One-Pot Tortellini Lasagna
(30 minute dinner)✨

All you need is one pot, 30 minutes, and you’ll have a delicious lasagna inspired dinner on the table for your family!
Ingredients:
• 20 oz fresh refrigerated tortellini
• 1 lb ground beef
• ½ medium onion, diced
• 4 garlic cloves, minced
• 1 tbsp tomato paste
• 2 tsp avocado oil
• 1 tsp salt (for meat)
• ¼ tsp black pepper (for meat)
For the Sauce:
• 1 (28 oz) can crushed tomatoes
• 1 cup water
• 1 tbsp garlic powder
• 1 tbsp onion powder
• 1 tsp dried oregano
• 1 tsp dried basil
• 1 tsp salt, (or to taste)
• ¼ tsp black pepper
• ¼ tsp red pepper flakes (or to taste)
• ¼ tsp baking soda (to neutralize the acidity of the tomatoes), add a little more if needed
For the Ricotta Topping:
• 1 cup ricotta cheese
• ½ cup shredded mozzarella cheese
• ½ cup grated Parmesan cheese
• 1 tbsp freshly chopped parsley
• ½ tsp garlic salt (or to taste)
• ¼ tsp black pepper
For the Final Dish:
• 1 cup shredded mozzarella cheese
• 1/4 grated Parmesan cheese
Extra:
• Fresh parsley, chopped
Instructions:
1. Heat 2 tsp avocado oil in a large oven-safe deep skillet over medium heat. Add diced onion and sauté for 3 minutes. Stir in minced garlic and cook for 1 minute.
2. Add ground beef, season with 1 tsp salt and ¼ tsp black pepper, and cook 5 minutes. Stir in tomato paste and cook for 2 minutes.
3. Add crushed tomatoes, garlic powder, onion powder, oregano, basil, salt, black pepper, and red pepper flakes. Sprinkle in ¼ tsp baking soda to neutralize the acidity of the tomatoes. Simmer for 6-8 minutes.
4. Pour in 1 cup water, bring to a simmer, then add tortellini. Stir, cover, and cook for 4-5 minutes, or until tender.
5. Sprinkle on 1 cup shredded mozzarella and ¼ cup Parmesan. Drop dollops of ricotta mixture (ricotta, mozzarella, Parmesan, parsley, garlic salt, and black pepper) on top.
6. Broil, uncovered, for 3-4 minutes, until bubbly and golden. Garnish with parsley, serve hot and enjoy!

You can cook meat like this as well but the texture will be a bit rubbery. I used to do it back when I worked as a secretary.
Along with frozen veg which is generally precut.
You can also use premade sauces.

Spicy Lemony Grain bowl
I haven’t posted here forever but I still live the hotplate life 2/3rds of the time so here’s a new one pot that makes 2-3 servings.
Ingredients:
2-3 links precooked spicy sausage like chorizo (or veggie sausage of your choice). I used local chorizo that’s bigger than the typical precooked links so 2 worked for me. I’d you’re using a brand like Aidells or Field Roast I’d use 3.
1/2 can butter or white beans
1 pre-made bag of brown rice and quinoa mix (of course you can cook your own but this is a one burner recipe)
1 bag washed spinach
Juice of half a lemon
Something spicy- pepper flakes, hot sauce, a jalapeño- anything you have on hand
Olive oil, salt and pepper
(Optional garlic and onion. Scallions work great if you’re cooking in a space without a lot of storage for half used veggies)
1) Heat a little olive oil in a pan
2) (add garlic and onion if using and stir until a little soft) add sliced sausage and let this get brown and fragrant
3) add beans and rice mix and season with salt and pepper and your hot thing. I used Aleppo pepper flakes because that’s what I have.
4) let everything cook together until it looks like things are combined well - a couple minutes
5) add spinach and lemon juice, toss together, and cover your pan to let the spinach wilt down. I like it still a little leafy but you can let it basically melt like spinach does.
6) adjust salt and pepper and eat!
Optional toppings could be Parmesan or even a little sour cream if that’s your thing

flavourings (I used cherry tomato, basil, onion, garlic and shaved chorizo stuff)
recipe said 10 mins cooking but it took 20
stir every few mins to avoid sticking

For a simple, less greasy dinner, mum prepared this one pot Pork Ribs Noodles Soup (排骨面汤). She added the pork ribs, yong tau foo (酿豆腐), waxy potato and dried scallops to the water to cook in advance. When we are home from office, she heats up the soup again, throw in some of the leafy lettuce and scoop them over the flat yellow noodles.

Rlly curious, how long does it take you to finish a piece? (Character design studies vs one with background, like the elvis in the mirrors) 🙂
Character design studies can be started and finished in one sitting. These probably took an hour and some.

Illustrations like the Elvis Mirror illustration are usually spread out over the span of a few days rather than one sitting. Looking at pieces with fresh eyes is so important to me ! Errors will not make themselves known to me if I simply stare at the same drawing for hours and hours. I need to step away and come back to it more than once to really see what I'm looking at.

I tried making cabbage soup for the first time yesterday and I finally understand why this bitch was in a million books I read as a kid
Like I only had a mug of it fresh because that's what was left after storing it in no fewer than 3 containers (2 in the freezer because I'm attempting to adult in that Food Prep Life kinda way for once) and I still needed to finish off the last of the Delicious Hungarian Mushroom Soup (finish off as in eat the largest bowl of soup in my life so I could wash the container) AND I also made bean and potato soup in the slow cooker because the chicken had gone bad and the potatoes were on the cusp and I had an extra can of white beans laying around so I had a bowl of THAT yesterday for lunch and only snacked for dinner SO THIS is my first real bowl of the cabbage soup
and I get it I get it I get it, I used SO many veggies that otherwise would've been wasted AND so many spices AND there's that Good Cronch, how did I once scoff at the concept of cabbage soup this bitch is so GOOD
(I used no fewer than 3 bell peppers, one of each color, and a cucumber, and lazily threw in a cup of baby carrots, and committed to a WHOLE ASS onion in one dish instead of roughly half like I normally do, this bitch is good this bitch is good hell YEAH this bitch is good!!!)
