A colorful and tasty salad with grilled pork tenderloin marinated in gluten-free gochujang sauce, crunchy peanuts, crisp snap peas, and a cool salad greens mix.
Ingredients: 1 lb pork tenderloin, sliced. 2 tbsp gluten-free gochujang sauce. 2 tbsp gluten-free soy sauce. 2 cloves garlic, minced. 1 tbsp sesame oil. 1 tbsp honey. 1 cup snap peas, trimmed. 1/4 cup peanuts, chopped. 4 cups mixed salad greens. 2 green onions, sliced. 2 tbsp rice vinegar. 2 tbsp olive oil. Salt and pepper to taste.
Instructions: Put gochujang sauce, soy sauce, honey, minced garlic, and sesame oil in a bowl. Combine well. Slice the pork tenderloin and add it to the marinade. Toss the meat to coat it. For at least 30 minutes, let it sit. Put the grill pan or grill outside on medium-high heat. The pork slices should be cooked on the grill for four to five minutes on each side, or until they are fully cooked. Mix salad greens, snap peas, chopped peanuts, and sliced green onions in a large bowl. To make the dressing, mix the rice vinegar and olive oil in a small bowl with a whisk. Add pepper and salt to taste. Put the grilled pork slices on top of the salad. Pour on the ready-made dressing and mix everything together. Serve the Gochujang Pork Salad right away, and if you want, top it with extra peanuts.

Enjoy the creamy and cheesy goodness of this spinach artichoke dip that is low in carbs and high in fat. This slow cooker recipe is great for parties or cozy nights in because it is easy to make and tastes great.
Ingredients: 1 package 10 oz frozen chopped spinach, thawed and drained. 1 can 14 oz artichoke hearts, drained and chopped. 1 cup shredded mozzarella cheese. 1 cup shredded Parmesan cheese. 1 cup cream cheese, softened. 1/2 cup sour cream. 2 cloves garlic, minced. 1/2 teaspoon onion powder. 1/2 teaspoon dried basil. 1/2 teaspoon dried oregano. Salt and pepper to taste.
Instructions: Put everything in a slow cooker and mix it well. Cover and cook on low for two to three hours, stirring every now and then, until the cheeses melt and the dip is hot all the way through. When it's done, serve it hot with celery sticks, cucumber slices, or pork rinds that are good for you and keto.
