North Park Freestyle Collider Batch 2 Triple Dry-Hopped Hazy Triple IPA (Picked up at Windmill Farms). A 4 of 4. Just bursting with a ton of wild hop notes -- berries, stone fruit, pineapple, and some white-wine like notes, too. Much the same in the medium body with a nice amount of creaminess to it and some light bitterness alongside the 10% bite which manages to stay reasonably well-hidden.

On va passer une excellente fin de semaine avec toute ces bombes juteuses :
Brasserie du Bas-Canada
Entrelacs- India Pale Ale aux Citra, Hallertau Blanc, Nelson Sauvin & Amarillo
Voici Entrelacs, nous avons utilisé une très grosse quantité d'avoine pour brasser cette IPA. Bien sèche et outrageuse houblonnée, vous y trouverez des notes de fruits tropicaux, de résine, de raisin sur une base bien "dank".
- Florallusion- Pale Ale aux houblons Nelson Sauvin, Citra & Motueka
Hyper aromatique, tropicale, Florallusion est bien houblonnée et à la fois très (trop?) facile à boire. Florallusion est une Pale Ale inspirée de Vertige, notre Triple IPA brassée avec les houblons Nelson Sauvin, Citra & Motueka. En effet, nous avons utilisé ces houblons dans une proportion identique pour cette magnifique Pale Ale.
- Portail- DDH India Pale Ale aux houblons Vic Secret & Mosaic
Voici Portail, une superbe India Pale Ale dans laquelle nous avons incorporé une grande quantité des houblons Vic Secret et Mosaic. Vous y trouverez des notes d'ananas, de fruit de la passion et de petits fruits bien typique à ces houblons.

Nous sommes très fiers de vous présenter cette bière collaborative brassée avec nos amis de la brasserie Mellön ! Avec ces grands amoureux des lagers, nous nous inspirons des lagers franconniennes en y incorporant également du blé et épeautre. Le résultat est une bière à la fois délicate avec des notes houblonnées et légèrement épicées sur un corps douillet.

IT’S TIME TO PLAY THE GAME!! Beaooowwwwwwwwwwww (that’s a guitar ringing out…) HA HA HA HA! That’s right folks, this beer is the “Cerebral” assassin, the king of kings, the game, the… fuck that’s Triple H but this beer WAS brewed by Cerebral Brewing so I guess that’s close enough, right? Actually, screw that! This beer would beat Triple H mercilessly with that little sledgehammer he always uses because the flavor this exudes is out of this fucking world. Now onto the hard part of this review, the beer’s name. I originally thought that this beer’s name was something from a movie or TV show because it sounds like some Star Trek type shit but after a quick look on Google I realized that these things are something very real... I think. I’m actually not sure because I just read an article for the past 45 minutes to try and understand what the fuck Time Crystals are but I don’t think I’m any closer to understanding them or knowing whether or not they are real or not. All I’ve really understood is that they are created by and/or cause time anomalies such as holding a jump rope and rotating your arm 5 times only for the person in the middle to have to jump only one time. If I got that wrong please scold me science nerds because I want to understand them so bad! Anyways, this beer is downright fucking incredible and probably one of the best primarily galaxy hopped beers I’ve taste to date. A super bright and almost fermented pineapple flavor starts things off with a little bit of oniony hop goodness before some more pineapple and citrus flavor mixes in with the perfect amount of bitterness before ending with a nice sweetness and pungent hop flavor that makes you wish your glass was bottomless. This is my first Cerebral beer and I am 100% confident to tell you that I am hooked because this beer just blew my mind in the best way possible. Regardless of your drinking level you need to get your ass out to Denver, Colorado and drink as much of this as humanly possible ASAP because this beauty if not to be missed. Cheers!

Houblon Chouffe by Brasserie d’Achouffe

First of all, I’m going to explain the Texas kolache. It’s a variation of the yeasty filled Czech pastry that was developed here by Czech immigrants and has become ubiquitous. It’s as common as donuts. Batch is a new place here in Austin that serves craft beer and kolaches. They do have some traditional kolaches, like the sausage and cheese, fruit and poppyseed ones but also some wackier ones like pizza and brisket. The selection they have on tap is so far pretty limited but the bottles and cans are extensive.
I had a Chouffe beer, I believe it was the Bruin, when we were in Belgium. The gnome mascot is instantly recognizable. Houblon Chouffe is called an “IPA Triple Beer” which to me seems like they’re mixing the hoppiest American-style beer with the hoppiest Belgian-style beer and lo and behold that’s exactly what it is. I had quite a few tripels in Belgium and that and saison are my favorite Belgian styles so I looked forward to trying a mish-mash of my fav Belgian with my fav American. Houblon Chouffe is a really good beer. It is indeed quite hoppy with good bitterness and citrus flavor. There’s a bit of that distinctive Belgian yeast of course. What might be the most interesting thing though is the toasty malt backbone. That I was not expecting. I’d definitely drink this beer again.

What even is an IPA and why is it so popular, like what does it mean? Is it just a type of beer or the way it’s brewed? I don’t understand
rubs my dirty little hands together. you are really feeding a very specific part of my brain tonight huh
anyway, ipa stands for ‘india pale ale.’ historically, it was the beer that the british sent to india, and because of that it had a higher hop content and higher alcohol content, which basically acted as a preservative so when it crossed the ocean it still tasted relatively fresh compared to the lagers and ales popular in like, the non-colonized parts of britain.
in modern times, it’s basically a catch all term for any over-hopped beer. it’s also sort of evolved into a bunch of styles, all of which you see pretty regularly.
if you don’t want to read all of this, the GENERAL rule (not perfect, but it’s gonna help you to like, at least understand the basic rules around it) for ipas (and honestly beer in general) is this: ibus (international bitters units) is going to be how bitter the beer tastes, based on hop content. BUT, the higher in alcohol content a beer is, the more the bitterness is tamped down. so if you see something with a high ibu but low alcohol, it’s gonna be bitter. if you see something with a low ibu but low alchol content, it’s probably not gonna be too bitter. BUT if you see something with a high ibu but also a high alcohol content, it’s not gonna be as bitter. it is, of course, going to get you drunk faster, but based on taste that’s gonna get you started.
anyway, quick and dirty overview of some types of ipas you might see:
session - lower alcohol over-hopped beer (’session’ because it’s basically said that you can drink it all day. fun fact: this is the only type of beer i will not touch. i absolutely hate it in every iteration i have had. but you might not! i don’t know your life)
english style - ipas that are brewed in the traditional style, as if they were made in england and were expected to be shipped overseas. they tend to have, relative to other ipas, lower hop and alcohol content (the best example of this is bass, but it’s sort of made it into the craft world and you might see it, particularly with some more established breweries)
new england/east coast style (i refer to it as neipas): they tend to be very hazy and fresh tasting. lots of fruit flavor. from what i understand, this comes from adding hops late in the brewing process. also, like any american style, there tends to be a LOT of hopped flavor. most of them tend to also be very heavy beers.
california/west coast style: i find them to be much more bitter, and they’re usually much clearer than neipas. still VERY hoppy, but think more like, dank weed flavor rather than fresh fruit
wet-hopped: fresh hops. tends to be seasonal, as, as with any fresh product, it’s seasonal. i find they’re more mild and remind me more of neipas in general
dry-hopped: the hops have been dried! if it’s specified, it’s probably going to be a touch more bitter than your run of the mill ipa, but a lot of ipas tend to be dry hopped
double/triple/quadruple: ipas - meaning, over-hopped beer - but turn it up to eleven. it might or might not be a 1:1 ratio, but assume that it’s gonna be higher in hop content and, to balance it out, higher in alcohol. the more you turn it up, the more hops and alcohol there’ll be
imperials: imperial stout was beer that, in the 1800s, was popular in russia. it was a stout that tended to be both higher in alcohol - in a way that was more liquory tasting - and sweeter than standard stouts. imperial stouts take that concept and apply it to ipas. they’re ipas that tend to be about the same alcohol content as doubles, but also add a lot of liquory tastes and sweetness.
pale ales: NOT ipas, actually, but i feel like they have a similar enough vibe to them that they should be mentioned. they tend to be like, ipa lights. think like, lower alcohol AND lower hop content, but still really well balanced. i bring these up because i think they’re a good gateway if you like standard lagers and ales and want to get into ipas, but they’re a bit much for you
anyway those are my personal takes on styles i, personally, tend to see a lot. i’m sure i’m missing some and maybe people have different takes but this is my opinion on them.

Pure Project Shake the Ground Murky Triple IPA (Picked up at Windmill Farms). A 4 of 4. Like many things from Pure Project, this is excellent. Just over the top on every dimension but also manages to be balanced in a way this doesn't feel as big. Bright and sticky hop profile that has just about everything possible between tropical fruit, coconut, berry, and even some herbal/resinous qualities. The body is moderately thick and has quite a bit of fruity sweetness which balances quite well.

Voici Méliades, notre IPA brassée avec des houblons australiens Galaxy, Vic Secret et Enigma ainsi que beaucoup de Citra. C’est définitivement l’une de nos bières favorites. Méliades conjugue la puissance des houblons utilisés ainsi que leur richesse aromatique.
- Chardon - Lager d'Avoine
Nous avons déjà quelques lagers pale qui mettent en vedette les particularités d'un type de grain. C'était bien logique de faire honneur à un grain bien particulier, l'avoine. Pour Chardon, notre lager d'avoine, nous avons utilisé plus 35% d'avoine sous différentes formes. Nous avons utilisé une base plutôt classique pas très loin d'une Pilsner allemande. Le résultat est à la fois très craquant et bien sec mais avec un corps et une texture très ample.

Voici le grand retour de #GatineauIsTrending sous sa version DDH. Nous avons choisi de retravailler un classique que nous avons brassé pour la première fois il y a presque 6 ans, #GatineauIsTrending. Nous avons augmenté substantiellement la quantité de houblons utilisés pour en faire une version Double Dry Hopped. Alors, vous y trouverez une bière encore plus puissante que la version originale. C’est de loin la bière la plus houblonnée que nous avons produite à ce jour!

The Season of More 
Coinciding with Russian River’s annual Pliny the Younger release, every brewer with leftover hops tries their hand at a triple IPA. It’s harder than it looks. Balancing double a digit alcohol content with juicy hops and some semblance of body is a tough challenge.
Sixpoint’s Hi-Res doesn’t quite pass the bar. It smells great, releasing a cloud of pineapple must as soon as it’s opened. It tastes pretty good, the pineapple transforms into a resinous, sticky pine sap on the tongue. But the alcohol got a lot of heat to it -- like grapefruit vodka. And the body is a little lacking in heft. It’s a pleasant kick in the teeth, but not a spectacular display.
