Egg-Free Turkey Burgers
In Percy Bysshe Shelley’s poem, Ode to the West Wind, he asks “If Winter Comes, can Spring be far behind?”
I think of this every year as soon as the weather warms up and the days get longer. In no time I forget the cold, snow and gray skies of just a few short months before.
I take the winter cover off the grill, clean the grates and get ready for months of quick, easy, outdoor cooking.
I light the fire.
It’s burger time!
Sometimes turkey burger time! Like this eggless version that’s so incredibly tender and flavorful and best served with mashed avocado but, hey, if you’re like my husband and insist on ketchup that’s ok too.
It’s a good bet for Father’s Day. Labor Day too.
EGG-FREE TURKEY BURGERS WITH MAYO AND MUSTARD
1 ripe avocado, peeled and pitted
1 teaspoon lemon juice
20-24 ounces ground turkey
1 small onion, grated
1 large clove garlic finely chopped
2 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/4 cup dry bread crumbs, seasoned or plain
2 tablespoons vegetable oil, optional
4 slices lightly toasted bread
2 tomatoes, sliced
salt and freshly ground black pepper to taste
Preheat an putdoor grill. Mash the avocado with the lemon juice, cover and set aside. Place the turkey, onion, garlic, mayonnaise, mustard and bread crumbs in a bowl and mix to combine the ingredients evenly. Shape the mixture into 4 burger patties about 3/4-inch thick. Grill the burgers for about 5 minutes per side OR heat the vegetable oil in a sauté pan over medium heat and cook the burgers for about 5 minutes per side or until crispy and cooked through. While the burgers are cooking, toast the bread. Place 4 slices of toasted bread on each of four plates. Spread equal amounts of the avocado on each slice. Place tomato slices over the bread. Top with the burgers. Season with salt and pepper to taste

Happy Walpurgisnacht!
The veil between the worlds is thin, and witch’s night has come again!
If I had a coven, I’d love to build a tradition of gathering for a barbecue, but alas, it’s only me. To celebrate this year, I fired up the grill, because it’s definitely a holiday when food should be cooked over a fire.
I made a lovely salad with spring greens, radish sprouts, Easter egg radishes, cucumbers, and herbed yogurt dressing. I might add some nuts or seeds and maybe some feta some other time?

Anyway, I grilled honey bourbon flanken ribs, bok choy, and zucchini, and I made oat cakes and roasted strawberry cheesecake.

If I do this again, I’ll probably need to replace my poor grill. It’s served its time, I’m afraid. And I’d probably approach the bok choy a little differently. The flavor was great, though.

Holy hell, this cheesecake is a thing of beauty. It’s a new favorite for sure.

You know what would be nice though?
Going out in the cold winter. Either alone or not. With a mini grill. Cooking meats and/or veggies away as you're keeping warm with the little fire you have. Using the spices and herbs you have from your own home to bring such flavor to your tongue.
Yeah. I'd like that.

Mexican Street Corn (Elote) Recipe
Ingredients:
4 ears of corn, husked
1/4 cup mayonnaise
1/4 cup sour cream or Mexican crema
1/2 cup crumbled cotija cheese (or feta as a substitute)
1 tablespoon chili powder
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Salt and pepper to taste
2 tablespoons melted butter (optional)
Instructions:
The image shows perfectly charred and seasoned corn on the cob, topped with crumbled cotija cheese, chili powder, and a squeeze of lime. Here's a recipe to recreate this delicious dish:

While the corn is grilling, mix together the mayonnaise and sour cream (or Mexican crema) in a small bowl.
In another small bowl, combine the chili powder with a pinch of salt and pepper.
Have the crumbled cotija cheese and chopped cilantro ready.
Assemble the Elote:
Once the corn is nicely charred, remove it from the grill.
Brush each ear of corn with melted butter if using.
Generously spread the mayonnaise and sour cream mixture over each ear of corn.
Sprinkle the chili powder mixture over the corn.
Roll the corn in the crumbled cotija cheese until well-coated.
