Turnip Greens Fry Up

It will take awhile for these tiny starts to get to harvesting size but the photo on the left is from today and the one on the right is a couple of weeks ago at about Dec. 25th - so three weeks growth.  Just for laughs, I planted a few sprouted turnip tops (just keep the top 1″ of the turnip root under the greens) in an outdoor planter to see what would happen. It worked - I’m stunned and excited with the results - novice gardener here.  They have even made it through a half dozen freezes according to my husband - down to the upper 20′s in the Portland, OR area.  A gardening video suggested covering with burlap so that worked well, too.  Until these are large enough to “cut and come back”, I’ll enjoy turnip greens form my local market - here’s how...

oil

1/2 c. cider vinegar

2 Granny smith apples, cored, chopped with skins on

ground black pepper to taste

1 large onion, chopped

4 c. turnip greens

In a large fry pan, add oil, vinegar, apples, black pepper, and onion.  Saute until onions are just beginning to caramelize then add turnip greens tossing well with cooked vegetables.  Watch closely as they will cook down and be ready to serve before you know it.  These are great as they come or served with a slice of pork roast and baked squash on the side.

Curry Mayo

Spicy…smooth…excellent  mixed in with boiled eggs for a new twist on a favorite egg salad or as a sandwich spread.   This version is especially tasty served on a generous bed of greens with celery, carrots, and cucumbers on the side.  Works well in my healthy eating plan.  Pssst...it’s great mixed in with tuna too.

3 egg yolks

½ t. salt

¼ t. dry mustard

1 ½ - 2 t. hot curry powder

1 ½ c. olive oil

3 T. cider vinegar

1 T. lemon juice

In  a medium bowl, beat egg, salt, mustard, and curry with a hand mixer.   After you’ve mixed the eggs and seasonings, gradually add the oil,  vinegar, and lemon juice.

Ginger Pear Grape Salad

The  fresh grated ginger and green onion add some real zip to this diabetic  friendly fruit salad.  The yogurt makes it creamy…celery and almonds  bring the crunch.  Great Spring salad served on a bed of greens and  great for your blood healthy eating habit.

1 c.+ plain yogurt, read the label ingredients to make sure no added sugar

dash salt/pepper

2 T.+ ginger, fresh finely grated

2 pears, ripe, cored, chopped

2 stalks celery, chopped

1 c. sliced almonds

2 c. grapes, seedless, sliced in half

2 green onions, chopped using kitchen scissors

In  a small bowl, mix yogurt, salt, pepper, ginger, and pears.  In a  separate bowl, toss together celery, almonds, grapes and onion.  Pour  yogurt mixture overall and toss to lightly coat all ingredients.

Avocado Dressing

It’s just great...just great on a bed of crisp greens with shrimp and crab or a little thicker as a dip or experiment with ways to enjoy it on your own maybe as a sandwich spread with tomato/avocado slices and sprouts.  Check out the alternative dipper ideas in the second photo - green onions, green beans, pea pods, and asparagus spears.  Cucumbers and radishes cut at an angle work well for this task, too.  Have a snack and feel OK about what you ate afterword.  Keeps you blood sugar  readings in check, too.  

1/2 c. milk

1 clove garlic, peeled, minced

1 T. lime juice

1 c. cream or sour cream or Mexican Crema for thicker consistency

2 avocados, peeled, mashed well

salt to taste

1 T. finely chopped chives, use kitchen scissors to speed the process

Puree  the milk and garlic in a blender.  Add the lime juice, cream, avocados  and salt to taste - blend until smooth.  Pour into a small bowl and stir  in the chives.  Serve chilled.

Salad Topping Mix

So easy to assemble, so many ways to utilize this healthy mix of seeds and nuts.  Just pour 1 c. of each of the following: salted sunflower seeds, pumpkin seeds, sliced almonds, pine nuts, sesame seeds - tan and black into a large jar with a tight lid and shake.  That’s it.  I use this mix sprinkled on tossed salad or a toast raft spread with mashed avocado or hummus.  It adds flavor, crunch, and nutrition - nicely done.
