Ube Coconut Mochi Cookies

2 tbsp egg replacer 1/3 cup coconut milk
2 1/2 cups sweet rice flour (aka; glutinous rice flour) 2 tbsp purple sweet potato powder 2 1/2 tsp baking powder 1/2 tsp sea salt
1 cup vegan butter, softened 1 cup cane sugar 1/2 cup coconut sugar
2 tsp ube extract 1 tsp pure vanilla extract
1 cup coconut flakes 1/2 cup toasted black sesame seeds
In a small bowl, whisk together the egg replacer and coconut milk. Set aside.
In a large glass mixing bowl, sift together the; sweet rice flour, sweet potato powder, baking powder, and sea salt.
In a medium-sized mixing bowl cream together the vegan butter, cane sugar and coconut sugar. Add the ube extract and vanilla extract along with the "egg" mixture. Mix well.
Combine the wet ingredients with the dry ingredients. Fold in the coconut flakes and sesame seeds. Place batter in fridge for about 30 minutes.
Preheat oven to 350 degrees F. Grease or line a large cookie sheet. Roll cold batter into walnut-sized balls. Place balls on prepared cookie sheet and press down gently with the back of a fork.
Bake in preheated oven for 12 minutes. Allow to cool on cookie sheet for several minutes before transferring to a cooling rack.
Store in air-tight container. (Freezes nicely.)
Yields; 3 dozen cookies

Love Hong Kong style pineapple buns? Pineapple King Bakery has the widest variety of pineapple buns and pineapple puffs. An original pineapple bun is $2.75. Other pineapple buns have guava, salted egg, pandan coconut, chocolate marshmallow, custard, red bean ube, durian, sesame, matcha mochi, BBQ pork, etc. The buns are split open and the puffs are injected with filling. They also have egg tarts, baked buns, pineapple puffs, and drinks. I thought I saw mini pineapple buns too? And Pineapple King merch, including cute caps and canvas tote bags.
Gold butter Pineapple bun ($4.10): Served warm with a thick pat of Kerrygold salted butter. The bun is medium-sized with a “pineapple” cookie top (no actual pineapple in the bun). I’ve had bigger buns served with more butter. There’s a cheaper option with unbranded butter. It’s an excellent bun – soft, light, fluffy, with a crusty top that’s less sweet than usual (compared to other pineapple buns).
Hot milk tea, less sweet ($4.60): Still seemed quite sweet. Milky, strong tea flavor.
I bought buns for other people and they were all WARM. They’re super fresh.
There are two lines: self-ordering on the left, ordering from the cashier on the right. Online ordering is coming soon. There is no interior that’s accessible to customers, but they have some outdoor benches and tables. The place is popular. Also, it doesn’t open early, so plan to have an afternoon pineapple bun snack.
They’ll call your order number when it’s ready. It does take awhile and there’s usually a line. Closed on Tuesdays.

🌸 celebrating Mom all month long 🎂 • • • fun fact - both my parents have their bdays in the same month as Mother’s Day & Father’s Day, so we pretty much go all out in May & June 🥳 • • • • only the best for Momma Ha! Dad always go HAM on the grill 🥩 We celebrated my moms bday with regent strawberry fruit cake, mango sticky rice, Wagyu Tri tip, artichoke with aioli & other veggies 🥥 My brother made pandan coconut & mango crepes for breakfast 🤤 • • • for Mother’s Day my Dad made lamb, lobster & steak on the grill. Jarred made some chocolate butter mochi & we enjoyed Milk Bar Cookies for dessert 🍪 • • • • this quarantine has been difficult, but one thing we are thankful for is good health & family ☀️ Weather has been nice & we got to enjoy some good quality time outdoors. I think that I’ve been avoiding the SomiSomi in Little Tokyo out of respect for the Pinkberry that they replaced. However, it was nice to see Pinkberry’s soft serve machines are still there and the décor and layout still remind me of Pinkberry. The pebble floors, wood benches, and counter are leftover from Pinkberry and the exterior design still looks the same, only they changed the color and signs.
SomiSomi specializes in taiyaki ice cream (ah-boong). You pick your soft serve ice cream flavor (matcha, cookies n’ cream, ube, milk, cookie butter, red bean, or 2 flavor swirl), the filling (red bean, taro, Nutella, or custard), and toppings for $6.95. The price includes toppings (sprinkles, toasted coconut, Biscoff crumble, cinnamon pebbles, Cocoa Pebbles, Fruity Pebbles, Oreo crumbs or graham cracker crumbs. You can opt to get the soft serve in a cup ($4.50). You can also get taiyaki (fish-shaped filled waffles) and drinks.
The strange thing about the swirls is that you can’t get any combination of flavors. They’ll only let you get two flavors if they’re side by side in the same machine. I also noticed that the soft serve is lactose-free, except for the milk flavor.
They were making the taiyaki cones to order. The cones need to cool a little before they add soft serve.
* Red bean soft serve, red bean filling inside the taiyaki, Biscoff crumble: You get a lot for $6.95, like two desserts – the taiyaki with filling and a lot of soft serve ice cream. The waffle was really good. It’s crispy on the outside but has a wonderful chewiness to it too (like a mochi waffle). It didn’t get soggy and the red bean filling was chunky and not too sweet. The ice cream was super thick, creamy, smooth, and dense. I liked how it wasn’t that sweet. The red flavor was very strong and tasted natural.
They have super cute SomiSomi spoons. I want to collect them all.

Fro-yo girl here. I’m slowly making my way to every Yogurtland in SoCal and there are so many of them. Yogurtland Norwalk opened in 2014 in a strip mall with easy parking. Like most Yogurtland locations, they offer 16 self-serve flavors a day, sauces, fruit purees, and toppings. It’s 53 cents an ounce. Toppings included candies, cookies, cereal, nuts, sprinkles, cheesecake, fruit, popping boba, yogurt pretzels, brownies, chocolate chips, mochi, etc. I noticed they still had Halloween toppings in January. Also, they only had two kinds of fresh fruit, strawberries and blueberries.
The Christmas tree was decorated for Valentine’s Day. Odd. Service was friendly and the place was clean.
Froyo flavors of the day:
Hibiscus pear tart
Fresh strawberry
Citrus C sorbet
Matcha green tea
Plain tart: good, tangy, sweet aftertaste, a little icier than usual
Cheesecake
Caramel macchiato: I haven’t seen this flavor in years and I was excited to have it again, since I used to like it. However, the texture was icier than it was supposed to be

Like your typical Yogurtland location, they have a green tiled wall, LCD flatscreen monitors and a restroom. Sign up for Real Rewards to collect points and earn free froyo. Take it to go to avoid paying sales tax. Police, military, veterans, EMS, and firemen get 25% off. The door handles were giant Yogurtland spoons. Cute.

Fro-yo girl here. This is not your regular Yogurtland. It’s located at the Westfield Century City shopping center and it’s 93 cents an ounce. That isn’t a typo. I didn’t think they’d have customers, but I’ve seen people eating there on multiple occasions. They must really want froyo.
The location is small with only 10 self-serve flavors and toppings. The toppings bar has some unusual toppings that I haven’t seen at other Yogurtland locations – like full size Twinkies and Hostess Cupcakes, mini cinnamon rolls, full size Twix bars, Snickers, Pop Tarts, etc. They also had fruit, nuts, popping boba, cheesecake, brownies, candy, cereal, cookies, cookie dough, mochi, coconut, chocolate chips, sprinkles, etc.
If you want samples, you can’t get them yourself.
