Carrot cake
DATE: Monday 10/04/17 RECIPE: http://www.inspiredtaste.net/25753/carrot-cake-recipe/
2 cups (260g) AP flour --> 140 wholemeal + 110 AP 1 1/2 tsp powder 1/2 tsp soda 1 pinch salt 1 1/2 tsp cinnamon 1 pinch nutmeg (2 lil shakes) 140ml almond milk 100ml oil 2 cups (400g) brown sugar -> 1/3 cup raw sugar (67g) 1 tsp vanilla 4 lrg eggs -> 3 eggs 3 cups (300g) grated carrots (5 to 6 medium carrots) --> 2 lrg 1 small = 343g (very moist) 1 cup (100g) coarsely chopped walnuts -> random amount
1. Preheat oven 177C 2. Line rectangular tin 3. Mix flour, powder, soda, salt, cinnamon & nutmeg until well blended. 4. In separate bowl, mix milk, oil, sugar, vanilla, then eggs 1 at a time, till blended. 5. Add dry to wet in 3 parts, stirring gently until smooth. 6. Fold in carrots and nuts with spatula. Pour in pan (SO RISKY, IT WAS LIKE 90% FULL - thank god didn't overflow). 7. Bake 35-45 min (when divided into 2 pans) -> 1 pan roughly 1 hr 10 min?? tented about halfway. 8. Cool in pan for 15 min, then turn out onto cooling rack, peel off paper and let cool completely.
prep took bout an hr 10? standard (15 min to grate carrots)
sweetness is right - good thing i 1/6'd it
texture is completely off lol - healthy af texture aka heavy & dense, not much of a crumb. probably a result of using 1/3 of the oil and replacing the rest with milk. also you can actually taste the almond milk which was not intended - maybe soy would've been more neutral-tasting.
it didn't rise that much ... actually pretty much only rose in the middle and not on the sides. but prob because of the heaviness of the liquid
there's hardly any carrot pieces in the baked product unlike storebought carrot cakes and the like, maybe i need to use the coarse grater next time (i think they did in the recipe). try 50% coarse 50% fine?
NOTES:
next time, use 1/6 sugar, omit salt, and touch nothing else - i really want to eat a proper carrot cake. this surprisingy tastes quite similar to amyshealthybaking’s carrot cake aka not at all like storebought carrot cake wtf? hopefully if i follow the recipe it will actually taste like carrot cake
jks can change the flour and oil a bit ...
flour - 180 white + 80 wholemeal
oil - 180ml
soy milk - 1 tbsp
and use 4 eggs like the recipe
may have to separate into 2 pans then ..
could probably reduce the amount of walnuts a little bit ... i didn't measure though, so that doesn't help
use same amount of cinnamon/nutmeg & powder/soda as i did this time
