These Portobello Mushroom Burgers with Caramelized Onions are a delicious vegetarian alternative to traditional burgers. The hearty Portobello mushrooms are grilled to perfection and topped with sweet caramelized onions and Swiss cheese. The burger sauce adds a tangy and savory kick, making this burger a flavor-packed delight.
Ingredients: 4 large Portobello mushrooms. 4 burger buns. 2 large onions, thinly sliced. 2 tablespoons olive oil. 1/4 cup balsamic vinegar. 2 cloves garlic, minced. 4 slices of Swiss cheese. 1/2 cup arugula. Salt and pepper, to taste. 1/4 cup mayonnaise. 1 tablespoon Dijon mustard. 1 teaspoon Worcestershire sauce. 1 teaspoon soy sauce. 1 teaspoon smoked paprika. 1/2 teaspoon dried thyme. 1/2 teaspoon onion powder. 1/2 teaspoon garlic powder.
Instructions: Start by making the onions sweet. In a pan, heat the olive oil over medium-low heat. It will take about 20 to 25 minutes of stirring every now and then while the onions get soft and caramelized after you add them. Add the balsamic vinegar to the onions and cook for five more minutes. Put away. Warm up your grill or grill pan over medium-high heat. Take the stems off of the Portobello mushrooms and brush them with olive oil while the grill is getting hot. Mix in some minced garlic, salt, and pepper to taste. Put Worcestershire sauce, soy sauce, smoked paprika, dried thyme, onion powder, and garlic powder in a small bowl. Mix them all together. The sauce for your burger will be this. The Portobello mushrooms should be cooked on the grill for five to seven minutes on each side, or until they are soft and have grill marks. Put a slice of Swiss cheese on top of each mushroom to melt in the last minute of grilling. For a minute or two, toast the burger buns on the grill until they get a little brown. Spread the burger sauce on the bottom half of each bun before putting the burgers together. Toast a Portobello mushroom and melt some Swiss cheese on top of the sauce. Put in a big spoonful of onions that have been caramelized and a handful of arugula. Put the other half of the bun on top. Enjoy the Portobello Mushroom Burgers with Caramelized Onions right away!

Portobello Mushroom Burger Ingredients 4 portobello mushroom caps, cleaned 55ml olive oil Salt and freshly ground black pepper 55ml mayonnaise 1 tbsp prepared pesto (check if vegetarian) 2 tsps coarse-grained mustard 4 hamburger buns, split, buttered, and toasted 225g baby rocket 1 (340g) jar roasted red peppers, drained Method 1) Preheat a griddle to medium-high. Brush the mushroom caps with olive oil; sprinkle evenly with salt and pepper. Cook the mushrooms, smooth side down, covered with the griddle lid, for 6 to 8 minutes, or until tender. 2) In a small bowl, combine the mayonnaise, pesto, mustard, 1/4 teaspoon salt and 1/4 teaspoon pepper. Spread the mixture evenly over both cut sides of the buns. Divide the rocket leaves evenly over the bottom bun halves. Top each evenly with peppers. Place the mushrooms caps over the peppers.
