Saw some people make it out of red lentils and we have those so I figured I'd give it a try.

Tofu Tikka Masala
1 (14-ounce) block extra-firm tofu, pressed and cubed
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon grated ginger
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper (adjust to your spice preference)
1 (14.5-ounce) can diced tomatoes, undrained
1 (14-ounce) can full-fat coconut milk
1/2 cup vegetable broth
1/4 cup chopped fresh cilantro
Salt and black pepper to taste
For the Coconut Rice
1 cup basmati rice
1 (14-ounce) can full-fat coconut milk
1/2 cup water
1/4 teaspoon salt
Instructions
Prep the Tofu: Drain and press the tofu for at least 15 minutes. Cut into 1-inch cubes.
Marinate the Tofu (Optional): For extra flavor, marinate the tofu in a mixture of 1/4 cup plain yogurt, 1 tablespoon lemon juice, 1 teaspoon garam masala, and a pinch of salt for at least 30 minutes.
Cook the Rice
Rinse rice thoroughly. Combine rice, coconut milk, water, and salt in a medium saucepan.
Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15-20 minutes, or until liquid is absorbed and rice is tender.
Make the Tikka Masala Sauce:
Heat olive oil in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and ginger and cook for an additional minute until fragrant.
Stir in cumin, coriander, garam masala, turmeric, and cayenne pepper, and cook for another 30 seconds.
Add diced tomatoes, coconut milk, and vegetable broth. Bring to a simmer.
Cook the Tofu
If not marinated, toss tofu with a bit of olive oil, garam masala, and salt.
In a separate skillet, heat a bit of oil and cook the tofu until golden brown on all sides.
Assemble the Tikka Masala:
Add the cooked tofu to the simmering sauce.
Season with salt and pepper to taste.
Let simmer for 5-10 minutes to allow flavors to blend.
Serve: Stir in fresh cilantro. Serve the hot Tofu Tikka Masala over a bed of fluffy coconut rice.
Optional Garnishes
Extra cilantro
Lime wedges
Naan bread
Plain yogurt
Tips
Spiciness: Adjust the amount of cayenne pepper for your preferred heat level.
Creamier Sauce: For extra richness, stir in a dollop of heavy cream or vegan cashew cream at the end.

Summer finally arrives and that means it's time for summer rolls again 🥰 this is my quick version which can be made under 15 minutes.
Wrap the rice paper with sliced salad, red bell peppers, cucumbers, smoked tofu as fillings and the dipping sauce is made from hoisin sauce, peanut butter, sesame paste, soy sauce, a little bit chili sauce and lime juice.

What you will need, basic ingredients :
garlic+ginger, chopped thinly / soybean sprout / rice sheets
tofu / chiseled fresh mint leaves / rice vermicelli / 1 carrot

Rice "sheets" can also be used for winter rolls (rouleaux de printemps) Those have to be dipped in water for up to a minute to soften them, fabric-like texture. You can find easy folding techniques on youtube.
To prepare the tofu, press it, drain the most water you can, and if you have more time on your hands, freeze it, it will be dryer after it melts.
Cook it in small bits with sunflower oil for 10-ish minutes at medium heat, add 1 tbsp of oyster sauce for better taste, soy sauce, or any sauce of your liking. Should look more or less like the picture below :

Peel carrots entirely (throw away the peels then peel the rest of the carrot, to get thin layers, then julienne them - basically you want all of your ingredients to be thin, in order to ease the rolling part, but its not necessary per se.
I use to cook the carrot julienne al dente with sesame oil or olive oil for 3 minutes at medium heat, adding thinly chopped garlic + ginger.
Optional : soy sauce / furikake (japanese seasoning) / pepper / cinnamon

Pile a few mint leaves, roll them tight, and cut them super thinly. Some people will prefer full leaves, there's no best way, what fits you is best!
Boil the vermicelli for 2 to 3 minutes, not more because they'll become mushy if you overcook them, then drain them in cold water, to be able to compose your nems with all chopped ingredients, in the order you please ! You can add/replace any vegetable you like :))
For better taste, i mix peanut chili sauce in the vermicelli, but you can use the sauce of your choice, lime juice, or plain.
Once rolled, heat a pan on medium heat with 2 tbsp of sunflower oil, or sesame oil, until brown-yellow-ish fried.
Serve hot or cold, and enjoy!

The weather got warmer so I made my favourite dish, summer rolls! I sliced smoke tofu, salad, carrots and cucumbers and made a dipping sauce from peanut butter, sesame paste, hoisin sauce, soy sauce, lime juice and roasted sesame seeds. Just lay the wet rice paper on a plate and roll up and eat, simply fresh and delicious!

Hello to the lack of people who see my posts, I have made tasty food.
This is rice with curry flavored tofu and ginger sauce.
I cooked the rice without soaking it this time, but I washed it, because that's how you make good rice. For the tofu, I heated up a drizzle of olive oil in a nonstick pan and crumbled some super firm tofu into it. I added salt, pepper, Japanese bbq sauce, and plenty of curry powder. Then I cooked it a little below medium heat until I was satisfied with how it was.
This is really tasty.
