Today I made a microwave scrambled egg for lunch. Not the best way to cook an egg but good enough for me.
One egg, an eyeballed tbsp of milk. I added some Parmesan and Romano shredded cheese blend we had lying around, and some Italian spices; oregano, basil, rosemary, thyme, marjoram, garlic powder, onion powder, salt, and pepper.
Microwave on regular for 15-30sec intervals, stirring often. Make sure to stir thoroughly before you cook it for a nice fluffy texture.
Mixing the cheese in before cooking made texture bit weird, but not bad.
Now to taste my creation, Italian Cheesoned Egg!
Dang it’s good, like, really good. Another mad chef W, Fuck yeah babey!!

Tonight, I made the best pizza that I've ever made!! It's all in the crust, and this one was spectacular!! It was crispy on the outside and light and airy on the inside. I topped it with freshly made marinara sauce and freshly grated caciocavallo, pecorino romano, and parmesan reggiano!! I love those Italian cheeses. I added thinly sliced red onions, diced red bell peppers, and mushrooms. I sprinkled some oregano, basil, garlic powder, and salt and pepper on it, too. This pizza was divine!! I'm glad that I still have some dough left so I can make another one tomorrow. 😁😍😋

I'm on fire tonight, I even did a cook! :D
Ingredients:
1 pound peeled and de-veined raw shrimp
1 whole stick of butter (approximately 1/2 cup or 1/4 pound)
2 tablespoons of minced garlic
5 stalks of green onions from our window onion garden, probably about 1/4-1/3 cup chopped
1 can mushrooms
1 can bamboo shoots
1 can water chestnuts
Black pepper to taste
2 drizzles of teriyaki sauce (drizzle approximately equal to a tablespoon? Maybe? Idk I eyeballed it lol)
1 drizzle soy sauce
1 bag of shredded Parmesan and Romano cheese blend
(not visible) Stovetop rice (2 1/2 cups water, 1/2 stick butter, 1 cup rice, salt)
In an effort to create an actual recipe, my steps were as follows:
Make your stove top rice however you normally make that (I boil the water, butter, and salt then add the rice and simmer for 18 minutes, you might have a better method, do what makes your heart sing)
While rice is happening, in a large pan melt 1 stick of butter over a medium heat
Add garlic and onions, saute them for about a minute, then add your mushrooms, bamboo, and water chestnuts
Stir around your veggies to ensure they're coated in the butter, adding black pepper, soy sauce, and teriyaki sauce
Add shrimp, cover, and cook for approximately 12 minutes or however long it takes for the shrimp to get cooked all the way through, stirring occasionally to prevent burning/sticking
Remove tails from shrimp (optional; placed here bc I find removing the tails easier after the shrimp is cooked)
Dump in cheese
Mix mix mix until the cheese and butter-sauce becomes a cheesy butter sauce
Serve over rice
Enjoy!
Makes probably about four servings, as a rough guestimate.
Might forego the cheese next time and see how that turns out, but this is nicely tasty :)

I made a bunch of homemade ricotta cheese so I decided to make stuffed shells with it because they are delicious 😋 I mixed the ricotta with an egg, freshly grated pecorino romano, parmesan reggiano, caciocavallo, asiago cheeses, and seasoning. I made a pot of marinara sauce using San Marzano tomatoes, fresh basil, oregano, minced garlic, parmesan reggiano rinds, bay leaves, salt and pepper. It was excellent!! 😍 I used pre-made pasta shells. I filled each shell with generous amounts of my cheese mixture and laid them on a bed of my delightful marinara sauce. I sprinkled freshly grated caciocavallo and parmesan reggiano cheeses on top and put it in the oven. What came out of that oven 40 minutes later was an incredible Italian dish, which I served with a tossed salad 🥗 I needed something to lighten things up and help all that cheese get through my digestive system 😉😁 Of course, I made garlic bread out of a wonderful, crusty loaf of bread. And as is my nature, I sprinkled freshly grated cheeses on top of the garlic bread. I can't wait to get hungry again so I can have some more. I love Italian food!!!! ❤️ It's such great food and it tastes sooooooo good!! 😁😍😋 in the words of Julia Child... bon appétit!!

If you want to make carbonara but don’t have pancetta and romano cheese just use bacon and Parmesan where the Italians can’t hear you.
Or just call the classic poor American mom weeknight dish of spaghetti with egg and hot dogs carbonara to make them mad at you on purpose.
