Simple Samiya Upma recipe
Ingredients:
1 cup vermicelli (seviyan/semiya)
1 small onion, finely chopped
1 small tomato, finely chopped
1 green chili, finely chopped
1/2-inch piece of ginger, grated
1/4 cup green peas (frozen or fresh)
1/4 cup diced carrots
1/4 cup diced bell peppers (optional)
1/4 teaspoon mustard seeds
1/4 teaspoon cumin seeds
1 tablespoon oil or ghee (clarified butter)
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder (optional)
1 tablespoon chopped coriander leaves (cilantro)
Salt to taste
Lemon juice (optional)

Upma Recipe is one of the most common Indian breakfast recipe. It is a simple and a delectable traditional South Indian breakfast. I like about dishes from South is, it is easy to trace that dish from its name for example "Upma". The primary word is "Uppu" which means salt and "Maa", "Mavvu", "Mavvi" all these words are used for refined flour and whole wheat flour.
Salted flour means "Upma". Some places in Tamil Nadu it is still called as "Uppumavu". In all the terms whether it is "Upma", "Uppitu", "Uppeet", "Uppumavu", "Upp" which means "Salt" which is very important in it. So that people get to know that it looks like "Rava" but it is Salty.

Ingredients
1/2 cup Finger Millets Flour
1/2 cup Bombay Rava
1 Onion
3 Green Chilies
2 Tomatoes
1 Carrots
1 Potato
1/4 cup Capsicum
1/2 cup Curry Leaves
1/2 cup Coriander Leaves
1/2 cup Green Peas
1/2 tsp Mustard Seeds
1/2 tsp Cumin Seeds
Cashewnuts
1 1/2 tsp Salt
Clarified Butter (ghee)
Oil
Instructions
Heat 1 tsp clarified butter (ghee) and 1 tbsp oil in a pan
Add 1/2 tsp mustard seeds and 1/2 tsp cumin seeds
Next, add a few cashew nuts and fry (This step is optional)
Now, add 1 tsp chopped ginger, and 1 diced onion and fry for a minute
Then add 3 diced green chilies and fry
Add 1/2 cup curry leaves along with 1 chopped carrot, 1 diced potato, 1/4 cup capsicum, and 1/4 cup green peas, and mix
Close the lid and cook for a minute
Next, add 2 diced tomatoes and cook till they become soft
Now, add 1/2 cup upma rava and fry for a couple of minutes till you get a nice aroma
Then, add 1/2 cup finger millets flour and fry for 2-3 minutes on low flame
Add 1 1/2 tsp salt and mix
We have to add water in a 1:2 ratio, so add 2 cups water and mix so that no lumps are formed. Make sure to add water on low flame only
Next, add 1 tbsp clarified butter (ghee) and cook for a couple of minutes
Sprinkle some coriander leaves and close the lid
Cut off the lid and let it sit for 3-4 minutes
Serve hot!
