! And those poor chickens who have to lay all those eggs 🥚 So as a raw vegan chef focused on Asian food, this was one recipe I had to definitely develop. I made this last year actually for my photography course assignment. This might possibly the first raw vegan kaya recipe ever. There’s loads of vegan kaya recipes but I haven’t seen a raw vegan one yet. Here's the recipe for you! INGREDIENTS: ✅120gm young coconut flesh ✅2 pandan leaves, cut into small pieces ✅30gm Masarang Arenga Forest Sugar Syrup ✅50gm freshly squeezed coconut milk ✅⅛ teaspoon Himalayan pink salt METHOD: Place all ingredients into a blender and blend till well-combined and smooth. Store in fridge. PRO-TIP: The best sweetener to use for this recipe would be the Masarang Arenga Forest Sugar for that authentic kaya taste. But if you really can’t find that where you live, then coconut nectar would work too. FREE RECIPE: Buckwheat Pancakes by #RawChefYin. I woke up thinking hey, let's have pancakes for breakfast so I made some. Sharing with you what I did: INGREDIENTS 💚For pancakes: 4 medium-sized bananas, roughly chopped ½ cup buckwheat flour from @bobsredmill ¼ cup ground chia seeds 1 teaspoon cinnamon ½ cup water ⅛ teaspoon spirulina powder from @organiculesuperfoods 🍫Toppings: Coconut flakes from @bobsredmill Cacao nibs from @bigtreefarmsbali & @diet.angel Dragon fruit balls Mango cubes Chocolate sauce - see previous post on Hot Cross Buns METHOD 1️⃣Process all ingredients in a food processor until smooth. 2️⃣Pour into pancake shapes on non-stick dehydrator sheet. If preferred, use ring mould to ensure the pancake circles are consistent. 3️⃣Dehydrate at 45 degrees Celsius for 3 hours. Flip and dehydrate for 1 hour. SHALLOW FRY, LESSON 3: VEGAN CRAB CAKE + REMOULADE 💚💯😃😍🦀 My submission to @foodfutureinstitute: I love jackfruit! I live in a country where jackfruit is commonly used in cooking. Super happy to see jackfruit as the main ingredient here. Unfortunately we are still in a somewhat partial lockdown and my online delivery service doesn’t supply jackfruit. Also, because I’m limited to only a Thermomix, dehydrator and a toaster oven, I made this raw vegan as well. For the crab cake I used: - shimeji mushrooms - Tomato, small dice - Red bell pepper, small dice - leek - Old Bay Seasoning - Black pepper, ground - cashew yogurt - Hatcho miso - Golden Flaxseeds, ground I was half thinking of trying to use banana peel as a replacement for jackfruit but that would take up a lot of prep time. Plus shimeji mushrooms have a sea smell to it which works great for a vegan crab cake. 🍄 It’s funny coz I’ve eaten loads and loads of crab cake during my work trips to the US before I became vegan and before I was a chef and I never really liked it. I was pescetarian for a long time, so that’s what I was served when the rest of my colleagues would be having steak but I never understood the fascination with crab cakes. It’s still not my favourite thing but Mr Jazz Guitarist loves crab cakes so this was a fun thing to make. 😃 What really stood out for me is how the remoulade is a very nice and “cooling” contrast to the crab cake. A good lesson in contrasting tastes which will surprise and delight your brain - I guess that’s why people like this dish?❓ 👨‍🏫Feedback from my instructor: Your crab cake appears to be exactly what we are looking for. It has the crunch on the outside and the moistness on the inside that provides that balanced texture when eating. The filling should be chunky which also brings the dish a great tooth feel with every bite. It turned out lovely. Here’s what I did! Feel free to share this with your friends. **Wet Ingredients** 4 bananas, cut into 1-inch pieces 1/4 cup Masarang Arenga Forest Sugar syrup 1 vanilla pod ¼ teaspoon Himalayan salt 1 teaspoon cinnamon 1 teaspoon nutmeg powder ¼ teaspoon cloves powder ¼ cup @Marylebonegroup coconut oil spread, melted 1 cup filtered water **Dry Ingredients** 2 ½ cups coconut flour 1/2 cup golden flaxseeds, ground ¼ cup psyllium husk 3 apples, cubed METHOD Blend wet ingredients in a food processor till combined. Place dry ingredients into a mixing bowl and mix till well-combined. Add dry ingredients into food processor with the wet ingredients and pulse till combined. Fold in cubed apples and pour mixture into loaf pan. Dehydrate in Excalibur food dehydrator at 45 Celsius. I dehydrated mine for 3 hours. I served mine with raw vegan kaya and @marylebonegroup coconut oil spread.
