Mason Jar Instant Noodle Soup - 229 kcal/8g protein
Servings: 1 serving. 229 kcal / 8g protein
Ingredients
1 1/2 tsp. vegetable bouillon base (we used Better Than Bouillon)
1/4 tsp. grated fresh ginger
1 tbsp. warm water
1 bundle (about 11/2 ounces) instant rice vermicelli
1/4 c. kimchi, roughly chopped
1/4 c. shelled edamame, thawed if frozen
1 c. baby spinach
2 cremini mushrooms, very thinly sliced
1 scallion, thinly sliced
2 1/2 c. boiling water
Instructions
In 32-ounce wide-mouth mason jar or other heatproof jar, combine bouillon base and ginger. Stir in warm water. Add noodles and carefully cut in half with kitchen shears. Add to jar in following order: kimchi, edamame, spinach, mushrooms, and scallion; screw on lid. Refrigerate overnight if desired.
If refrigerated, let jar sit 20 minutes at room temperature. When ready to serve, pour boiling water over ingredients and cover with lid. Let sit until noodles are tender, 3 to 4 minutes, then stir to combine.
Pump Up the Protein: Add 1/2 cup shredded rotisserie chicken and replace the vegetable bouillon base with chicken bouillon base, or pop in 6 to 8 frozen cooked small shrimp (they’ll thaw overnight in the refrigerator).

I feel good about these choices- cucumber, eggs, buffalo ranch salad, shrimp alfredo, turkey sausage, strawberries n yogurt.

自家製野菜で皿うどん
【材料】
・細揚げ麺&粉末スープ(マックスバリュー) ・ヤーコン(自家製) ・ニンジン(自家製) ・野良坊菜(自家製) ・シイタケ(自宅横の森で採取) ・モヤシ(ドラッグストア) ・ソーセージ(業務スーパー) ・キャノーラ油(ドラッグストア) ・水 ・浅葱(自家製) ・練りからし(業務スーパー)
【調理】
刻んだ材料を硬そうな物からフライパンに投入し炒めていきます。
そこそこ火が通ったら、水溶きした粉末スープを投入します。炒め過ぎないうちにやるのがコツです。
スープが半透明になり、とろみがついたら火を止めます。
皿に置いた揚げ麺にそれをかけたら完成。好みで練りからしやウスターソース、酢などを加えます。今回は自家製浅葱を刻んで散らしました。
【メモ】
・皿うどんは長崎の郷土料理として知られるが、長崎チャンポンを出前用にアレンジした物がルーツらしい。揚げ麺は細麺タイプと太麺タイプがあり、普段はガッツリ派の私だが意外にも細麺タイプが好み。餡の掛かり方や時間経過で麺の食感がパリパリだったりしんなりしたり一皿で両方楽しめるのがいい。 ・市販の揚げ麺を使うと調理が簡単なので、私の所ではいつもストックしておいて、忙しい時の昼食でよく利用する。揚げ麺は比較的安価で入手���易だし、自家製野菜を多用すれば低コストでボリュームのある食事となる。 ・ラーメンを何度か食べたことがある外国人ゲストも、皿うどんは未知のことが多いので、一緒に調理して食べる機会を与えると良い経験となる。 ・時季によっては自家製のキャベツやタマネギ、自然採取のキクラゲやタラの芽なども使うが、懐に余裕のある人は豚バラ肉、イカやエビ、鳴門巻きなどを使うとさらに豪華で美味しくなることだろう。

Here is a simple recipe for a detox soup:
Ingredients:
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, sliced
- 1 celery stalk, sliced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup of chopped kale or spinach
- 4 cups of vegetable broth
- 1 teaspoon of turmeric
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions:
1. Heat a large pot over medium heat and add a tablespoon of olive oil.
2. Add the diced onion and minced garlic to the pot and sauté until they become translucent.
3. Add the sliced carrot, celery, bell pepper, and zucchini to the pot, and cook for about 5 minutes or until slightly tender.
4. Add the chopped kale or spinach to the pot and stir until wilted.
5. Pour in the vegetable broth and bring the mixture to a boil.
6. Reduce the heat to low, and add the turmeric, cumin, salt, and pepper. Stir well to combine.
7. Simmer the soup for about 15-20 minutes until all the vegetables are tender.
8. Remove the pot from the heat and let the soup cool slightly.
9. Using an immersion blender or regular blender, puree the soup until smooth.
10. Return the soup to the pot and reheat if necessary.
11. Serve the detox soup hot, garnished with fresh herbs if desired.
This soup is packed with nutritious vegetables and spices that can help support detoxification in the body.

Thriving and by thriving I mean not bc on the one hand I finally did the meal prepping (read : cooking an entire recipe from scratch to eat as leftovers for lunch this week) I’ve been meaning to do for several days but I did it from 1-2am on a Tuesday night :/ but I did it with the support of my belovèd jcs so

Stir fry again last night lol with beef . I velveted my beef first it was chunks of stew meat not tender at all. Corn starch pinch of baking soda and soy sauce. Marinate . Then shallow fried.
Veggies go in same pan after removing meat. Carrots,celery, onion, mushroom, cabbage, chopped garlic,oyster sauce, soy sauce, grated ginger, sesame oil
And then whatever noodles you prefer. I used rice noodles.

Creamy Smoked Salmon and Leek Pasta
These Creamy Smoked Salmon and Leek Pasta make a hearty and tasty meal, particularly comforting after a road trip on a rather cold day! Happy Saturday!
Ingredients (serves 2):
2 cups short (whole-wheat) pasta (like fusilli or penne)
1 tablespoon unsalted butter
1/2 tablespoon olive oil
a medium Garden Leek
1/2 teaspoon dried dill
1 1/2 lemons
1/2 cup double cream
1/2 teaspoon freshly cracked black pepper
60 grams/2 ounces Smoked Salmon
Stir fusilli into a large pot of salted boiling water, and cook, according to package’s directions, generally 9 to 11 minutes until al dente.
Thoroughly rinse Garden Leek under cold water.
In a large, deep skillet, melt butter with olive oil over medium-high heat.
Thinly slice Garden Leek. Once the butter is just foaming, add Leek the skillet, and cook, about 3 minutes until softened. Season with dill; cook, 1 minute.
Thoroughly squeeze in the juice of the lemons, and cook, a couple of minutes more.
Finally stir in the double cream, and simmer until slightly reduced. Season with black pepper.
Once the pasta is cooked, drain quickly, saving about 1/3 cup of its starchy cooking water. Add pasta to the Leek sauce, gradually stirring in cooking water, cooking until it is beautifully coated.
Cut Smoked Salmon into chunks, and stir into the pasta.
Serve Creamy Smoked Salmon and Leek Pasta immediately, with a glass of chilled dry white wine, like Chablis, if you're in Burgundy!
