I just made the best hummus. A trick lets you boil dried chickpeas to nearly mush in 20 minutes, and it's the smoothest hummus ever.

Not something I made myself, but an unexpected restaurant result. I ordered a pita, hummus, and tzatziki platter for delivery. Which is technically what I received! Except instead of the expected container hummus and container of tzatziki, they were stacked like 7-layer-dip.

Hummus on the bottom, next tzatziki, a half-inch of olive oil, and a pile of sliced cucumber and red onion on top of that. All in the same dish for dipping.

That actually sounds pretty good, even if it was unexpected.

Chicken Tikka Pita

Ingredients:

For the Chicken Tikka:

500g (1 lb) Boneless, Skinless Chicken Breast or Thighs, cut into bite-sized pieces

1 cup Plain Greek Yogurt

2 tbsp Lemon Juice

3 cloves Garlic, minced

1 tbsp Ginger, minced

1 tbsp Garam Masala

1 tbsp Ground Coriander

1 tsp Ground Cumin

1 tsp Ground Turmeric

1 tsp Paprika

1/2 tsp Cayenne Pepper (adjust to taste)

1 tsp Salt

2 tbsp Olive Oil

For the Pita Assembly:

4-6 Pita Breads

1 cup Cucumber, thinly sliced or diced

1 cup Red Onion, thinly sliced

1 cup Cherry Tomatoes, halved

1 cup Lettuce or Arugula

1/2 cup Fresh Cilantro or Mint Leaves, chopped

1/2 cup Hummus or Tzatziki Sauce
