Seeds and Tahini Yoghurt

A filling and nutritious breakfast, this Seeds and Tahini Yoghurt is a bit different, and very tasty. The crunch of the toasted seeds beautifully compliments the creaminess of the yoghurt, and it keeps one full and energised all morning! Happy Tuesday!
Ingredients (serves 1):
1/2 teaspoon pumpkin seeds
1/2 teaspoon sunflower seeds
1/2 teaspoon pine nuts
1/2 cup thick Greek Yoghurt
1/2 heaped tablespoon tahini
Heat a small frying pan over medium-high heat. Once hot, add pumpkin seeds, sunflower seeds and pine nuts; and toast, a couple of minutes, shaking the pan often, until fragrant.
Remove from the heat, and allow the seeds to cool a bit.
Stir Greek Yoghurt well, and drizzle in half of the tahini. Swirl tahini into the Yoghurt, and spoon into serving bowl.
Drizzle with remaining tahini on top, and gently swirl it in, too. Sprinkle with toasted seeds.
Enjoy Seeds and Tahini Yoghurt immediately.

Cheesecake Empanadas
Type: Meal Prep: Heating oil Cook Time: 15 minutes
Super customizable, add whatever fruit, flavoring, spices, or whatever you want!
Dough 1/2 cup masa harina (1/2 cup per serving!) dash cinnamon 1 tbsp sugar per serving Water
Filling 1 block cream cheese 1/4 cup sugar 2 tsp vanilla extract 1 tbsp cinnamon (customize to your heart’s content!)
With a standing or handheld mixer, combine filling ingredients until thoroughly mixed. In a separate bowl, combine dry dough ingredients. Add small amounts of water until it comes together into a cohesive dough, not crumbly nor visibly sticky. Gently roll your dough into a ball and flatten to about 1/4″ thick. Spoon your filling into the middle -- take care not to overfill it! Fold in half and press/crimp edges. Fry in a shallow pan of oil until golden on either side. Let drip dry or pat dry with paper towel before serving.
While we used this basic cinnamon recipe, you can add whatever else you’d like! I’d suggest chocolate chips and nuts, or omit the cinnamon and add diced strawberries.

Cinnamon Banana Yoghurt

A simple, yet hearty, breakfast, this Cinnamon and Banana Yoghurt is not only tasty; it gives your calcium and potassium levels a nice boost, too! Happy Friday!
Ingredients (serves 1):
1/2 cup Greek Yoghurt
1/2 teaspoon ground cinnamon
nutmeg
1/2 tablespoon pumpkin seeds
a just ripe banana
In a small bowl, combine Greek Yoghurt and cinnamon. Grate in a little nutmeg, and give a good stir to combine.
Stir in three-quarters of the pumpkin seeds.
Spoon half of the Yoghurt mixture into serving bowl.
Peel and halve the banana. Cut one halve into slices into serving bowl. Top with remaining Yoghurt mixture. Slice the remaining banana halve on top. Sprinkle with remaining pumpkin seeds, a little cinnamon and grated nutmeg.
Chill in the refrigerator, or enjoy Cinnamon Banana Yoghurt immediately.
