Chicken Enchilada Soup
This recipe is taken from theCozyCook and slightly edited for my preferences!
Can serve 6-8 people
Ingredients:
2 chicken breasts
1 yellow onion
1 jalapeño pepper (cut into sections, doesn't need to be de-seeded)
3 cloves of garlic, minced
10 oz. can red enchilada sauce
10 oz. can diced red tomatoes with green chiles
(optional) 4oz diced green chiles
15 oz. can black beans, drained and rinsed
15 oz. can whole kernel corn, drained
4 cups chicken broth (4c water and 4 tsp bouillon works too)
1/2 cup Mexican 4 cheese
sour cream (to put in your bowl if you like it)
cilantro (as garnish)
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cumin
1/2 tsp salt
1 pinch cinnamon
1 pinch cayenne (optional)
Recipe:
Mince the garlic cloves and dice the onion.
Drain and rinse the black beans.
First add the chicken broth to the crockpot. Then add everything else except for the sour cream, cilantro, and cheese. Be sure to give the pot a good mix once all the spices are added.
Make sure the chicken breasts are submerged and cook on low for 7 hours, or on high for about 4-5 hours. Time is variable depending on when the chicken is fully cooked. It will look white and feel more firm than when it was raw.
Once cooked fully, take the chicken breasts out and shred them. This can be done either in a separate bowl by hand or by using a stand mixer with the paddle attachment.
Once shredded, add the chicken back into the pot and turn down to low. Add the 1/2 cup of four cheese and mix until melted.
Let warm for a few minutes and serve! The serving tastes best with a dollop of sour cream mixed in and topped with cilantro. (I also crumbled some tortilla chips on top of mine.)

"So," Buck said as he began making his way to the kitchen. Eddie hesitated briefly, then shut the front door and followed. "I'm ninety-nine percent confident I've got the recipe right. Remember last month when we were at the [parent-teacher] evening and Jessica's mom served those chicken enchiladas? And you practically had an orgasm when you tasted one?"
Eddie felt his cheeks flame with embarrassment and opened his mouth to object – he had not moaned that loudly – but Buck was still talking.
"Well it turns out that Sylvia, Jessica's mom, shops at [place] and we ran into each other a couple weeks ago. She actually saw me first, cause I was kinda in my own world. Anyway, she said hi and we got talking and I remembered the enchiladas you loved so I asked her if I could get the recipe and she said yes!"
Maybe this wasn't a date after all, Eddie thought gloomily, leaning against the table and watching Buck begin dishing the food out onto two plates for them.

I'm writing this fic out of order and all over the place lol.
Buck was running late. After being up half the night, tossing and turning with his new realisation, he'd finally fallen asleep only to miss his alarm and then have to dash to make it on time. So when he got to the station, everyone else was already upstairs in the loft.
He got changed quickly, slamming his locker shut on his mess of belongings, and then took a moment to take a steadying breath before making his way up to where the others were.
He could do this. He just had to get through this one shift and then he could ask Eddie if they could talk and…
Buck was grinning when he reached the others.
"I have a date this Friday," Eddie was saying with a shy smile on his face.
Buck came to an abrupt stop, his blood freezing in his veins, as Hen and Chim immediately started crowing excitedly.
"You what?"
The others fell silent, all turning to look at him.
"I… have a date?" Eddie repeated, his smile faltering.

"I hope it's good. I got the recipe from Ángel a couple of weeks ago and it definitely wasn't as easy as I was hoping it would be. This is actually what I was doing last week when you wanted to hang out and I said I couldn't. I was doing a practise run to make sure I'd know what I was doing when it came to the real thing. And I'm pretty sure you knew something was up so I'm sorry for not telling you but I wanted this to be a surprise, so…
"Anyway, here it is. Your favourite: Red Beef Pozole!"
With a flourish, Buck lifted the lid and smiled shyly/hopefully.
Lips parting in surprise, Eddie leaned forward to get a closer look before inhaling deeply and letting out a quiet groan of pleasure.
"How on earth did you get him to give you the recipe?" he asked. "I swear that man is more tight-lipped than anyone I've ever met."

I’m in the same boat with vegetarianism. I’m currently a minor, but when I turn 18 i plan to start eating meat (i have some health problems due to malnourishment but my parents are super religious and strict). What foods do you recommend for someone eating meat for the first time?
That’s almost exactly how my upbringing was, so I understand how transitioning to eating meat can be intimidating. If you’ve been vegetarian your whole life/a long period of time, you’re most likely going to have some minor stomach issues when you first start eating meat. These will eventually go away as your body gets used to processing the new foods. I recommend starting with meals you already know you like, and then eat the meat version of it. My first meat food was chicken noodle soup because the soup was familiar. If you like meat substitutes (like the beyond meat/impossible meat/morning star brands) I would go with having the meat version! If you like veggie chicken nuggets, try regular frozen chicken nuggets! If you like veggie burgers, try having a small hamburger. Something I do NOT recommend until you’ve been eating meat for a while is trying to cook with raw meat. Pre cooked meat will be your best friend. If you don’t know how to properly prepare meat, there’s a higher chance of getting yourself sick. Do your research, get used to cooking with pre cooked meat, and then try something where you cook something all the way (like baking chicken instead of pan frying it. It’s harder to undercook). Just remember that over cooking meat is better than under cooking meat and getting sick (I’ve been eating meat for 2 years and I’m still too scared to cook with chicken. I only eat precooked chicken, canned chicken, and chicken from restaurants where I KNOW it’s safe). You might have been told that meat is bad for you or unhealthy (I was told this) but it’s an EXCELLENT source of protein and nutrients. Go slow, take your time figuring out what you like, and enjoy this new food group! Below the cut is some meat dishes I enjoy. Some are precooked, and some I get from restaurants or fresh from the store.
Hot dogs (you just gotta boil them or put them in the air fryer. They’re already cooked)
Chicken apple sausage (precooked, in the air fryer on 400°f for 5 minutes)
Sausage patties and eggs (precooked, you just need to fry them so they defrost and get a bit of searing on them)
Frozen corn dogs (precooked, air fryer or oven)
Breakfast sandwiches with sausage or bacon
Chicken salad sandwich/chicken salad with crackers/on a bed of lettuce (I used canned chicken, drain the juice out, and mix in miracle whip, mustard, and desired seasonings. Canned chicken is precooked)
Canned soup with meat in it (precooked, just microwave it or heat it on the stove)
Pizza with pepperoni or sausage on it
BBQ shredded chicken or pork on bread (you can buy it at the store and all you have to do it microwave it to heat it up. It’s precooked)
Breakfast sausage links (not precooked, but it’s easy to cook them. Just fry them until the outside is golden brown and then cut them in half. If it’s not pink inside, you’re good to go)
Burger patties (same as above. It’s easy to cook them in a pan, just make sure the inside isn’t pink. A cut in half burger is better than a food poisoning burger)
Chicken quesadilla (use canned chicken, shredded, with the juice drained, and add whatever seasonings you want.) (chicken is really bland without seasonings like tofu, so you want to heavily season it)
Chicken enchiladas (same as above. Use seasoned canned chicken if you’re not comfortable with cooking chicken and shredding it)
Any meat frozen microwavable TV dinners (super easy to make and it gives you a wide selection of meat dishes without having to actually cook them. I like frozen chicken alfredo or chicken pad thai)
Spaghetti with meatballs (meatballs are super easy to make. Get some ground beef, follow a recipe for seasonings and stuff that binds the meat together, and pop them in the oven. Once again, cut them open to see if they’re pink inside) (or invest in a meat thermometer if you want to cook meat often. It really helps with food poisoning anxiety)
Tacos/burritos with ground beef (see above)
CHICKEN PAD THAI WITH PEANUT SAUCE (I’ve mentioned pad thai before but I could eat this every day for the rest of my life. Find a local thai restaurant and try it. The tofu version is also really good)
Beef sticks (personally I don’t really like them because of the texture, but they’re a really easy source of protein and good to have around)

Oh lord, a thinker from Lola on a Saturday morning 😅
I'm the cook in my household, I am a HUGE food as a love languages motherfucker, so this top three is, like, a balance of love to cook/love to eat:
Lasagne. I make a fucking MEAN lasagne and when I was in Tuscany I got the tip to soak the mince in red wine for ~24 hours before cooking which was a fucking EXCELLENT piece of advice.
Chipotle enchiladas. A super quick post-D&D meal if I've been marinating the chicken before we start playing but fucking delicious.
Butter chicken pie. This is my 'I wanna impress you' recipe lmao. It's absolutely fucking divine and super easy to make!
Least favourite fruit: Not to be, like, Mentally Ill On Main or whatever but I cannot eat fruit where you have to eat the seeds? Apples/pears/etc are fine, but anything where you pretty much have to eat the seeds e.g. strawberries is a huge nope. However there's a lot of those fruits where I really love the flavour, I just can't eat the fruit itself. So in terms of a fruit I hate the flavour of as well... probably rockmelon/cantaloupe? It's just Not A Vibe
Least favourite vegetable: I originally said broccoli here, because the texture is the worst, but then I realised if it was drowned in ENOUGH cheese or something I might bring myself to eat it. Pumpkin, however, is a huge fucking nope no matter what it's hidden in.

I need ideas since I can't really eat most of what my family makes lol
i like to cook from scratch so i don't know how helpful I'll be but I'll lay out some of my favorites
i eat a lot of pasta tbh. fettuccine alfredo, meatless spaghetti (or if i can find the tofu meatballs, that), pasta primavera. I'm trying some mac and cheese with gochujang in it, I'll let you all know how that is.
easy as hell feta tomato pappardelle
not to be cliche and say salad but the nashville hot pickle and spinach dijon make me (a salad hater) like salad. they sell these at walmart or raley's.
i make a vegetarian noodle soup with vegetable broth sometimes. depending on where you are, there's an amy's brand one that's canned. zuppa toscana is a fun one to make if you have veggie italian sausage (i wouldn't put white wine in it. i rarely put wine in anything.)
also korean and indian food is usually vegetarian by default. japchae is really good. it's very vegetable-heavy. i make a cold soondubu (it's usually hot but this is a very good cold for hot days version). this is kong-guksu, which is a peanut sauce ramen dish (better than it sounds).
my favorite indian dishes are palak paneer, tikka masala (i make it with cauliflower or tofu depending), chana masala, basmati rice, and naan.
falafel is vegetarian, and you can make yellow jasmine rice vegetarian easily by making it with vegetable broth instead of chicken broth. and of course, there's hummus and baba ganoush
if you like mushrooms, they're a good substitute for steak on philly cheesteak and this recipe for vegan po' boys is phenomenal.
i make black bean burgers from time to time (i usually buy them bc I'm lazy but they're fun to make). also, black bean and corn tamales are very good. quesadillas are easy too. or cheese enchiladas. they sell vegetarian refried beans too. if not, pre-boiled (or canned) whole pinto beans + vegetable shortening.
we have decent vegetarian sections at the stores i go to. i find safeway and sprouts (I'm not sure if this is a national chain or not) have the best options. i wish i lived in la or sf where all the vegans are.
when in doubt, you just buy nacho fix ins. not healthy but fun and everything that needs to be hot goes in the microwave.

Why the hell can I not learn to make the simplest dishes when it comes to cooking. I can make enchiladas, fried chicken, calzones, and so on often on the first try without too much trouble if I spend the time to be careful. The recipes make it easy I just follow them and it is good. BUT. This all falls apart when I try to cook the simplest of things. I can't cook and egg for the life of me (aside from poorly scrambled) it all ways ends up stuck to the pan and all mixed up. Same thing with grilled cheese it either sticks to the bottom and I gotta scape up the bread or I try to flip it to the other side and the innards of it gravitated to one end or slip out. People say I just need to use more oil but I need a number if that's that's case, what's the depth range I am looking for cause otherwise it's still just complete guesswork. Anyways I'm hungie and wanna grilled cheese so I'll see how that turns out.

After like three days of thinking, if you're still open to offering adulthood advice, the plague of my existence: how the fuck do you decide what to make for dinner (including the 'what should I put on my meal plan list?' step)?
this is a hard one, because the short answer is basically just "vibes"
let's try to break it down at least into some tips, though.
in my house, any time we try a new meal or version of a recipe, everyone casts a vote: "I would do it again" or "I wouldn't do that again". this is usually done in a melodramatic way and turned into a playful fight. strict democratic majority doesn't always win if the cook is in the minority, but it's a start. meals that people would do again get added to the List.
the List has abso-fucking-lutely every communally edible meal on it. meals that are close variations on each other are all included. the List is sorted by categories like "chicken", "beef", "pork", "vegetarian", "pasta", like a cookbook. sides and desserts are not on it. you could make a separate list for them but it's not as important and wouldn't be a capital L List.
if you're looking at your List and it's pitiful, try out some of your favorite meals' cousins! not just white people taco night, but enchiladas! different stir-fry sauces! and then try some terrifying american casseroles with too much cheese and some canned cream soup!! they ain't bad!!!! look at different crockpot meats for ciabatta sandwiches, french dip et al! stuff your chicken breast with something!! go nuts!
do not consult the List when you have just eaten a full meal. do not consult the List when you are in the process of cooking a meal and your whole house smells deliciously like that food, so that the question "What would everyone like to eat this week?" is inevitably met with "idk the thing I'm smelling right now"
pose the question, "What would everyone like to eat this week?" take suggestions. write them down.
supplement these suggestions (or your blank sheet of paper if people are feeling unhelpful) with meals from the List. in my house, we cook...a lot.....like...six days a week. so when we're making a list we aim for one meal with pasta, one with rice, one Asian, one Mexican, one soup (or two in winter), a grilled meal in summer, with no more than two beefs. we try not to repeat anything sooner than three weeks, or we'll get tired of it and ruin it for much longer than three weeks. depending on what AcTiViTiEs we've got planned for the week we'll plan a crockpot meal or a sauce/soup we have in the freezer for that night. you want to balance your weekly plan with some less intensive meals so you don't get overwhelmed.
we arrange our meals into a Plan, but it's not set in stone. we were supposed to have sloppy joes on Tuesday but the meat accidentally was frozen and we didn't have time to thaw it out so we had chicken fajitas instead. not the end of the world.
and the true tip from the Cate Clan: always have pancake/waffle mix in the pantry and a frozen pizza in the freezer, so if you can't bear to make a full meal you have easy options.

Happy Blorbsday! I had to think about this one. It was surprisingly hard. Some of these are my personal comfort foods so sorry if they aren't comfort foods for everyone.
Thea: Fettuccine Alfredo - more substantial of a dish than you might realize at first. It can fill you up fast or be too rich to eat a lot of, but you'll probably find yourself craving the leftovers after not too long
Nix: Chicken Enchiladas - they might look like an unappetizing mess if you've never had them before. If you aren't used to eating spicy food, they might be hard to eat, but that burn in your mouth is what makes them so addictive.
Kai: Chicken Noodle Soup - just the warm comforting food you need when you aren't feeling your best
Gram: Japanese Curry - warm, smooth, and comforting, not as overpowering a flavor as some curries but can still have a spicy kick to it
Lucan: Chamomile Tea - not everyone likes the flavor but it can be so soothing and relaxing once you get used to it
Ryu: Garlic Bread - Crusty on the outside, soft and warm on the inside
Nolan: Meatloaf - not everyone likes it but those who do love it. Sometimes you just have to find the right recipe
Mel: Pancakes - soft, sweet, warm, fluffy, reminds you of family time and lazy weekend mornings
Iris: Mashed Potatoes - fluffy and creamy mashed potatoes are the best but a lot of people don't realize they are easy to ruin if you overcook or overmash them

This slow cooker chicken enchilada recipe is easy to prepare and yields flavorful, tender chicken wrapped in warm tortillas and smothered in a delicious sauce. It's a perfect dish for busy days when you want a homemade meal without a lot of hands-on cooking.
Ingredients: 1 lb boneless, skinless chicken breasts. 1 can 10 oz red enchilada sauce. 1 can 4 oz diced green chilies. 1 cup diced onion. 1 cup diced bell pepper. 2 cloves garlic, minced. 1 teaspoon chili powder. 1 teaspoon ground cumin. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 8 small flour tortillas. 2 cups shredded Mexican blend cheese. Chopped fresh cilantro, for garnish optional.
Instructions: In the slow cooker, put the chicken breasts on the bottom. Put green chilies, onion, bell pepper, garlic, chili powder, cumin, salt, and black pepper in a bowl. Mix them all together. Cover the chicken with the sauce mix. When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours. Take the chicken out of the crock pot and use two forks to shred it. Set the oven to 350F 175C and heat it up. Add a little of the sauce mix to the bottom of a 9x13-inch baking dish. Put some cheese and shredded chicken in the middle of each tortilla. Roll it up and put it seam-side down in the baking dish. Do it again with the rest of the chicken and tortillas. Add the rest of the sauce mixture to the enchiladas, and then cover them with the rest of the cheese. To make the cheese melt and bubble, cover the baking dish with foil and bake for 20 to 25 minutes. If you want, you can add chopped cilantro as a garnish before serving.

omg SO crazy you ask about easy recipes because i just tried a new one tonight and really liked it!! it's based off this (https://www.juliapacheco.com/enchilada-potato-skillet/) but tbh i just used like half a bag of frozen diced potatoes, half a diced onion, a packet of premixed taco seasoning, a can of red enchilada sauce with about 1 can of water, and a can of chicken and cooked it for like 10 minutes total?? very easy with minimal prep and respectably cheap and only uses one pan so dishes are easy. thinking of using kidney beans instead of potatoes next time. we just put it in bowls and ate it with tostitos scoops and it was good and filling!!
THANK YOU this literally sounds so perfect and good i love a good vegetable and meat with taco seasoning type of dish lol also for it being filling gets it so many bonus points because my biggest gripe with like easy recipes is that half the time i eat and i’m like okay but i’m going to be hungry again in like three hours so what gives lol
