One more day until the weekend and we can chill... who am I kidding, I have a toddler and a 3 month old - there ain’t no chilling going on in this house 😳🤯 Trying to kick off the new year with some healthier meals though - today was a simple rainbow salad with Korean grains, soft hard boiled eggs and a tamari-sesame sauce 🌈🥗 It took 10 mins to make and tasted a perfect mix of healthy and delicious! I chopped up Teddy’s and mixed it all together which seemed to go down pretty well too! Details below 👇🏻 ~ 3 eggs, boiled for 6 mins 2 carrots, Julienne peeled 1 courgette, Julienne peeled 1/4 head of red cabbage, shredded 1 packet of @merchantgourmet Korean style grains 100ml tamari 100ml lemon juice 1 tbsp sesame oil 1 tbsp honey 1 tbsp mirin ~ Put the eggs onto boil for 6 mins (from room temperature) Strip the carrots and courgette using a Julienne peeler. Shred the red cabbage with a knife. Mix together in a bowl. Cook the grains as per the packet instructions. Mix and shake the sauce ingredients in a jam jar, then drizzle over and mix in with the veg. Run the eggs under cold water and gently peel the shell off.
