why is every haute cuisine place obsessed w crudo rn. whats with the crudo fixation. 'this first dish is a hamachi crudo with a lychee-infused beurre monté and a mirepoix-inspired slaw' ok that's real nice but there are other ways to prepare fish <3 some that may even better preserve the integrity and flavor profile of the fish without the dish having to be so texturally monotonous <3 especially without a carb base when the guest is just chasing a slippery piece of fish around their plate <3 don't be afraid of the stove. take my hand. take this oil. take this pan. take this filet. sear on high to crisp up the skin. you don't even have to cook the flesh. just flash up the skin and get it toasty. let it rest. plate it up. mwah
