Sun-dried tomato pasta recipe

Colourful peppers, sweet corn, and a cheesy, garlicky topping… all baked onto a crusty baguette. 🤤

Yields: 6-8 servings Prep Time: 30 minutes Cook Time: 15-20 minutes
Ingredients:
1 large baguette
1 tablespoon olive oil
2 bell peppers (various colors), thinly sliced
1 cup corn kernels (fresh or frozen)
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons butter, melted
1/4 cup chopped fresh parsley
Salt and pepper to taste
Instructions:
Preheat oven: to 375°F (190°C).
Prep the baguette: Make diagonal cuts along the baguette, about 1 inch apart, being careful not to cut all the way through.
Sauté the veggies: Heat olive oil in a pan over medium heat. Sauté the bell peppers until slightly softened, about 5 minutes. Add corn kernels and cook for another 2 minutes. Season with salt and pepper.
Make the cheesy topping: In a bowl, combine mozzarella, Parmesan, garlic, melted butter, and parsley.
Assemble: Stuff the pepper and corn mixture into the cuts of the baguette. Top generously with the cheesy mixture.
Bake: Place the baguette on a baking sheet and bake for 15-20 minutes, or until the cheese is melted and bubbly and the bread is golden brown.
Serve: Immediately, while warm and cheesy!
Tips:
Use a variety of bell pepper colors for a vibrant presentation.
Feel free to add other ingredients to the filling, such as cooked bacon, jalapeños, or different types of cheese.
If you don't have fresh parsley, you can use dried parsley or another fresh herb like basil.
Serve this pull-apart bread as an appetizer, side dish, or even a light meal.

Grilled Salmon with Roasted Vegetables
INGREDIENTS——————————————
- 1 salmon filet 🍣
- 1 small broccoli head 🥦
- 1 carrot 🥕
- 1 small potato 🥔
- 1 red bell pepper 🌶️
- 2 tbsps olive oil 🫒
- 1 tbsp lemon juice 🍋
- 1 garlic clove 🧄
- Salt 🧂
- Pepper 🌶️
- Dill or parsley 🌿
INSTRUCTIONS—————————————
1. Preheat your oven to 400°F
2. Place the broccoli, carrot, potato, and red bell pepper on a baking sheet.
3. Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
4. Toss the vegetables to coat evenly.
5. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly browned.
6. In a small bowl, mix the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and pepper.
7. Brush the salmon fillet with the olive oil mixture.
8. Preheat a grill or grill pan over medium-high heat.
9. Place the salmon on the grill, skin side down.
10. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
11. Place the grilled salmon on a plate.
12. Add the roasted vegetables on the side.

Cheesy Broccoli and Spinach Rice

Rice. Cook to instructions.
Sautee diced onions and garlic. Add broccoli and spinach, season with salt, pepper, garlic powder, onion powder, and paprika. Add 1 tbsp of butter and flour. Add milk. Taste it to make sure it's seasoned to your liking.
Butter an oven safe dish. Add rice, veggie sauce, and cheese. Mix together. Top with cheese bake 20 to 30 minutes @ 375°

Clover Cotton’s Cookbook: Pasta soup
Hello my dears, it’s Clover Cotton again! I planned to share with you my vegetable hand pies but everyone’s down with a nasty cold here in Bywater and I didn’t have the energy nor appetite to make something as hearty as hand pies.
So here is a perfect recipe for when one’s sick or recovering, the pasta soup is very quick and easy to make and can be adapted to everyone’s taste with minimal effort.

Ingredients (for 1 Hobbit):
500 ml water
1 tablespoon vegetable broth powder or 1 broth cube
About 50g pasta (the best is alphabet pasta but any small-ish sort of pasta that cooks quickly works. If you have nothing suitable at hand, crushed spaghetti are an Italian Grandma approved solution)
1 onion
Kale leaves (optional)
1 egg (optional)
Grated cheese (optional)
Recipe (~10 minutes):
Put the water to boil and chop the onion finely in the meantime.
When the water boils, lower the heat and throw the stock, the pasta and the onion in. Stir.
If you do the version with kale, shred the leaves and throw them in the boiling water with the rest.
If you want a more nutritive version, crack an egg in the pot and stir vigorously until the egg has almost melted in the soup
Pour in a bowl and add a bit of grated cheese if you want.
Enjoy.
If you have broth leftover (and you almost certainly will), you can filter it and keep it in the fridge to make more soup later or simply to sip on it if you want something warm to drink other than herbal teas.

Mamì Vida’s Taco Soup Recipe;
This is my mami’s taco soup recipe, I’m just veganizing it for this recipe but follow it to your own liking.
This is made in a crockpot/slow cooker. It cooks for five hours on high then around 4-8 on low, basically let cook all day while you’re at work or something.
Browned ground beef or cooked chicken seasoned with taco seasoning(if you’re veg use impossible beef or chicken)
Add two cans of stew tomatoes, two cans of drained black beans, two-three cans of drained corn, one can of rotel chilies, and the meat to the crockpot.
Top it with cheese, sour cream, avocado, hot sauce, tortilla chips basically anything you like it’s super good.

whats a recipe you think is vastly underrated and wish more people would know about?
Oh that's a great question! On top of the other recipes I've shared before I feel like "Pizza Toast" is very underrated. I can't tell if it's generally underrated or if just my friends coincidentally not knowing these while the rest of the world already makes these all the time.. They are a great warm, savoury snack or a quick homemad dinner. I also made these for parties before cause they can be prepared in advance and then you just bake them when the guests arrive 😉
It's a very "add what you like" recipe without fixed measurements. There's a base mix and then you just add the "toppings" you like and put it on toast and bake it.
For the base I use 1 cup (250ml) of sour cream - the Austrian dairy product (Sauerrahm, or Saure Sahne for my German friends), not the dipping sauce you can get at mcdonalds! For everyone who doesn't have access to that, you can also use a mix of crème fraîche and curd cheese (crème fraîche on its own is too greasy imo) or cream cheese. Put in a bowl, add spices (salt, pepper, oregano) and ca. 200g of shredded cheese (gauda, cheddar, emmentaler work perfectly fine).
Now you can add whatever "toppings" you like. Just make sure that everything is cut into small pieces or alternatively you can throw it all in a food processor. Anyway. My favourite versions are:
Ham or salami/pepperoni and sweet corn (I use the canned one)
Tuna (the canned one in water, not oil) and bell peppers
Dried tomatoes and basil leaves
You really just have to mix it all together, take out some bread (can be whatever kind you like but I usually use toast), spread a little ketchup on it if you want and then spread your mix on top. Bake it in the oven for like 10-15mins at 160-180°C and that's it. 🥳
I make these so often cause they are good, quick and easy to make, and great when you're on a budget. The mix made with 250ml sour cream/cream cheese and ca. 200g cheese is enough for 9-10 slices of bread (aka one baking sheet).
I don't have a picture to add rn, but next time I make my Pizza Toasts I'll take one for reference 😊

One Pot Meal

A zero-effort dinner with great flavour and fast cook time.
Simple and nutritious meals are an important thing to have in your back pocket, especially as a student. In a previous post, I shared The Ultimate Sausage Pasta, a quick and easy recipe from my housemate’s friend.
This time, we’re looking at the One Pot Meal, one of my favourite zero-effort dinners to make when I just really don’t feel like cooking. Minimal ingredients (two of which can sit in your cupboard until you need them) and an under half-hour cook time make this the perfect meal for when you’re tired or need a break from the kitchen.
As an added bonus, the Italian sausage adds great flavour on its own, so you don’t need to worry about whether you have the right spices or not!

Ingredients:
1 pack (500 g) mild Italian sausage*
2 tbsp. (30 g) unsalted butter
2 cans sliced potatoes
2 cans cut green beans
* I prefer Johnsonville brand.

First, slice the sausages into ½ inch (1 cm) pieces.

Next, melt the butter in a large wok or high-rimmed skillet with a lid on medium heat.
Add the sausage and cook until cooked through, about 10 mins, stirring frequently.
NOTE: If you’re using the sausage from frozen, you’ll need at least an extra 5 mins to the cooking time.

Drain the canned beans and potatoes, discarding the liquid. Add them to the wok or skillet and stir in with the sausage.
Turn the heat to low and cover with the lid. Let cook until the potatoes and beans have warmed up, about 8 mins, stirring occasionally.
Once everything is heated up, divide and serve!
Overall, I give this a 5/5. It’s simple, tasty, and low effort - truly a fantastic meal for after a long day.

Smashed Garlic-Chili Wok Green Beans

I threw this recipe together when my mom begged me to recreate the taste of P.F. Chang’s chili-garlic green beans (after they jacked up the prices). I’ve seen a lot of high effort copycat recipes online but this is a lazy-ass high flavor/minimum prep version, incidentally vegetarian and vegan.
It only takes about 5-10 minutes, so it makes a great side to throw together just before the main dish has finished cooking.

Ingredients
1 lb washed and trimmed green beans
4 whole garlic cloves, peeled
1 tsp sambal oelek (its like sriracha but chunky and a tad spicier. you can substitute sriracha if you only have that)
1/2 tbsp high heat cooking oil
Salt and pepper to taste
Equipment
A wok
A sturdy wooden spoon
Instructions
Pre-heat your wok on hot until barely smoking, add your cooking oil and beans, lower the heat to medium, and stir fry for a minute or so. Add preliminary salt and pepper.
Add your garlic cloves, whole, and stir fry for a further two minutes until your garlic cloves get dark spots and soften.
Crush the garlic cloves with the back of your wooden spoon against the side of the wok! I made a gif to demonstrate; you should be left with a shreddy smush of flash fried garlic.

4. Turn your heat to medium-low if your beans are not cooked enough at this stage, so you can cook them through without burning the smaller garlic pieces.
5. When the beans are cooked to a rich green and blackened speckled state, first turn off your heat, then add your sambal oelek. Do not be like me and pepper spray your own ass.🙃

5. If needed, add more salt and/or pepper to taste, then serve fresh. 🤗
Notes
The amount of sambal oelek can be adjusted to your spice tolerance, more than one teaspoon makes my family complain 🙄. You can also blanche the beans ahead of time to further reduce cooking times and ingredient staggering, but if you thought of doing that, you don't need me to explain shit, and we should talk about beans together sometime. You may have noticed I asked for 4 cloves of garlic but my ingredients photo included 5. This is the natural rule of garlic. We cannot stop it.
Vegetarians and vegans beware-not all sambal is vegetarian. Some contain shrimp paste. Not ol' reliable Huy Fong Foods Inc., but read the label when you buy.

Parmesan Dusted Potatoes with butter toasted bread, A.K.A. Fancy Girl Dinner A.K.A. a special occasion Hobbit potato

Potatoes halve em, boil em. Bread (baguette) butter it. Food eat it.
I took a page from Adam Ragusea and seasoned my plate instead of the potatoes.
Salt, pepper, butter, garlic powder (or jarlic). Fresh garlic would be better, but it's girl dinner, not real dinner.
Drain the potatoes. Let em cool for ONE minute. You don't want to melt or shatter your flat bowl (ladies, you know what I'm talking about) . Dump 'em on the plate on top of the seasonings. Mix it around until potatoes are well coated.
Dust with parmesan.
Bam a delicious hobbit meal in under 20 minutes.
I wish I had added some parsley.
