Many people need to return to their jobs and schools. Stick to one-pan (or one-pot) dinners to give yourself a break when it comes to dinner. This classic Mandarin Chinese recipe is one that can be made with either ground beef or pork. I prefer utilizing thinly sliced beef steak. This dish which I commonly referred to as the Chinese version of a burrito The filling is encased in a thin pancake made of water and flour, or you may buy one of those Mexican flour tortillas, but for today's meal, I'm having this with steamed Japanese white rice.

Osso Buco in red wine stew with creamy mash
Super easy to make: Put 1-1.5 kg of Osso Buco, cloves of garlic (I put 8, you can put 10 or a dozen - they will be melted in the end), 1 bay leaf, 2 teaspoons of black peppercorns and salt (not too much at this stage, you can add more later) in a heavy base pot, pour in 1 bottle of red wine - top with cold water to cover the meat if necessary. Bring it to boil (skim the scum on the surface), then turn it down to let it simmer for 3.5 hours - or you can stick it in the oven in 150C degrees for 3-4 hours. Add chopped carrots after two hours and add the mushrooms in the last 30 minutes.
Meat should be falling off the bones when it’s done.

chicken and mushroom congee ❤️
Congee/rice porridge is probably the most challenging staple cantonese dish to cook at home. It’s so hard to get the kind of ‘congee base’ you get in professional kitchen. After testing multiple recipes/methods over the years, I find this one from “Made with Lau” the best and the easiest to follow. The ‘whisk’ trick it suggests really did the ‘trick’ 😂
I tweaked their “Chicken congee” recipe a bit by using half chicken broth+half water instead of just water (and to replace chicken bouillon in the recipe), because I have half a carton of chicken broth left. That’s why the congee has a yellow tint.
