𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝘄𝗶𝘁𝗵 𝗖𝗿𝗲𝗮𝗺𝘆 𝗠𝘂𝘀𝗵𝗿𝗼𝗼𝗺 𝗦𝗮𝘂𝗰𝗲 𝗥𝗲𝗰𝗶𝗽𝗲

This is a simple elegant dish - made entirely in one skillet, this yummy dinner can be on your table, ready to serve, in just 30 minutes.

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀

• 900g Chicken Thigh – Boneless and skinless, chopped up (if using chicken breast you can add butter but I found the thigh 'juicy' enough)

• 1 Onion

• 2 Garlic Cloves crushed – flavour enhancers in this creamy mushroom sauce.

• 2 cups of Mushrooms – chopped up tiny

• Cornflour - to help thicken the sauce (I used guess work til it thickened up)

• White Wine - adds a depth of flavour to the sauce but I dont think it's necessary. Sauvignon Blanc. For a non-alcoholic version, replace it with chicken broth.

• Cup of chopped up Kale

• 1 Cup of Cream – can use a heavy cream or make with half-and-half, which is a simple blend of equal parts whole milk & light cream. You can also use sour cream

• Squeeze of Lemon

𝗠𝗲𝘁𝗵𝗼𝗱

1) Heat the skillet

2) Cook the Chicken: Season chicken breasts on both sides with salt and pepper. Place chicken breasts in skillet and cook on both sides, about 3 to 5 min per side or until no longer pink inside, time depends on thickness of your breasts. Since the breast is fairly thin, it should cook faster. Transfer the chicken to a plate.

3) Cook the Mushrooms: Add the onion, kale & garlic to the skillet and cook for a couple minutes until onion is translucent & soft.

4) Add the mushrooms and stir. Season mushrooms generously with salt and pepper. Let them cook for about 5 minutes, stirring occasionally. Let excess liquid evaporate. When they are cooked to your liking, add the wine and deglaze the pan by scraping the bottom of the skillet. All those brown bits are flavour!

5) Finish the Sauce: Sprinkle the cornflour over the mushrooms & stir for another minute just to remove the raw flour taste. Next, add the cream, stir and cook for 3 minutes, stirring occasionally or until sauce reduces a bit and thickens. Taste for seasoning & adjust with salt and pepper as needed. Add the chicken back to the skillet and spoon sauce over the chicken.

6) Finish and Serve: Garnish with parsley and serve hot

Before I went to bed I saw the Youtube notif that TADC was going to Netflix and it INVADED my dreams so vividly I have not had such an episodic sequential serialized cohesive dream in months it was literally its own chapter its own short story

#I was Pomni it was literally Pomni POV #Caine had cooked up some sporty adventure and I was like Ummm...... no #So I found a glitch where I could hide in a technically out-of-bounds area #I had a theory that if I stayed super close to the ground I wouldn't be in the range of Caine's mod powers or whatever #Some random girl was w me I don't think she was important #Anyways I started thinking “This could hurt. When they leave #the map will not have to exist.”#I'd be crushed by the nonexistence of the area I'm in. When they come back I'll load in somewhere slightly different #and be stuck in the walls."#DIDN'T HAPPEN everything was OK #But at some point I was like man... sure is boring and scary. Sure wish my friends were here.#So I ended up finding them anyway LMAO #I told them what happened cuz they were obviously concerned and Caine got his feelings hurt???#Like. surprising moment of clarity. Everyone was shocked and uncomfortable.#Bro was like “I try so hard for U guys 🥺 I just don't get it. Why didn't you just tell me you wanted to stay home??”#Most everyone was like IDC UR OUR JAILER!! CRY ABT IT!! but me and Ragatha were coerced into pity...#Like yeah whatever. Sorry man. I'll be honest next time and not do things that could make me die. I ended up using three generous tablespoons of curry paste. The dish turned out very flavorful and delicious, but a little bit too spicy for me. But that’s what rice is for lol. I suspect I’ll make this pretty frequently, and next time I’ll do a more strict three tablespoons and I think it’ll be perfect. I’m so excited by how flavorful this is! I think the lesson I learned is that Thai kitchen brand curry paste just isn’t that good lol. I think using maesri this time really helped.
