How is it possible to make this easy, gorgeous, impressive appetizer using just 5 ingredients?
It really is. Follow my recipe to check all my tips on how to handle the special Kataifi dough to make individual rolls, wrapped with a lush filling of a Greek cheese, baked to perfection, and then drizzled with honey and pistachios.
Simply adorable, scrumptious, crispy with a sweet/salty combo that scream a great appetizer at a party/festive season buffet, as they can be prepared ahead of time. What else can you ask for?
Suitable for lacto vegetarians.

INGREDIENTS:
· 250 gr. / 9 oz Kataifi dough (kadaifi, frozen and thawed)
· ½ cup / 110 gr / 4 oz Butter, melted
· 225 gr. / 8 oz Graviera or Kefalograviera cheese, cut in thick slices (altern: Manchego)
· About 3 tbsp. / 45 ml Greek Thyme Honey
· 30 gr. / 1 oz Pistachio nuts, roasted, finely chopped
· Freshly Ground Pepper

METHOD:
A. Prepare the Kataifi rolls:
1. IMPORTANT NOTE: Kataifi dough should be slowly defrosted in the fridge, not outside. Keep it in its pack until you are ready to use it (because it dries easily).
2. Unroll the Kataifi dough from its plastic sleeve. When thawed, Kataifi resembles a thick mass which needs to be separated. You do that by pulling it with your hands to cut it.
3. Work the kataifi dough with your hands, pulling apart the hair-like strands.
4. Spread them out gently if they clump together until they become light and fluffy and they are not attached to each other.
5. Separate it in 15 equal long strips.
6. Cut the cheese into 15 equal sticks of about 15 gr. / 0.5 oz each.
7. Brush the bottom and sides of a rectangle Pyrex dish of 22 x 30 cm / 8.7 x 12 in. with a bit of the melted butter.
8. Take one long strip of kataifi dough, and fluff it again by pulling its strands.
9. Then place 1 stick of cheese in the middle followed by some seasoning of ground pepper.
10. Roll it up tightly, folding the sides inwards to cover the cheese, forming a small cylinder. Not hard, right?
11. Place it in the oven dish with the opening facing the bottom of the tray.
12. Repeat for the rest of the kataifi strips and cheese sticks. Place the kataifi rolls, the one next to the other, leaving no gaps between them.
13. When all kataifi rolls are placed in the dish, brush the rest of the melted butter on top.
14. Savoury Kataifi Rolls are now ready to be baked.
15. Tip: At this point, if you want to prepare ahead, you can freeze the rolls, covered, for up to a month!
B. Baking instructions:
16. Bake Kataifi rolls in a preheated oven FAN @180 ℃/350 ℉ for about 40'-45' or until they become a nice golden colour and they are crispy all around (depends on the oven).
17. Alternatively, you could fry the Kataifi rolls. In that case, they become even crunchier and the cheese turns into Saganaki.
18. When ready, remove Kataifi rolls from the oven.
19. While still very hot, place the baked rolls in a nice serving platter and drizzle the honey on top followed by the chopped pistachio nuts.
C. Serving suggestions:
Serve the scrumptious Kataifi Rolls immediately while they are still very hot.

Πώς γίνεται να φτιάξετε αυτό το εύκολο, υπέροχο, εντυπωσιακό ορεκτικό χρησιμοποιώντας μόνο 5 υλικά;
Και όμως γίνεται! Ακολουθήστε τη συνταγή μου για να δείτε όλες τις συμβουλές μου για το πώς να χειριστείτε το φύλλο Καταΐφι για να φτιάξετε ατομικά ρολάκια, τυλιγμένα με μια πλούσια γέμιση από τυρί, τέλεια ψημένα και στη συνέχεια πασπαλισμένα με μέλι και φιστίκια Αιγίνης.
Αξιολάτρευτα, λαχταριστά, τραγανά με γλυκό/αλμυρό συνδυασμό που φωνάζουν ότι μπορούν να είναι ένα υπέροχο ορεκτικό σε μπουφέ για πάρτι/γιορτινή περίοδο, καθώς μπορούν να ετοιμαστούν και νωρίτερα. Τι άλλο να θέλει κανείς;

ΥΛΙΚΑ:
• 250 γρ. / 9 oz Φύλλο Καταΐφι (Κανταΐφι, κατεψυγμένο και ξεπαγωμένο)
• ½ φλιτζάνι / 110 γρ. / 4 oz Βούτυρο, λιωμένο
• 225 γρ. / 8 oz τυρί Γραβιέρα ή Κεφαλογραβιέρα, κομμένο σε χοντρές λωρίδες-μπαστουνάκια (εναλλακ: τυρί Manchego)
• Περίπου 3 κ.σ. / 45 ml θυμαρίσιο Μέλι
• 30 γρ. / 1 oz Φιστίκια Αιγίνης, καβουρδισμένα, ψιλοκομμένα
• Φρεσκοτριμμένο Πιπέρι

ΜΕΘΟΔΟΣ:
Α. Ετοιμάστε τα ρολά Καταΐφι:
1. ΣΗΜΑΝΤΙΚΗ ΣΗΜΕΙΩΣΗ: Το φύλλο για Καταΐφι πρέπει να ξεπαγώσει αργά στο ψυγείο, και όχι έξω. Κρατήστε το στη συσκευασία του μέχρι να είστε έτοιμοι να το χρησιμοποιήσετε (γιατί στεγνώνει και ξεραίνεται εύκολα).
2. Ξετυλίξτε το Φύλλο Καταϊφιού από την πλαστική συσκευασία του. Όταν ξεπαγώσει, το φύλλο Καταΐφι μοιάζει με μια παχιά μάζα που πρέπει να διαχωριστεί. Αυτό το κάνετε, τραβώντας το με τα χέρια σας για να το κόψετε.
3. Ανοίξτε το Φύλλο με τα χέρια σας, τραβώντας το σαν να είναι μαλλιά που τα ξάνετε.
4. Απλώστε τα απαλά, εάν είναι ενωμένα, μέχρι να γίνουν ελαφριά και αφράτα και να μην είναι κολλημένα μεταξύ τους.
5. Χωρίστε τα σε 15 ίσες μακριές λωρίδες.
6. Κόψτε το τυρί σε 15 ίσα μπαστουνάκια των 15 γρ. περίπου / 0,5 oz το καθένα.
7. Βουρτσίστε με λίγο λιωμένο βούτυρο το κάτω μέρος και τα πλάγια ενός στενόμακρου ταψιού Pyrex 22 x 30 cm / 8,7 x 12 in.
8. Πάρτε μια μακριά λωρίδα φύλλο καταϊφιού και αφρατέψτε τη ξανά τραβώντας τα κομματάκια της.
9. Στη συνέχεια, βάλτε 1 μπαστουνάκι τυρί στη μέση και μετά καρυκέψτε με λίγο φρεσκοαλεσμένο πιπέρι.
10. Τυλίξτε το ρολό σφιχτά, διπλώνοντας τις πλευρές προς τα μέσα για να καλύψετε το τυρί, σχηματίζοντας έναν μικρό κύλινδρο. Δεν είναι δύσκολο, σωστά;
11. Τοποθετήστε στο ταψί φούρνου με το άνοιγμα να κοιτάζει προς το κάτω μέρος.
12. Επαναλάβετε για τις υπόλοιπες λωρίδες καταΐφι και τα μπαστουνάκια τυριού. Τοποθετήστε τα ρολά καταΐφι, το ένα δίπλα στο άλλο, χωρίς να αφήνετε κενά μεταξύ τους.
13. Μόλις μπουν όλα τα ρολά καταΐφι στο ταψί, αλείψτε από πάνω το υπόλοιπο λιωμένο βούτυρο.
14. Τα αλμυρά ρολά Καταΐφι είναι τώρα έτοιμα για ψήσιμο.
15. Συμβουλή: Σε αυτό το σημείο, αν θέλετε να τα ετοιμάσετε από πριν, μπορείτε να βάλετε τα ρολά στη κατάψυξη, σκεπασμένα, έως και ένα μήνα!
Β. Οδηγίες ψησίματος:
16. Ψήστε τα ρολά Καταΐφι σε προθερμασμένο φούρνο στον αέρα @180 ℃/350 ℉ για 40'-45' περίπου ή μέχρι να πάρουν ένα ωραίο χρυσαφί χρώμα και να γίνουν τραγανά γύρω-γύρω (εξαρτάται από τον φούρνο).
17. Εναλλακτικά, μπορείτε να τηγανίσετε τα Καταΐφάκια. Σε αυτή την περίπτωση γίνονται ακόμα πιο τραγανά και το τυρί γίνεται σαγανάκι.
18. Μόλις είναι έτοιμα, βγάλτε τα ρολά Καταΐφι από το φούρνο.
19. Όσο είναι ακόμα καυτά, βάλτε τα ψημένα ρολά σε μια ωραία πιατέλα και περιχύστε με το μέλι από πάνω και μετά με τα ψιλοκομμένα φιστίκια Αιγίνης.
Γ. Προτάσεις σερβιρίσματος:
Σερβίρετε τα λαχταριστά ρολά Καταΐφι αμέσως όσο είναι ακόμα πολύ ζεστά.

Τα Καταΐφάκια ρολά μπορούν να διατηρηθούν στο ψυγείο, σκεπασμένα, για έως και 1 εβδομάδα και μπορούν να καταναλωθούν ξαναζεσταμένα στο φούρνο για 10 λεπτά.

"Easter is an old pagan holiday"
Eh? Maybe some places?
In Scandinavia, where we tend to keep our old pagan traditions close and alive, (among other they never made us drop Yule), we don't have Easter.
We call it Påske/Påsk. Which comes from Latin "Paschae" which I believe have a Hebrew background.
There's not really any old holy day or pagan tradition that they could use in April, were Easter usually fall. Because late March and April are kind of waiting time.
In April you still risk freezing nights and snow and hail. But also warm days and sprouting plants.
It's hard to tell when to start plowing and seeding, but it will not be untill late April.
Because it's so hard to tell, the Spring celebration is First of May/ May Night/ Valburgis Night. There's a lot of old traditions around First of May. Some of them could lead to pregnancy.
But Easter? No. The Christians brought that one.
However as a Dane I celebrate Easterfood, because we make Easter beer and eat Easter eggs, lamb and pickled herring. If there is a food/drink tradition connected to some holy day, Danes will attend.
