Mediterranean Salad
Ingredients:
Dressing:
-1.5 tbsp olive oil
-3 tbsp lemon juice
-1 tsp smoked paprika
Salad:
-2 handfuls arugula
-12 olives
-1/2 can chickpeas
-1/2 tbsp olive oil (to cook chickpeas)
-1 mini avocado
-1/2 cucumber
-one Norwegian cracker crumbled
-approx. 1 tbsp handful feta cheese crumbled
Directions:
Chop cucumber and avocado, then set aside with olives. Prepare dressing by combining olive oil, lemon juice, salt, pepper, and smoked paprika. Sauté chickpeas in pan with olive oil. Once they start popping you can get ready to pull them off. Add arugula to salad bowl. Add chopped cucumber, avocado and olives, then toss with dressing. Add chickpeas, then crumble crackers and feta cheese on top to complete.

avocado toast - spread mashed avocado on whole-grain toast and top with a sprinkle of sea salt, a drizzle of olive oil, and a squeeze of lemon juice. add extra flair with toppings like sliced tomatoes, radishes, or a poached egg for a protein boost. personal favorite. would highly recommend.
smoothie bowl - blend up a smoothie with your favorite fruits, leafy greens, and a scoop of protein powder or nut butter for added satiety. pour it into a bowl and top with granola, coconut flakes, sliced fruit, and a dollop of greek yogurt.
egg and veggie scramble - whip up a quick and hearty scramble with eggs, sautéed veggies like spinach, bell peppers, onions, and mushrooms. season with herbs and spices of your choice and serve with whole-grain toast or a side of sliced avocado.

roasted veggies are life changingly delicious.
(this works best for broccoli, cauliflower, carrots, squash. veg with some heft, not leafy stuff.)
i mean this in the gentlest way possible: you need to eat vegetables. you need to become comfortable with doing so. i do not care if you are a picky eater because of autism (hi, i used to be this person!), you need to find at least some vegetables you can eat. find a different way to prepare them. chances are you would like a vegetable you hate if you prepared it in a stew or roasted it with seasoning or included it as an ingredient in a recipe. just. please start eating better. potatoes and corn are not sufficient vegetables for a healthy diet.
