Basically, in the anime, Ash retired and someone else has taken over as main character, and this happened right before the newest games (Scarlet and Violet) released and thus got into anime canon. Scarlet and Violet are set in the Paldea region, which is based off of Spain (the big school setting the main character goes to is the Segrada Familia in Barcelona). Hence, Ash has travelled everywhere bar Spain on his journey, as he's retired now. Hope this helps!!
