Chicken Tikka Pita
Ingredients:
For the Chicken Tikka:
500g (1 lb) Boneless, Skinless Chicken Breast or Thighs, cut into bite-sized pieces
1 cup Plain Greek Yogurt
2 tbsp Lemon Juice
3 cloves Garlic, minced
1 tbsp Ginger, minced
1 tbsp Garam Masala
1 tbsp Ground Coriander
1 tsp Ground Cumin
1 tsp Ground Turmeric
1 tsp Paprika
1/2 tsp Cayenne Pepper (adjust to taste)
1 tsp Salt
2 tbsp Olive Oil
For the Pita Assembly:
4-6 Pita Breads
1 cup Cucumber, thinly sliced or diced
1 cup Red Onion, thinly sliced
1 cup Cherry Tomatoes, halved
1 cup Lettuce or Arugula
1/2 cup Fresh Cilantro or Mint Leaves, chopped
1/2 cup Hummus or Tzatziki Sauce

I have yet to make sourdough bread that meets my standards for bread BUT I love my sourdough starter like a son

@novitiate2017 and anyone else that’s interested here’s my mom’s recipe for chicken tikkas! it’s pretty simple I think and you can either make it with a whole chicken or with smaller skewer size pieces (which I prefer cause it’s easier lol)
Chicken tikkas
1 whole chicken separated into drumsticks/thighs/breasts/wings OR 1.5 pounds chicken breast cut into like 2-3 inch pieces .5 cup yogurt 3 tablespoons olive oil 1 tablespoon lemon juice 1 heaped teaspoon salt 1 heaped teaspoon red pepper .5 teaspoon turmeric .5 teaspoon ground cumin .25 teaspoon cloves .25 teaspoon cinnamon .25 teaspoon black pepper 3-4 cloves crushed garlic .5 inch piece of ginger, crushed
Mix everything together to form a marinade and let the chicken sit in it at least four hours, preferably overnight. Fill a 9x13 baking pan with like a quarter inch of water, then put in the steel rack thing that goes into them (v technical terminology here) and spread the chicken out over it and bake at 375 for 50- 1 hour 10 minutes. When it’s done you can skewer it with grilled veggies and/or serve over rice or with pita whatever really anyways I hope I explained this well and if anyone makes it I hope it turns out gr8

I love taking a lil time in the morning to plan something balanced and delicious for the first meal of the day, which is pretty important even if you skip breakfast 😊 my bf is really happy I made a meat dish tonight lmao it’s becoming pretty rare! but I was really craving chicken tikka masala and its so easy to make at home. (i recommend searching for recipes online and tweaking them to taste, for anything so spice-forward it’s hard to give exact amounts that’ll please everyone!)

You might recognize the word “tikka masala” from dishes on Indian restaurant menus. It is one of the more iconic recipes in Indian cuisine, along with their many curried dishes. While you might see it with all kinds of ingredients, it is most typically made with chicken, beef, or lamb. In our Chicken Tikka Masala Slow Cooker Recipe, we use lean chicken breasts because it’s a low-fat, healthy protein. After cooking for hours at a low heat, the chicken is juicy and fall-apart tender.
If this is your first foray into Indian food, fret not! Before you let yourself get overwhelmed, take a second to peek at the ingredients list. Really, the dish is little more than a spiced tomato sauce – how easy is that! We’ll take a look at what that means in a minute, as well as a deeper look into the specific ingredients used. We think this is the perfect weeknight meal to serve over brown rice or quinoa. Or, if you want to make “Indian pizza,” you can serve it with a side of naan bread or whole-wheat pita.
What is Garam Masala?
Garam masala is one of the main spices used in Indian cuisine. Each region has its own combination of specific ingredients, but most of them share a few common components. You can get store-bought garam masala, or you can make it yourself. Most recipes include cumin, coriander, fennel seeds, cloves, cinnamon, cardamom, black peppercorns, ground mace, nutmeg, and red chilies.
According to ancient Ayurvedic medicine, these ingredients elevate the body temperature. When the spices heat your body, they promote healing and digestion. So, in addition to their earthy and aromatic flavor, adding garam masala to your cooking can actually help build your immunities to fight disease!
We use prepared garam masala in this recipe, along with antioxidant-rich turmeric, stomach-soothing ginger, and spicy chili powder. These spices really come together to make a tasty sauce that’s also beneficial to your health.
What Else Goes in Tikki Masala?
Like we referred to earlier, tikka masala is really just creamy, spiced tomato sauce. In addition to the flavorful spices, the sauce is composed of tomato paste and coconut milk. To make this slow cooker tikka masala version, we make the sauce in two stages.
First, we start by simmering the chicken in the chicken broth and spices. This not only marinates the chicken so it’s super tender and flavorful, but the long cooking time lets it break down over hours. At the end of the cooking process, the chicken is almost shreddable!
Then, once the chicken is fully cooked, we stir in the coconut milk and tomato paste. The coconut milk adds a subtle sweetness to the dish, as well as contributing to the sauce’s body. The tomato paste adds a full-flavored savory tomato flavor and gives the sauce its characteristic orange hue. Finally, the fresh cilantro adds a brightness to the dish, along with a visually appealing contrasting color.
When it’s finished cooking and the sauce is whisked together, you get to choose how you serve it! My favorite way to eat tikka masala is over a bed of quinoa. It really adds some extra protein, along with a nutty crunchy texture. On the other hand, if I’m craving pizza, I might eat it with naan or pita bread. You can use the bread as a “spoon” to scoop up the chicken and the sauce.

1 pound boneless and skinless chicken breast, cut into large cubes
1 (15 ounce) can diced tomatoes
1 yellow onion, diced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 jalapeno pepper, minced
1/2 teaspoon turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
3 teaspoons paprika
3 teaspoons chili powder
2 teaspoons garam masala
1/4 cup chicken broth or water
1 (15 ounce) can coconut milk
1 tablespoon tomato paste
1/4 cup fresh cilantro, chopped
Instructions
Combine all ingredients except coconut milk, tomato paste, and cilantro in the slow cooker. Cook for 4 hours on high or 6 hours on low.
Once cooked, stir in the coconut milk and tomato paste. Serve over brown rice or quinoa and sprinkle with the fresh cilantro.

Easy Keto Pita
One of our favorite take outs has always been Indian food, but if you’ve ever had Indian food you know that it is a very heavy rice and bread heavy cuisine. Chicken tikka masala and lamb curry are our go-tos when ordering Indian takeout, but eating them with a spoon just doesn’t cut it. So we always make cauliflower rice and keto naan to serve alongside.
The keto naan is an easy three ingredient recipe and works great for this healthy gyro recipe. You won’t even be able to tell the difference!
Quick Marinade
Before making this healthy gyro recipe I thought the way the meat was seasoned was complex and would be difficult to replicate. Little did I know that it’s super simple and can be easily made at home!
The secret ingredient is lemon juice. The acidity of the lemon penetrates the meat allowing it to not only tenderize, but absorb the salt, pepper and oil that makes up the rest of the marinade. Now you know that any great marinade should include an acid, whether it be lemon juice or apple cider vinegar, and even this article says so!
Must Have Toppings
For me, the fresh toppings is what really makes this one of my favorite meals! While a tzatziki sauce is easy to make at home, there are several store bought versions that have great macros and ingredients!
Having the fatty tzatziki sauce combined with some crunch and freshness from cut up veggies elevates the dense and hearty meat and naan portions of this dish.

Hi friends!
In case you missed it, I’ve declared 2020 the year of helping you guys eat more plants! Recently, I shared this recipe for Peanut Butter White Bean Dip that makes a great after school snack. And I’ve been chatting with my Instagram followers about plant-based meals almost weekly. Yesterday I asked my followers for their favorite ways to eat chickpeas and they came through with a lot of much-loved recipes and I wanted to share them with you.
Remember that if the thought of a completely meatless meal overwhelms you, you don’t have to take an all or nothing approach. The method that has been working well for me is cutting the amount of meat in half. In almost all the meals I’ve been making lately, I’ve been replacing half of the chicken or whatever meat I typically use, with a plant-based protein like chickpeas, lentils, beans or tofu. I believe that stretching one package of chicken into two or three meals is just as valid of an approach as eating one meatless meal and i’ve found it’s a great way to eat less meat without it feeling so overwhelming.

Add the chicken pieces to the marinade and combine well with your hands. Let this sit in the fridge for 15 minutes..
Carefully place each chicken piece under a medium/high grill for 5 mins each side. Don't be tempted to pan fry this chicken - it doesn't work well..
Serve with lettuce in warm pita bread. With rice is another optional serving suggestion.

Undoubtedly chicken tikka wrap has always been the superior choice when you have to select the best among different kinds of starters. Among chicken starters, people dominantly choose either chicken tikka or chicken tandoori because they are so healthy and easy to make. Even health and diet conscious people can opt for chicken tikka as it requires minimal oil. The word tikka means pieces or chunks. Chicken tikka is a simplest and quickest recipe in which chicken pieces are marinated with special spices & yogurt. After that chicken pieces are grilled or baked-on skewers or in an Oven. You can also make chicken tikka masala gravy by using these soft, tendery chicken tikka chunks. For Chicken Tikka Wraps, Any kind of tortillas, wheat roti or parantha can be used to wrap these tender chicken tikka pieces. The red colours of tikkas are because of the Kashmiri red chili powder that I have used, which gives it a nice red color. Usually, I prefer chicken breast for making tikkas as it absorbs the marinade really well as compared to chicken wings. This is the basic marinade that I have used to make chicken tikka, but the same marinade can also be used to make butter chicken recipe too. Both chicken tikka and chicken tandoori are somewhat similar as both are baked or grilled on a hot tandoor that’s why the name tandoori chicken. Since most of the people don’t have a tandoor at their home, then the simplest alternative they use is oven or grilling pans. Ingredients for Chicken Tikka wrap: • Boneless chicken – 500gms • Plain yogurt – 3tbsp • Ginger – garlic paste – 1 tbsp. • Garam Masala Powder – 1tsp • Cumin powder – 1/2tsp • Coriander powder – 1/2tsp • Red chili powder – 1 tbsp. • Chaat masala powder – 1tsp • Lemon juice – 2tbsp • Salt – to taste Ingredients for yogurt chutney • Yogurt - 3tbsp • Coriander leaves - 1/4th cup • Cumin powder - 1/4th tsp. • Black pepper powder - 1/4th tsp. •alt- to taste Veggies for grilling • Carrots • Capsicum • Onions • Tomatoes How to make Chicken Tikka? Method 1. While making Chicken tikka, a thick yogurt is needed because it helps in making thick marinade masala. 2. Add yogurt in a mixing bowl, into this add Kashmiri red chili powder, ginger-garlic – paste, cumin-coriander powder, garam masala powder, chaat masala powder. 3. Next add lemon juice and salt to taste, mix everything well and check its taste for salt and chili powder, add a little bit more if needed. 4. Finally, add the cubical chicken pieces and mix well with the marinade and let it rest for about an hour to 30 minutes. 5. Longer the chicken rest in the marinade, more succulent and flavourful it would turn out to be. 6. Next, thread the chicken pieces into the wooden or iron skewers or either place on a grilling pan. 7. To cook the chicken, preheat a grill to medium or prepare a barbeque. Grill the chicken skewers for about 10 -12 minutes, basting occasionally with the remaining marinade. 8. You can even prepare an oven at 240oC for 15 minutes, and grill the chicken skewers, check until chicken is fully tender. 9. For wraps: either you can wrap it in pita bread or tandoori roti or wheat roti. How to serve Chicken tikka wrap? • Wrap or roll chicken tikkas with warm roti or parathas along with yogurt chutney and plenty of green salads. Tips and tricks: 1. While using wooden skewers, make sure to soak it in cold water for half an hour before using it this step will prevent it from burning. 2. Always grease your skewers with enough amount of oil to prevent it to stick to the skewers & easily slide-off the kebabs. 3. For a nice smoky flavour, burn charcoal until red hot, then keep it in the small bowl. Place this small bowl in the chicken tikka pan, pour ghee on the red hot coal, as soon as smoke begins, immediately cover the pan and smoke for 10 minutes.
