This morning I received a very sweet message from my twin brother and then of course Iām blessed to have my two rugrats (kids) spoil me this morning as well.

Then we got together with a few friends and their kids and had pizza - watched some episodes of a show (no not BLā¦ kids were present) and relaxed.

ThisĀ is a simple elegant dish - made entirely inĀ one skillet,Ā this yummy dinner can be on your table, ready to serve, in justĀ 30 minutes.
šš»š“šæš²š±š¶š²š»šš
ā¢ 900g Chicken Thigh ā Boneless and skinless, chopped up (if using chicken breast you can add butter but I found the thigh 'juicy' enough)
ā¢ 1 Onion
ā¢ 2 Garlic Cloves crushed ā flavour enhancers in this creamy mushroom sauce.
ā¢ 2 cups of Mushrooms ā chopped up tiny
ā¢ Cornflour - to help thicken the sauce (I used guess work til it thickened up)
ā¢ White Wine - adds a depth of flavour to the sauce but I dont think it's necessary. Sauvignon Blanc. For a non-alcoholic version, replace it with chicken broth.
ā¢ Cup of chopped up Kale
ā¢ 1 Cup of Cream ā can use a heavy cream or make with half-and-half, which is a simple blend of equal parts whole milk & light cream. You can also use sour cream
ā¢ Squeeze of Lemon
š š²ššµš¼š±
1) Heat the skillet
2) Cook the Chicken: Season chicken breasts on both sides with salt and pepper. Place chicken breasts in skillet and cook on both sides, about 3 to 5 min per side or until no longer pink inside, time depends on thickness of your breasts. Since the breast is fairly thin, it should cook faster. Transfer the chicken to a plate.
3) Cook the Mushrooms: Add the onion, kale & garlic to the skillet and cook for a couple minutes until onion is translucent & soft.
4) Add the mushrooms and stir. Season mushrooms generously with salt and pepper. Let them cook for about 5 minutes, stirring occasionally. Let excess liquid evaporate. When they are cooked to your liking, add the wine and deglaze the pan by scraping the bottom of the skillet. All those brown bits are flavour!
5) Finish the Sauce: Sprinkle the cornflour over the mushrooms & stir for another minute just to remove the raw flour taste. Next, add the cream, stir and cook for 3 minutes, stirring occasionally or until sauce reduces a bit and thickens. Taste for seasoning & adjust with salt and pepper as needed. Add the chicken back to the skillet and spoon sauce over the chicken.
6) Finish and Serve: Garnish with parsley and serve hot

I have two kids and my 14 year old (eldest) has told me they donāt want kids and not sure if they ever will. I told them thatās fine. I admit that I wanted to have grandkids but thatās ok if they donāt.

yāall justā thinking about how excited Stanley must have been to host the twinsā Alex says he smokes cigars but he doesnāt smoke once in the showā has a beer gut but he only drinks sodas in front of the kidsā doesnāt swear when theyāre around which must have taken INCREDIBLE effortā Stanley Pines, known crook, buying pancake mix at the supermarket and many bottles of syrupā learning to cook basic healthy meals and burning so many of them before he gets it rightā buying new sheets, new mattressesā avoiding bunk beds because it reminds him of Fordā looking at the attic room he made wondering āis this enough will they like meāā trying to act aloof at the bus stop so he doesnāt betray the fact that he was there hours earlyā watching them goof around and thinking of New Jersey beachesā then the first night theyāre there, he watches them debate running away and only stay because Mabel shook a magic 8 ball. That must have kept him awake all night.
