Seeing people online get mad about “why are there over 100 genders now!!??” makes me think about how people say “The Eskimos have over fifty words for snow” but actually there’s only one word for “snow” but they add descriptors to it in a way that made a European linguist think they were using different vocabulary words

When a phrase becomes a customizable formula like that, it's called a snowclone.
no x, we die like y
have x, will travel
in space, no one can hear you x

do you know where "no beta we die like x" comes from and how it is used?
The term "beta" in this context is short for "beta reader" - a person who reads a fic while it's still in the editing stage and helps the writer get it ready to post. Some betas check grammar. Some check canon compliance. Some are sensitivity readers. There are lots of things that betas can do.
So functionally, saying "no beta" means that the writer didn't get this checked by a second person before they posted it. It's a warning that there might be errors or typos etc. It's mostly used when an author has written something quickly and is posting without doing a lot of (or any) edits first.
As for where it comes from? It all started with a bumper sticker.

This image was an internet meme at one point, and it got meme'd on in the form of "no ___ we ___ like men"
Here on tumblr, one of the versions that got really popular was from now-deleted user @grec1a who created this version:

From there, it migrated to AO3 as the "no beta we die like men" tag, and very often the word men is replaced by the name of a character who dies in canon.

I mean, I do understand that, effectively, the Japanese voice acting community is a small town and that you run into actors you know from other roles repeatedly. But it was in looking up where I knew one of the voices from The 100 Girlfriends Who Really, Really, Really, Really, Really Love You from that I realized I also knew the other ones as well.
Hakari's voice, Hondo Kaede, also voiced Maple from Bofuri and Haruka from Love Live Nijigasaki; Karane's voice, Tomita Miyu, also was Miko from Love is War and Rizu from Bokuben. Nanagawa Maria, who voices Shizuku, was also Kanna in Dragon Maid and the Platelet leader in Cells at Work; Nano's voice, Seto Asami, was Mai in Bunny Girl Senpai and Raphtalia in Shield Hero; Asai Ayaka — Kusuri — was Clara in Iruma-kun and Hazuki from Sound! Euphonium. Hahari's voice, Uesaka Sumire, was Lum in the new Urusei Yatsura, Shaltear in Overlord, Dekomori in Chuunibyou, and Anastasia from Idolmaster Cinderella Girls.
To further demonstrate the interconnectedness, only Sumire hasn't been in a Love Live production and only Miyu hasn't been in a Precure series.
(And again , before looking things up, I didn't realize that one of my favorite voice actors, Ōnishi Aguri — Ayumu in Nijigasaki — had a small role as the librarian in episode 3.)
