Asparagus, pine nut and pesto tart. Recipe below.
Ingredients
1 sheet of ready to roll puff pastry
1 tub of creme friache
1 block boursin cheese
1 block manchego cheese
1 bag asparagus
1 jar sundried tomato pesto
1 bag pine nuts
Step 1- boil your asparagus until soft. Mix the creme friache, about 3 tbsp of pesto together. Grate in the manchego cheese and mix together.
Step 2- roll out the pastry. Spread the creme friache mixture over it. Lay the asparagus on top. Crumble the boursin cheese and pine nuts over. Cook until the pastry is browned.

Asparagus and cheese puff pastry recipe 500g asparagus, trimmed 1 sheet frozen puff pastry All-purpose flour, for dusting 100g grated mozzarella cheese 150g cream cheese 50g sour cream 1 tablespoon minced shallot 2 eggs 3 tablespoons whole milk 1/8 teaspoon freshly grated nutmeg Kosher salt and freshly ground pepper 2 teaspoons extra-virgin olive oil Fill a large bowl with ice water. Bring water to a boil in a large skillet. Add the asparagus; cook until bright green and crisp-tender, 2 to 5 minutes, depending on the thickness of the asparagus. Drain and pat dry. Preheat the oven. Roll out the puff pastry on a floured surface. Transfer to a parchment-lined baking sheet and prick all over with a fork. Meanwhile, mix the grated cheese, cream cheese, sour cream, shallot, eggs, milk, nutmeg and a pinch each of salt and pepper in a bowl until combined. Spread the cheese mixture evenly over the puff pastry, leaving a 3cm border on all sides (I cut with knife border line). Toss the asparagus with the olive oil, 1/4 teaspoon salt, and pepper to taste.
