Vegan Tofu Jalfrezi is a flavorful and spicy Indian dish made with tofu, bell peppers, onions, tomatoes, and aromatic spices. It's a satisfying vegan version of the classic Jalfrezi curry, perfect for a hearty meal.
Ingredients: 300g firm tofu, drained and cubed. 2 tablespoons vegetable oil. 1 onion, sliced. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 2 tomatoes, diced. 3 cloves garlic, minced. 1 tablespoon ginger, minced. 1 teaspoon ground cumin. 1 teaspoon ground coriander. 1/2 teaspoon turmeric powder. 1/2 teaspoon chili powder. 1 teaspoon garam masala. Salt to taste. Fresh coriander leaves for garnish.
Instructions: Heat vegetable oil in a large pan over medium heat. Add tofu cubes and fry until golden brown. Remove from the pan and set aside. In the same pan, add sliced onions and cook until translucent. Add minced garlic and ginger, cook for another minute. Add sliced bell peppers and cook until slightly softened. Stir in diced tomatoes and cook until they start to break down. Add ground cumin, coriander, turmeric, chili powder, garam masala, and salt. Mix well. Return the fried tofu to the pan and stir to coat with the spices and vegetables. Cook for another 5-7 minutes until everything is heated through and flavors are well combined. Garnish with fresh coriander leaves before serving. Serve hot with rice or naan bread.

Shrikhand Cake (Vegan & Oilfree Sweetened Yogurt Cake) Holi the Festival of Colours starts today 🎉 The heatwave in Sydney presently means there was certainly no cooking or firing away in the kitchen to make any of our traditional favourites 🥵 Shrikhand is a traditional yogurt based dessert made by draining the yogurt to thicken and adding in powdered sweeteners along with spices like Green Cardamom Powder, Nutmeg, Saffron & Rose petals and decorated with sliced Almonds & Pistachios. I had leftover homemade Soy yogurt that had been turned into Shrikhand over the weekend because it had been so warm! So this Shrikhand Cake recipe came about with, 2 cups unbleached Self Raising Flour 1/4 cup Erythritol (use more for a sweeter cake, but the Shrikhand already had Stevia Powder) 1 cup Shrikhand 2 - 3 tablespoons plain Sparkling Water (May need more or less depending on Shrikhand consistency, mine was the consistency of a thin paste) 2 tablespoons of sliced Almonds, Pistachios, Rose Petals & Saffron for garnish. To Make, Whisk the flour & erythritol together and slowly fold in the Shrikhand. Add in the sparkling water to make a smooth but thick batter. Pour into a prepared cake pan and add the garnishing on top of the cake. Bake for 40 to 50 minutes at 170 degrees C. Homemade Taco Cups by @elavegan Ingredients -6 tortillas (regular or gluten-free) about 15 cm in diameter -1 tbsp vegetable oil -1 onion, chopped -2 cloves of garlic, minced -3 cups cooked lentils (*see recipe notes) -1 cup chopped bell pepper (color of your choice) -1 cup chopped cherry tomatoes -Spice mixture: 2 tsp onion powder, 1 tsp ground cumin, 1 tsp turmeric, 1/2 tsp smoked paprika, 1/2 tsp brown sugar, 1/4 tsp red pepper flakes, salt and pepper to taste -1 tbsp soy sauce (gluten-free if necessary) -1/2 tbsp balsamic vinegar -1/3 cup plant-based milk or cream -3 tbsp tomato paste -Vegan cheese sauce or cheese of choice (to taste) Instructions Put tortillas in heat-resistant bowls and bake them in the oven at 390° Fahrenheit for about 15 minutes until they are lightly browned. The taco cups will firm up after they cooled down. In the meantime, chop the vegetables. Heat oil in a frying pan, add the onion and fry for about 1-2 minutes. Add garlic and bell pepper and fry over medium heat for about 3-5 minutes. Add all the other ingredients (except cheese sauce) and fry for a further 3-4 minutes. Put the filling into the taco cups, add vegan cheese sauce and fresh herbs (optional) on top. You can reheat the taco cups in the oven.
