Ube Coconut Mochi Cookies

2 tbsp egg replacer 1/3 cup coconut milk
2 1/2 cups sweet rice flour (aka; glutinous rice flour) 2 tbsp purple sweet potato powder 2 1/2 tsp baking powder 1/2 tsp sea salt
1 cup vegan butter, softened 1 cup cane sugar 1/2 cup coconut sugar
2 tsp ube extract 1 tsp pure vanilla extract
1 cup coconut flakes 1/2 cup toasted black sesame seeds
In a small bowl, whisk together the egg replacer and coconut milk. Set aside.
In a large glass mixing bowl, sift together the; sweet rice flour, sweet potato powder, baking powder, and sea salt.
In a medium-sized mixing bowl cream together the vegan butter, cane sugar and coconut sugar. Add the ube extract and vanilla extract along with the "egg" mixture. Mix well.
Combine the wet ingredients with the dry ingredients. Fold in the coconut flakes and sesame seeds. Place batter in fridge for about 30 minutes.
Preheat oven to 350 degrees F. Grease or line a large cookie sheet. Roll cold batter into walnut-sized balls. Place balls on prepared cookie sheet and press down gently with the back of a fork.
Bake in preheated oven for 12 minutes. Allow to cool on cookie sheet for several minutes before transferring to a cooling rack.
Store in air-tight container. (Freezes nicely.)
Yields; 3 dozen cookies

Cafe Birch Garden
*Hidden gem alert* :P
Went to an area in Edm I've never been to recently - Parkallen. It's like close-ish to South Campus Transit Station. There is a small residential strip mall tucked in a quiet neighbourhood. Has a tattoo place, 2 cafes, a daycare, acupuncture(?) place, a vegan bakery & an ice cream shop. & also a dental clinic as well but I didn't look too closely haha. It literally has <10 businesses.
One of which is a cafe called Birch Garden Cafe. It is a gift shop, floral shop, & cafe all in one, with a little patio in front of their store.
Let's head in.
The view once you enter.
The cafe was really small, with indoor capacity for like 10 ppl.
On the left are some pots/plants for sale, as well as for some seasonal stuff (Oct = Halloween), & coffee beans from local roasters.
By their counter, there are some mini pumpkin decor & flowers. They have some doughnuts & cookies for sale but very limited selection. As for their menu, they have your regular cafe items, in addition to paninis & some specialty lattes like saffron & ube, which I thought was interesting.
To the right, there is a large wall-filling shelf that held greeting cards of all sorts, vases, jewelry & more plants. They have also a freezer that stored SweetStix (fruit-flavoured popsicles).
In addition to the front patio & the indoor dine-in space, they have a back patio, which was soooooo big compared to the rest of the cafe. It was like longer than the cafe + front patio. They probably don't have this service but it'd be fun to rent out for a party.
Here's the view looking back at the front entrance. The cafe, overall, has a very rural vibe. I personally wasn't a fan of the dual flooring style. Looks weird to me.

Times when I decide to try something new.. . & then it fails me =(
This was so sweet & not tiramisu-like. If I were to do sweet coffee, I might as well get Vietnamese iced coffee.
The environment is nice though~

All vegan, but still delicious
Peanut butter brownies. My hubby requests them on his birthday as opposed to cake.
Zucchini bread — time consuming, but worth it.
Banana bread — always reminds me of my grandma.
Ube (purple yam) crackle cookies.
Any cookie in general — always have cookie dough in the fridge.

Made my return to @beyondsushinyc! (All vegan sushi) 🍱 I haven’t been able to stop thinking about it since my last visit. Soooo good! Shared these with a friend.

Ube Halaya Empanadas

Dough
4 cups all-purpose flour 2 tbsp cane sugar 1 tsp sea salt
1 cup cold vegan butter
1 cup cold water
Halaya (ube jam)
In a large glass mixing bowl sift together the flour, sugar and salt.
Cut in the cold vegan butter. Using hands work in the butter until it is well-combined.
Pour in the cold water. Stir well. Knead for several minutes.
Form a large ball. Wrap ball in plastic and chill for at least an hour.
Assembly
Preheat oven to 425 degrees F. Line two large cookie sheest with parchment paper.
Remove dough from fridge and give it another knead. Roll dough out onto a floured surface. Cut dough into circles, about 4 inches across. Place circles on prepared baking sheet.
Scoop one generous tablespoon of ube halaya on top of each circle. Lightly wet the edges of each circle with a touch of water. Fold dough over top of filling and squeeze the edges together. Using the back of a fork, press edges down to seal fully. (Or use an empanada press.)
Poke a few holes on top of each empanada. Brush each empanada with a bit of non-dairy milk. Bake in preheated oven for 15 minutes.
Allow empanadas to cool for a few minutes before serving.
Yields; about 2 dozen empanadas.

INTRODUCING SCOOPS’ WINTER MENU.
Available from December 15th to February 5th (original menu has been reduced for the special event).
Two sheets of coupons are mailed to the citizens of Catalina, more are available upon request at the ice cream store.
Hot Chocolate Floats consist of a mug of hot chocolate from a powder mix made by Ethan and Jasmine as a collaboration between Scoops and Catalina Coffee & Cookie Co. with a scoop of personalized ice cream on top, sprinkled with cocoa powder, cinnamon, sprinkles or various other toppings. The drinks can only be eaten in store. The addition of the Hot Chocolate Floats is a suggestion of Aaron.
Katy Perry’s California Dream: milk chocolate powder mix with vanilla and strawberry swirl.
Britney’s One More Time: semi sweet chocolate powder and coffee mix with vanilla ice cream.
Winter Wonderland: milk chocolate powder mix with vanilla ice cream and white chocolate chip toppings.
Minty Party: dark chocolate powder mix with mint ice cream.
Cocoa Bombs include: White, Milk or Dark chocolate shell with milk chocolate powder mix and small marshmallows inside (they can be sold in a pack of two to make at home).
The Special Treats include various desserts with unique flavours and twists.
Icy Rosé & Frozen Berries: rosé shaved ice on top of two scoops of strawberry sorbet (inspired by Georgina).
Ube Ice Cream: ube flavoured ice cream sprinkled with various shades and sizes of purple sprinkles (inspired by Lex).
Candy Cane Explosion: vanilla or chocolate Ice cream topped with bits of broken candy canes.
Snowy Mochis: ice cream mochis available in three flavours, vanilla bean, chocolate or mango.
Strawberry Jam Logs: a slice of ice cream log cake filled rolled and filled with strawberry jam.
Frosty Turkish Delights: various imported Turkish delights (inspired by Jasmine’s family origins).
The rest of the special menu include familiar desserts perfect for the Holidays. They can be eaten at the store, carried home for a sweet treat or asked for an extra and have them wrapped for a special gift.
Gingerbread cookies of various shapes, available without frosting for a vegan option.
Brownie Bites consist of bite sized squares of brownie that are available as a vegan option as well.
Sugar Cookies with various colours and sprinkles that are Holiday inspired.
Pecan Pralines are imported from a bakery in Louisiana.
