Pineapple Ginger Mojitos !
1 cup (8fl oz/240ml) pineapple juice
▢Large thumb-sized piece of ginger - slices (no need to peel)
▢small bunch mint leaves
▢Juice of half a lime
▢1 lime sliced
▢crushed ice
▢3 ½ fl oz (100ml) spiced rum 
▢4 fl oz (120ml) soda water/club soda
Caramelized Pineapple:
▢1 tbsp unsalted butter
▢2 slices fresh or tinned pineapple
▢2 tbsp light brown soft sugar
Garnish:
▢Mint sprigs
Instructions:
Place the pineapple juice and slices of ginger into a small saucepan. Bring to the boil, then simmer for 5-10 minutes until the liquid has reduced by half. Leave to cool to room temperature, then discard the ginger.
Make the caramelized pineapple next. Heat the butter in a frying pan until starting to foam.
Dust the pineapple slices in the brown sugar and place in the frying pan. Fry, turning once, until both sides are golden and caramelized (about 3-4 minutes). Put to one side.
Place 6 mint leaves in each glass (this recipe is for two glasses). Add the lime juice and lime slices to the glasses.
Pour in the reduced pineapple-ginger juice and muddle everything together with a spoon.
Fill the glasses up two-thirds of the way with crushed ice, then pour over the spiced rum. Top with the soda water (club soda) and mix again. Add more ice to fill up to the top if necessary.
Garnish the glasses with a small sprig of mint and a slice of caramelized pineapple.

ALMOND CROISSANTS WITH STRAWBERRIES AND NUTELLA By @kitchensanctuary —— Ingredients: 4 large croissants Glaze: 120ml (1/2 cup) water 1 tbsp golden caster sugar (or superfine sugar) 1 tsp vanilla extract Frangipane: 90g (3/4 cup) ground almonds 60g (4 tbsp) soft (but not melted) unsalted butter 100g (1/2 cup) golden caster sugar (or superfine sugar) Pinch of salt 1 egg ¼ tsp almond extract Also: 4 tbsp flaked almonds 4 heaped tbsp Nutella 6-7 large strawberries, sliced —— Instructions: Preheat the oven to 175c/350f. Make a slit, lengthways, in each of the croissants - so you're forming a pocket in the 'belly' of the croissant. Put to one side. Make the glaze first, by placing the glaze ingredients into a small pan and bringing to the boil. Bubble for a minute or two until the sugar dissolves, then turn off the heat and allow to cool slightly. Now make the frangipane. Place the ground almonds, butter and sugar in a bowl and beat together with a wooden spoon. Add in the salt, egg and almond extract and mix until combined. Carefully dip (but don't soak!) each of the croissants in the glaze (all over) and allow the excess to drip off. It will be very watery, but don't worry, this glaze is just there to add a little moisture to the croissants and to make the outside a little crispier when cooked. Place the croissants on a baking tray. Take a spoon and spoon half of the frangipane mixture inside the croissants. Use the spoon to spread it all over the inside of the croissants. Spread the rest of the frangipane on top of the croissants. Sprinkle the flaked almonds on top and place the croissants in the oven for 10-12 minutes - until the top is golden brown and crisp (the inside should be hot, but it won't crisp up - it will be like a creamy paste). Take out of the oven and leave to cool slightly, then spoon the Nutella inside and arrange the sliced strawberries inside. Serve immediately. INGREDIENTS 150g (3/4 cup) dried long grain rice 1 and ½ tbsp Cajun seasoning 2 skinless chicken breasts 1 and ½ tbsp olive oil ½ red bell pepper, deseeded and sliced ½ yellow bell pepper, deseeded and sliced ½ green bell pepper, deseeded and sliced 1 small brown onion, peeled and sliced Small bunch coriander (cilantro) roughly torn Zest of 1 lime 1 avocado, peeled, de-stoned and chopped INSTRUCTIONS Boil a large pan of water, add the rice and simmer for 15 minutes until the rice is tender. Pour into a sieve and leave to drain. Whilst the rice is cooking, heat a cast iron griddle pan on a high heat and brush on a little oil. Sprinkle the Cajun seasoning and pour half the oil on the chicken breasts and rub it in using your hands. Flatten the chicken breasts slightly with your hands and place on the hot griddle. Cook for 7-10 minutes, turning once, until the chicken is charred and no longer pink in the middle. Place on a chopping board to rest whilst you cook the vegetables. Brush the rest of the oil on the griddle and place the peppers and onion on in a single layer. Cook for 5-6 minutes, turning a couple of times, until lightly charred. By now the rice should be cooked and drained. Fluff it up with a fork and stir through the coriander and lime zest. Divide the rice between two bowls. Cut the chicken breasts into slices and place on top of the rice. Add the char-grilled peppers and onion and top with the chopped avocado. — view on Instagram https://ift.tt/2Ldvy13
