Smoked Brown Sugar Gingersnaps

I made some oatmeal cookies today, and during the "beat butter and sugar together until fluffy" step the hand mixer really wasn't cooperating. My hand mixer is probably at least ten years old, only works at low speed if you push down on the speed switch hard the whole time, and seems to resent everyone and everything, but usually works! This time it kept flinging bits of butter all over the kitchen. I thought I'd cleaned them all up until I took my phone out of my pocket and found out it was covered in butter because somehow the darn mixer flung butter into my pocket The cookies turned out good though lol

Gingersnaps makes about 2 dozen cookies

¾ c unsalted butter, softened 1 c light brown sugar 1 egg ¼ c molasses 2 ¼ c flour 1 tsp cinnamon 1 tsp ginger ½ tsp ground cloves ¼ tsp salt ¼ c granulated sugar (for rolling)

Preheat the oven to 375°F. In a large bowl, cream together butter and brown sugar. Add in egg & beat until smooth. Add molasses & mix until combined. In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, cloves & salt. Add the dry ingredients to the sugar mixture. Mix until just combined. Chill the dough for 10-15 minutes. Scoop about 2 tablespoons of the dough into balls. Roll in sugar. Place on a parchment lined (or lightly greased) baking sheet and lightly flatten. Bake for 8-10 minutes (for chewy cookies, I bake them around 8 minutes. But for a crunchier cookie, bake for 10-12 minutes or until the edges are lightly browned). Let them cool on the baking sheet for 5 minutes before removing to cool completely.

It looks like the leap day cookies will be gingersnaps. I went with the Archway brand to represent these cookies.

According to my thorough and lengthy research, (like 10 seconds of googling) gingersnaps get their name from being very crunchy and having a snap when you bite into them. If so, these cookies really live up to that, as they are dry and very crunchy, with a good snap. The flavor is similar to gingerbread, though I think the ginger and cinnamon mix leans a bit more to the ginger side on these. These are good, though not super amazing to me.

Horse sewing progress is slowed because it's Baking Cookies Weekend, the weekend in December where I am struck by the urge to bake a whole bunch of cookies so I can share them with the neighbors So far, that means chocolate oatmeal no bake cookies and coffee-chocolate shortbread, and next up is gingersnaps! And citrus cookies* I'll be honest I'm probably keeping the gingersnaps for my family and not sharing them with the neighbors? They are one of those recipes I haven't been able to make in a long time because they are little labor-intensive and they are one of my absolute favorite cookies *any time I am giving a gift of cookies I try to include at least one non-chocolate cookie option, and my default is citrus cookies because they are pretty, the dough can be made ahead of time (they are slice and bake cookies), and most people I've made them for have never had a cookie like them before
