Turnip Greens Fry Up
It will take awhile for these tiny starts to get to harvesting size but the photo on the left is from today and the one on the right is a couple of weeks ago at about Dec. 25th - so three weeks growth.  Just for laughs, I planted a few sprouted turnip tops (just keep the top 1″ of the turnip root under the greens) in an outdoor planter to see what would happen. It worked - I’m stunned and excited with the results - novice gardener here.  They have even made it through a half dozen freezes according to my husband - down to the upper 20′s in the Portland, OR area.  A gardening video suggested covering with burlap so that worked well, too.  Until these are large enough to “cut and come back”, I’ll enjoy turnip greens form my local market - here’s how...
oil
1/2 c. cider vinegar
2 Granny smith apples, cored, chopped with skins on
ground black pepper to taste
1 large onion, chopped
4 c. turnip greens
In a large fry pan, add oil, vinegar, apples, black pepper, and onion.  Saute until onions are just beginning to caramelize then add turnip greens tossing well with cooked vegetables.  Watch closely as they will cook down and be ready to serve before you know it.  These are great as they come or served with a slice of pork roast and baked squash on the side.

Scrumptious Split Pea Parsnip Soup
True to it’s name, this split pea soup with parsnips - carrots - celery - onions is mouth watering while it’s simmering and scrumptious as you spoon it up from deep soup bowls.  It’s no trouble to fix and fits well with my healthy eating plan.
2 c. yellow split peas
6 c. water
1 lg. onion, diced
3 carrots, sliced thin
1 lg. parsnip, sliced thin
1 1/2 c. celery with tops, sliced thin
2 t. salt
2 t. pepper
2 t. garlic powder
1 bay leaf
In a large soup pot, add split peas, water, onion, carrots, parsnip, celery, salt, pepper, garlic powder, and bat leaf.  Cover and bring to a boil, then turn to simmer until the split peas are tender - spell that fallen apart...about 60 minutes.

Mixed Greek Salad
Great way to mix it up from the humdrum everyday salad and toss up of flavors  Keeps me on the straight and narrow to my healthy eating goals, too…
1 bunch dark green leafy mix, washed, chopped
2 med. cucumbers, peeled, chopped
2 lg. tomatoes, cored, chopped
1 c. olives, drained, chopped, use Greek or black
3 - 4 scallions, chopped using kitchen scissors to speed the process
3 T. capers, drained
2/3 c. feta cheese, crumbled
Dressing:
½ c. olive oil
3 T. red wine vinegar
1 t. oregano
½ t. salt
1/8 t. black pepper
Toss together vegetables and cheese.  In a separate bowl, whisk together oil, vinegar, oregano, salt and pepper.

Cucumber Bell Pepper Salad
With the orange, green, red, and yellow peppers, this salad brings color to your holiday table as well as furthering healthy eating goals.  It’s just a chopped salad, toss together and serve or make ahead to set out at the last minute as she comes or on a bed of greens with the oil and vinegar acting as dressing.  Great as a pass around the table dish or buffet style - however you serve it up.  See what you think...
2 cucumbers, peeled, quartered, sliced thick
1 red onion, chopped
4 bell peppers - red, orange, green, yellow - seeded, chopped
1 doz. radishes sliced into coins
1/4 c. oil
1/4 c. red wine vinegar
1 t. kosher salt
1/2 t. ground black pepper
In a large bowl, toss together all ingredients until well coated.  That’s it...believe it or not this feeds a crowd and adds a crunch with bright flavor to holiday meals.

Focaccia
Step aside bleached white flour…focaccia is great made with whole wheat flour and even better for you.  Try this with some coarse black pepper ground over  the dough before baking or add some pine nuts gently pushed into the top.  No dairy or added sugar so it’s part of my healthy eating plan.  It’s great served along side your favorite vegetable soup or the next  day for breakfast with a poached egg and tomato slices…
2 c. whole wheat flour
1 t. salt
2 t. yeast
¾ c. lukewarm water
3 T. + olive oil
¼ t. + coarse sea salt
1 stem fresh rosemary
Option:  ground black pepper, pine nuts pushed into the dough before baking
In a large mixing bowl, mix whole wheat flour, table salt and yeast with a whisk to integrate all ingredients. Add water and 2 T. of oil mixing well until a ball forms.  Very lightly oil dough, place in a mixing bowl in a warm spot in your kitchen covering with a towel.  Let rise for 2 - 3 hrs. until doubled in size. Preheat oven to 450 degrees.  In a 10″ baking dish, brush oil on bottom and sides placing dough but stretching as needed to touch all sides.  Sprinkle coarse salt and rosemary needles only over top making a few divots.  Drizzle oil over all. Let rest covered by a kitchen towel for 30 min.  Turn the oven down to 400 degrees and pop this dough into the oven for 25 min.

Caprese Zoodle Salad
Playing with the idea of zoodles (zucchini noodles) but aren’t sure how to find them or how to fix them.  Zoodles can be found prepared in the frozen section at your local grocers, with the pre-cut vegetables in the produce dept., or do it yourself with a spiralizer tool.  Use them fresh or just barely cooked in a fry pan. So very much a part of a healthy diet, so check ‘em out.
3 - 4 c. zucchini, cut into noodles using a spralizer or pre-cut at your grocers
4 oz. red cherry tomatoes, halved
4 oz. gold cherry tomatoes, halved
8 oz. small balls of Buffalo mozzarella, drained
½ c. prepared pesto, check ingredients listing for no added sugar
fresh basil leaves ribbon cut for garnish
Combine zucchini noodles, tomatoes, and mozzarella in a large bowl.  Add pesto and toss until coated.  Garnish with fresh basil and serve, refrigerating any leftovers.
