Roast Butternut Soup
Ingredients:
1 butternut squash, cut into large chunks
1 onion, cut into large chunks
100g cherry tomatoes
1 Apple, diced
4 medium carrots, cut into chunks
1 bulb garlic, top sliced off
100g walnuts
Olive oil
Salt
600ml veggie stock
Method:
Put all the veggies, the apple, and the walnuts onto a large baking tray, drizzle with olive oil, sprinkle with salt, and roast in the oven at 180 degrees for about 20 minutes, until the butternut is soft. Be careful not to let the garlic or walnuts burn!
Scoop the flesh out of the butternut and squeeze the garlic out of its skin. Put these along with the rest of the roasted veggies and the apple into a blender, and blend with the stock until it’s smooth. Transfer to a pot to heat it through before serving! (You might need to add a bit more hot water depending on how thick you like it)
This was so delicious and perfect for autumn 🍂 it made 4 large portions, and would be perfect for meal prep if it lasts that long 😂. I served it with some pepper, olive oil, and some more walnuts with some focaccia on the side. If also gives you all of your five a day!

Fun, fifteen hour fast, fibre rich, high fat food, free time in the sunshine and fitness.
It's been a good Monday.
I have once again tweaked my macros. I couldn't sustain things at 10% carbs and 30% protein.
I was missing out on fruit and veggies. Just that extra 5% of my daily calories makes a difference. One really good thing, too, is adding that psyllium husk to push the fibre up! I mixed it into my greek yoghurt this morning, when I prepped my afternoon fruit snack. Psyllium is used as a thickener, and yep, it certainly did that! And SO filling!

Also, exercise, Multivitamin, vitamin d, & fish oil will fix like 80% of mental problems. I was on antidepressants for 11 years & then i started taking my health more seriously. i suddenly felt like life was worth living when i would exercise in a way that was fun to me. I still have bad times & flashbacks but i am alive and you gotta hang in there to be alive because there are things you might regret dying before seeing.

It became very apparent in the early days of the pandemic, when so many people had to shift quickly to working from home, that having home PC has become a thing of the past. In my department of 100 or so people, I was one of about 5 who had a home desktop. Around half had some kind of laptop, but a good proportion of them were little netbooks or Chromebooks. Everyone else only used tablets or phones at home.
It's not (just) that kids aren't interested in learning to use a PC, it's that an increasing number of households don't even have one available that they could use.
Telling young zoomers to "just switch to linux" is nuts some of these ipad kids have never even heard of a cmd.exe or BIOS you're throwing them to the wolves
#i strongly believe that using a PC is like eating fibre#sure it might not go down as easy as ultra-processed mobile UI pop-tarts#but it's important for a healthy technical digestive system

Lentil Soup
Ingredients:
2 tbsp olive oil
1 onion, diced
3 celery stalks, diced
3 carrots, diced
0.5 tsp cumin
0.5 tsp corriander (ground)
1 tsp smoked paprika
3 cloves of garlic, grated
2 cups dry green lentils
1 tin chopped tomatoes
4 vegan stock cubes
7 cups of boiling water
3 cups chopped spinach (120g)
Juice from one lemon
Method:
Fry the onion, celery, and carrot in the olive oil until softened, about 2-3 minutes.
Add the garlic, corriannder, cumin, and paprika and fry for another minute, and the room starts to smell like the spices! 😋
Add the lentils, tomatoes, stock cubes and water, mix well, and bring to the boil.
Lower the heat and leave to simmer for about half an hour, until the lentils are cooked. Stir occasionally to stop it from catching at the bottom.
Remove from the heat, stir through the spinach and the lemon juice, and serve!
This makes 4 large servings of roughly 500kcal with about 25g of protein and 30g of fibre. It’s a hearty, comfort food kind of meal which is really tasty and gets loads of your five a day in 🥳
You can add more or less water depending on how thick you like your soup, and you can add salt and pepper to taste if you like - I didn’t think it needed it, but you do you.
A smaller portion with a bit of good sourdough bread would make a delicious lunch, and this keeps well in the fridge for several days. It also freezes well, so it’s perfect for meal prep.

I've been neglecting my yoga.
So I got that in for my first workout, after my breakfast had settled.
Some very challenging moments, but I never find yoga easy!
A really strong, effective routine.
Yoga - I never enjoy it, but I always appreciate it!
About an hour after that, it was lunchtime. I've had extra cottage cheese with both psyllium husk and collagen powder mixed in. Needed a bit more fibre and protein on my plate.
Plus I threw in a small chunk of beetroot along with the usual lettuce.
Always good to change things slightly, now and then.
And yeah, blood sugar. Don't even ask.....
