I'm doing meal prepping for a month starting today. I already cooked for the entire week and will consume 700-1000 calories everyday. The last time I did this for like two weeks I've lost about 5kg and didn't gain it back. It is helping me to start restricting again and prevents binges. I also eat more balanced when I prep my meals.
Because my scale was broken and I needed a new one I waited till it was here.
My start weight for November and the prepping in general is 104,8kg (231lbs) and I am hoping to weight about 98kg (216lbs) by the end of the month.

Avocado, Bacon, & Egg Toast With Hot Honey 🍯 🥓🥑
Ingredients:
For the Toast:
2 slices thick-cut bread
1 tablespoon butter, softened
For the Toppings:
2 eggs
4 slices bacon, cooked and crumbled
1 ripe avocado, sliced
Hot honey
Fresh parsley, chopped
Instructions:
Toast the Bread: Toast the bread to your desired level of crispiness.
Spread Butter: Spread the softened butter on the toasted bread.
Layer the Toppings: Layer the avocado slices, cooked bacon, and fried eggs on the toast.
Drizzle Honey: Drizzle hot honey over the top.
Garnish: Garnish with fresh parsley.
Tips:
For a spicier dish, use a hotter honey or add some red pepper flakes to the eggs.
You can use any type of bread you like, such as sourdough or ciabatta.
Serve with a side of fruit or yogurt.

Fresh Avocado & Cucumber Salad Recipe
This vibrant and refreshing salad is packed with crunchy cucumbers, creamy avocado, juicy cherry tomatoes, and a zesty dressing! 🥒🍅✨
✅ Ingredients:
✔️ Salad Base:
1 large cucumber (diced) 🥒
1 avocado (cubed) 🥑
1 cup cherry tomatoes (halved) 🍅
1/4 red onion (thinly sliced) 🧅
2 tbsp fresh parsley (chopped) 🌿
✔️ Dressing:
2 tbsp olive oil 🫒
1 tbsp lemon juice 🍋
1 tsp balsamic vinegar
1 tsp dried oregano 🌿
1/2 tsp salt & black pepper 🧂
👨🍳 Instructions:
1️⃣ Chop the veggies – Dice the cucumber, slice the avocado, halve the cherry tomatoes, and thinly slice the red onion.
2️⃣ Mix the ingredients – In a large bowl, combine the cucumber, avocado, tomatoes, red onion, and parsley.
3️⃣ Make the dressing – In a small bowl, whisk together olive oil, lemon juice, balsamic vinegar, oregano, salt, and black pepper.
4️⃣ Toss & serve – Drizzle the dressing over the salad, toss gently, and enjoy fresh!

Buffalo Chopped Chicken Salad 🔥✨

INGREDIENTS:
3 chicken breasts (small & cut into nuggets)
1 cup rice crumbs
2 eggs, whisked
1/2 cup buffalo sauce
1 tsp garlic powder
1/2 tsp sea salt & pepper
2 1/2 cup green leaf lettuce
1/2 cup cucumber, chopped
1/2 cup tomatoes, chopped
1/2 avocado
optional: cilantro, red pepper flakes
INSTRUCTIONS:
Chop up chicken breasts into nugget pieces. Make sure to pat dry with paper towel.
Make two bowls: one with two eggs whisked and another with rice crumbs, garlic powder, sea salt & pepper.
Take one nugget and roll in egg mixture and then coat compltely with rice crumbs. Set aside and make sure to do with all pieces.
Place in the air fryer at 350 degrees for 12-14 minutes. Flip nuggets around half way through.
Once done, pour nuggets into a bowl and mix with buffalo sauce to completly coat. Place back in the air fryer at 370 for 2 minutes.
Prepare salad by chopping up greens, cucumber and tomatoes.
Prepare bowl by adding greens, cucumber and tomatoes and chopping up together. Add avocado, buffalo chicken and cilantro on top...Enjoy 🙌

The Perfect Avocado Toast

There are so many different ways to spice up your basic toast with avocado, but this is and will always be my favorite! Refreshing with a hint of spice 🍋🟩🌶️
INGREDIENTS
1 ripe avocado
2 slices sourdough bread
1 tablespoon olive oil
1 teaspoon sumac
1 teaspoon sesame seeds
Salt, to taste
Red chili flakes, to taste
Fresh dill, for garnish
Fresh cilantro, for garnish
Lime slices, for garnish
LET’S START COOKING
Toast the Bread:
Preheat your toaster or oven and toast the sourdough bread slices until they are golden brown and crispy.
Prepare the Avocado:
Cut the avocado in half, remove the pit, and carefully slice the flesh into thin, even slices.
Assemble the Toast:
Arrange the avocado slices neatly over the toasted sourdough slices.
Add Toppings:
Sprinkle the avocado slices with salt, sumac, sesame seeds, and red chili flakes to taste.
Drizzle a little olive oil over the top.
Garnish:
Garnish with fresh dill and cilantro.
Serve with lime slices on the side.
Serve:
Enjoy your avocado toast immediately while the bread is still warm and crispy.
Feel free to adjust the toppings according to your taste preferences. It’s SO important to use the right bread, this will make all the flavour difference. Choose your favorite bread, for me this will always be sourdough bread.

Chili Lime Shrimp Wraps 🌞🌶🥑
1.5 lb. raw shrimp, peeled and deveined
2 tsp ground cumin
1 tsp smoked paprika
2 cloves fresh garlic, minced
2 Tbsp avocado oil, or extra-virgin olive oil, divided in half
sea salt and fresh ground black pepper
freshly ground black pepper
2 fresh limes
a handful of fresh cilantro leaves, chopped
8-10 romaine or butter lettuce leaves, rinsed and pat dried
1 large avocado, diced
1 red chili, thinly sliced
In a large glass bowl, add shrimp, all seasonings, juice of 1 lime, garlic, and 1 Tablespoon of oil.
Season with sea salt and pepper to your taste, then stir well to coat.
If time allows, refrigerate/marinate for 15 minutes or so, covered.
Heat oil in a large skillet over medium heat. Add shrimp and cook until just pink, about 3-4 minutes
In a very large bowl add cooked shrimp, diced avocado, cilantro, chili slices, juice of 1 lime and remaining oil.
Gently stir to combine.
Taste test and season with a pinch of sea salt and pepper of needed.
Add spoonfuls of the avocado shrimp mixture lettuce leaves as shown, and enjoy. ❤

Perfect Chocolate 🍫 Cookies 🍪 Replacing Butter 🧈 With Avocado 🥑
Avocados 🥑 are so incredible and can be used in so many ways. Replacing butter 🧈 with avocados 🥑 when it comes to baking is dope. I could still smell the avocados 🥑 in the cookie 🍪 batter, but once the cookies were baked and done, I could not smell or taste the avocados. 🥑Using avocados, I am adding some healthy fats and fiber to go along with something I love.
I used spelt flour, making the cookies dense but still soft and delicious. I can taste the date syrup, but I dont mind. These cookies 🍪 are very soft and not too sweet, with a nice balance of flavors. I love vegan butter 🧈 in recipes, but this is a nice change-up. If you try this and want it to be sweeter, replace the coconut sugar with brown sugar. If you want the cookies to be lighter, use regular flour. These are perfect, just as they are to me.

Ingredients:
2 1/4 cups Spelt Flour
1/2 tsp baking soda
1 tsp of cornstarch
1 cup about 2 1/2 mashed avocados 🥑
1/2 cup date syrup
2 flaxseed eggs (2 Tbsp of flaxseed + 6 Tbsp of water). Allow setting for 5 min before using.
2 tsp pure vanilla extract
1/2 cup coconut sugar 🥥
1/2 brown sugar
Salt to your taste
2 cups Vegan Chocolate Chips 🍫
Step 1. Mix spelt flour, baking soda, salt, and cornstarch in a bowl and place to the side.
Step 2. Add avocados, date syrup, vanilla extract, flaxseed eggs, brown sugar, and coconut sugar to a blender. Blend until smooth.
Step 3. Mix dry with wet. Add chocolate chips and mix.
