A chronicle of my experience baking the Cruise cake

Spoiler alert: I ended up in my kitchen at 11:45 PM absolutely pelting the side of it with toasted coconut flakes

Started it at about 6:30 PM thinking “surely this will be plenty of time, why it will still be light outside when I finish it” the naive optimism, the hubris

Forgot several ingredients and had to run right back out of the house to the store

Drove home from the grocery store with an open cream cheese package and an open sour cream container in the passenger seat of my car; just literal loose dairy products in the passenger seat in my car facing the open air, trying to get them to come to room temperature faster

Got home w/o having to clean dairy products off the interior of my car <3

Video-called my bestie so she could bear witness to the imminent unhinged experience

Obviously I was wearing my Yankees cap

She got to see me spill cake flour on my leggings and seductively pretend to lick the very large knife I was chopping the white chocolate with (she did not like that)

Meanwhile she was telling me about weirdly specific graphic t-shirts and strawberry cow stuffed animals she was looking at online, and also trying to figure out what cybernetics is bc she’s been really into Warrior Nun??

For some reason I can’t remember I started singing that Macy Gray “I Try” song?

~I forgot to grease the Bundt pan~

Every other thing we said was this new inside joke we got- I told her about how the actual Doan’s Bakery cake retails for ~125 big ones, and we were like w h y, and so she proceeded to say, after basically anything I said (ex., “Don’t mind me measuring this with my hands…”), “That’s why it’s $125.”

Despite the dunce move of forgetting to grease the pan, God decided to do me a solid I guess bc the cake, by some miracle, still came out of the pan unscathed

Now recall the opening image of me absolutely throwing toasted coconut flakes at the side of the cake and they’re going everywhere and it’s almost midnight and I get up at 5:45 the next morning eeeheeee

Notwithstanding the tribulations and errors, 10/10 one of the best things I’ve ever baked, and ya girl has made a lot of things. Time-consuming but not actually very hard, especially when your deranged bestie emotionally supports you via a five-hour video call so make sure you do that if you undertake the venture

Just pls, make sure the ingredients are room temperature, grease the pan, don't overmix the batter, and if you're as messy and chaotic as me, maybe consider investing in some serial killer-type plastic tarps
