Mustard Greens Mushroom Quiche
The tart flavor of mustard greens paired with onions, mushrooms, and mozzarella cheese are a symphony joined together in this crustless quiche. The ground black pepper adds some zip, too. oil
1 lg. onion, chopped
3 c. mustard greens, chopped
1 c. mushrooms, chopped
1 c. mozzarella cheese, grated
6 eggs, whisked
1 T. whole wheat flour
2 c. half and half
3/4 t. salt
dash ground black pepper
1/2 t. garlic powder
Preheat oven to 400 degrees. In a large fry pan, saute onions in oil until just tender. Grease large baking dish. In a spouted mixing bowl, whisk together eggs, flour, milk, salt, pepper, and garlic powder. Layer mustard greens in the bottom of the baking dish, mushrooms, onions, and mozzarella in that order. Pour eggs mixture covering all nooks and crannies well. Bake 45 - 55 min. until a knife thrust in the center of the quiche comes out clean.

Spinach Mushroom Quiche
1/2 cup onions chopped
1 clove garlic finely chopped
1 cup portobello mushrooms sliced
about 1 1/2 cup baby spinach leaves
1 cup canned coconut milk
5 eggs
1 pie crust (recipe will follow)
Saute garlic and onion in olive oil. Add mushrooms and sauce until your desired doneness. Add spinach and lightly sauce. Put the veggies in the pre-baked pie shell. Whisk eggs and the canned coconut milk together. Add it to the pie shell. Bake 40min at 350 degrees.

Quiche
A quiche and a salad walk into a bar. No one is surprised and everyone’s like “oh, hey”.
• i picked some crust off because.
I had a craving for quiche. TBH I walked around Roncesvalles for a bit looking to just buy one because I was out anyway and didn’t have many of the ingredients at home. Then I remembered I love cooking and punched myself in the face. I DID HOWEVER buy the pie shells because I didn’t have any butter or flour at home and butter is $$ and I was able to buy two pre-made for under $3. I’ve plopped a pie crust recipe at the bottom in case you want to make your own. It really is easy and the key is having really cold butter, hands even, and not over working it.
INGREDIENTS
• pie shell (bought or homemade)
• 6 eggs
• 1/2ish cup of 35% cream (first time using this exorbitant fat content...it made the best fluffiest quiche i’ve ever made..unfortch.)
• caramelized onions + mushrooms
• spinach
• tarragon. i love it so much and that’s why this quiche tastes so amazing.
• any cheese you want/have. i had bits of old white cheddar and sorta-moldy dill havarti. right on!
• salt and pepper to taste. jk don’t taste the raw egg mixture gonna have to use your feminine intuition on this one. (i like pepper, fresh cracked duh, so like a tbsp and maybe 1 tsp or so of salt because cheese is salty and you will have salted the onions and mushrooms. PLUS you can always add more when it is cooked and you are consuming. i will allow that.)
DO THIS
• parbake whichever pie shell you go with
• meanwhile, sauté and caramelize onions and mushrooms (i dunno about a cup each remembering mushrooms shrink a lot) add some salt to this shit
• whisk the eggs, cream, salt and pepper together
• add onions and mushrooms when nicely browned (the more brown the more flavour! WOWEE) + raw spinach + whatever cheese you have (either chunks or grated whatever you feel like)
• bake at 375 for 30ish minutes/until set and a knife stabbed inside it comes out clean.
LOVELY with a salad LIKE MINE. i put a bunch of stuff in mine but most important is the GRATED BEETS because im obsessed with that lately. so fresh and juicy and sweet. more like GREATED amiright?

OH! PIE CRUST RECIPE
• 1 1/4 cups all purpose flour
• 1/2 tablespoon sugar
• 1/2 teaspoon salt
• 1/2 cup chilled unsalted butter cut into 1/2-inch cubes (put in the fridge after you cut them because you have warm sweaty hands and they need to be cold)
• 3 tablespoons ice water (may need to add more as you blend)
DO THIS
• blend flour, sugar and salt in food processor, with your hands or with a pastry cutter thing
• add butter and lightly mix in until coarse meal forms, add the 3 tablespoons of water and keep mixing until moist clumps form. adding more water if the dough is dry.
• gather dough into ball and flatten into a disk, wrap in plastic and refrigerate for one hour.
• take out and leave at room temperature for a bit so it’s soft enough to roll out.
• roll it out, cut out to match your pie plate etc. then continue on as above (prick the dough all over, parbake, etc. blahblah).
