This is radical self-care.
It's not potatoes or leeks or dill or green onions (we were out of shallots at work) or chicken stock or salt or pepper.
Nope.
It's me loving myself today.
After an emergency meeting with my therapist, a little while ago, I have to do something kind for myself every day for a month and document it. The long and short of it is that I've been feeling really worried about a thing, and last night, I ended up having a panic attack so severe that I blacked out, prompting my sister to drive 35 miles from her town to mine to check on me. Oops.
There's an individual who my therapist believes is jealous of a relationship that I have with another person, and they've created a competition out of said person's attention, bragging about any time they get a response and minimizing anything I get. She believes that, even though I do have some issues I'm working on (cptsd, recent trauma, learning to love myself), I'm not doing anything wrong and don't deserve to feel so guilty. And then she slammed the gavel down on this absolutely horrible "document your self-care so I can grade you on it" sentence. (that last bit was sarcasm, I do feel better after enjoying this bowl of soup that I made for myself, though I need to tell my therapist that I cried at first because I felt like I didn't deserve it).
Anyway, the soup came out perfect, just like back in the day. It's a mood lifter, frown turner, etc. So simple, and such a great taste. I could have added ham but I forgot. Oh and @frozen-fountain was correct - a bit of mustard went really well with it. I got all fancy and bought some stone-ground mustard and put a blob in the middle of the soup. I'm happy that I made this. It really does make a person feel better.

Lunch, snack and dinner
LUNCH:
3 units bread (2 from lunch and 1 from snack): 100g boiled potato, 50g white bread
2 units meat: 60g chicken breasts
2 units vegetables: 100g of a steamed mix (carrots, cauliflower, broccoli) and cca 100g of pickles, pickled peppers, and tomato mix
2 units fat: idk.. maybe from pepper its preserved in vinegar and oil
1 unit fruit: -1
SNACK:
2 units fruit (1 from lunch 1 from snack): 1 banana
1 unit bread: -1
1 turkish coffee
DINNER:
Veggie and meat stew at my dad's. Beef and porl meat, veggies: parsnip, celery, leek, carrot, onion, potato,.. amazing!!!

hi! i got a family recipe that aint too fancy but its like. pretty solid
1 onion, 3 garlics, 1/2 bell pepper, 1/2 carrot, cheap red wine, half a kg of tomatoes*, around half a kg of potatoes, little bit of milk, cumin + paprika + oregano + chili flakes + salt and pepper of course + bay leaves (for this amount i end up adding 2 but thats your choice), and as much water as you might need (it might be around a cup and a half or so? idk it depends (if you have broth from something or instant broth/stock you can add it too))
basically in oil start by sweating the carrots (in low heat with some salt) and once that looks softer add the rest of the veggies except the potatoes, do the same process, add a glass of wine and wait for the alcohol to evaporate after like 5 minutes, (if youre using regular tomatoes add them with the vegetables, if youre using tomato puree add it after the wine), add the seasonings, the potatoes, mix it up for a minute and then add the water and bring it to a boil before covering with a lid and lowering it to minimum heat for at least an hour and preferrably 2 hours or so *(i use tomato puree bc its cheaper than getting half a kg of tomatoes but you can use any sort of variation thats good for you)

Leek and Spinach Bean Soup (Vegan)

And we're back to regular programming! Today is a rainy, grey day, and I'm making soup for lunch! This hearty Leek and Spinach Bean Soup makes good use of leftovers and your harvest, and it's a proper hug in a bowl! Happy Thursday!
Ingredients (serves 2):
1 small Garden Leek
1 ½ tablespoons unsalted butter
½ tablespoon olive oil
3 cups Vegetable Broth  
1 1/3 cup Lemon and Spinach White Beans
Thoroughly rinse Garden Leek under cold water.
Melt butter with olive oil in a medium pot over a medium flame.
Thinly slice Garden Leek. Once the butter is just foaming, add Leek to the pot, and cook, about 3 minutes until softened.
Pour in Vegetable Broth, and bring to the boil. Simmer, 5 minutes.
Then, stir in Lemon and Spinach White Beans, and bring to the boil once more. Cook until very hot, about 5 minutes.
Serve Leek and Spinach Bean Soup hot, with crusty Sourdough bread, and a generous grating of Parmesan, if you wish.
