December Baking 2024
My Great Aunt's Molasses Cookies - 5/5
I actually made a metric ton of cookies this month, but this was the one two batches I made by myself. This one comes straight from the fam, so I have to type out the recipe (spoilers, it seems suspiciously like the recipe on the molasses jar, but it is slightly different).
INGREDIENTS 3/4c shortening 1c sugar 1/4c molasses (we get mild) 1 egg 1/2 tsp cloves (we don't use them bc my mom hates them) 1/2 tsp ginger 1 tsp cinnamon 1/2 tsp salt 2 tsp baking soda 2c flour extra sugar for rolling
DIRECTIONS • Preheat the oven to 375ºF
• Mix shortening and sugar; add molasses and mix.
• Put egg in a separate bowl and put the dry spices into the egg. Mix together and then blend them in with the rest. (author's note: I don't really know why we do this bc mixing the spices with the egg is hard and you have to really scrape it out of the second bowl, but who am I to judge)
• Add in the flour and baking soda. (author's note: I mix these and the salt separately, like you would a normal cookie recipe, then add them gradually)
• Use a small cookie scoop to make the balls and roll in sugar.
• Bake on ungreased sheet at 375 degrees for 8-10 mins. They need to look done but not necessarily brown. Makes approx. 3 doz
NOTE: The first batch was made subbing in butter for shortening. I added ~1/2tsp of corn starch just to see what would happen, but they still spread considerably. They're much chewier than the shortening version though. Next time I might try using slightly less molasses or adding a little more flour to offset the extra liquid from the butter.
ANOTHER NOTE: The shortening cookies do come out a little crunchier, but you can do the trick where you put them in a container with a fresh slice of bread for a day or so to soften them up.
Anyway, we love these cookies. My mom makes them all the time because they make a lot, they're pretty easy, and they taste really good. Plus, they're usually something that you wouldn't see when you'd expect cookies!

Today's cookies should in theory be chocolate oatmeal cookies, but I don't feel like baking today, so I'm jumping ahead to molasses cookies. I got Uncle Eddies molasses cookies for these.

These are soft and surprisingly to me, not particularly chewy. The granulated sugar adds a bit of coarseness to the texture, and the flavor is pretty much the same as gingerbread. These are excellent.

My favorite holiday cookie is a molasses cookie 🥺 I know some people don't really like those but my grandma makes the best ones I swear it!
I'll put it below the cut!
1 cup packed brown sugar (i always make mine fresh, i don't like the kind they sell in the bags at the store)
3/4 cup shortening
1/4 cup molasses
1 egg
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 tablespoons granulated sugar
Heat the oven to 325 F. Beat the brown sugar, shortening, molasses, and egg. Then stir in the remaining ingredients, except the granulated sugar.
Shape the dough into rounded tablespoonfuls, about 1.5 inches big. Dip them into the remaining sugar and place on an ungreased cookie sheet about 2 inches apart.
Back for 13 to 16 minutes, just until they set and appear dry. Immediately remove them from the pan onto a cooling rack.

Easy and slow warm, gooey soft Molasses Cookies

Blend in a glass :
1 egg
1/2 tsp vanilla extract
4 Tbs vegetable oil ( light olive is best)
2 Tbs molasses
2 Tbs white sugar
In a separate bowl, mix:
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
1 Tbs Mochiko rice flour
1 tsp cinnamon
10 Tbs all purpose flour (that's a level half cup, plus 2 Tbs, which is an unusual measure, but the exact right amount.)
Then add the wet to the dry and stir until combined
Stir in 1/2 cup chopped dates.
Mixture should be just a little too gooey to handle. This is good. Cover the bowl, put it in the refrigerator and let it rest several hours.
Next day, make a small container of powdered sugar with some cinnamon. Drop a half Tbs spoonful of dough into the mixture, put on a tight fitting lid and shake the container until the dough ball is all covered in sugar and nice and round. Put the ball on a cookie sheet pan, then repeat until you have a pan full of dough balls. Bake in preheated 350°F oven for 8 min, and watch them carefully. They should spread a little, then just start to puff up and crack a little. If you leave them in until they fully puff up and dome they will be cakey instead of gooey inside. Still good, but I prefer them moister inside. Watch the last 30 seconds carefully.

Let it cool at least a little-- the molten dates stay hotter than the cookie part.
