Tonight's plan in the works: a quichey-type pie with "they can't legally call it feta", frozen spinach that I just put out to thaw because there was time, and a package of frozen puff pastry also set out to thaw.
We've been getting a variety of those big cans of cheese floating around in brine here, and it is pretty handy if you like feta type cheese. That isn't the best brand to snack on that we've had, but it should work great in cooking.

Besides sounding like a good combo of ingredients, this should also use up several odds and ends of things out of the fridge. 😃 From that part of a carton of sour cream, to an open jar of pesto with chili. Probably throw some leftover fried onions in there too.
We don't actually have any cherry tomatoes (or sundried, which would probably also be delicious), so I am thinking of just using chunks of a sweet red pepper instead. Not the same flavor at all, but the same kind of color contrast and bit of freshness. Probably wouldn't be bad.

I’ve been on a roll reading one British detective novel after the other. They all have one thing in common: a visit to the pub to interrogate a suspect or to regroup after a long day of sleuthing.
