Spicy Prawn Sandwich

It's hot and sunny, the skies are a cloudless blue, the ideal weather for a picnic! And this Spicy Prawn Sandwich makes a delicious, mouth-watering al fresco meal, whether it's by the sea or in your own garden! And you can even bring it indoors to tuck into it whilst watching the Rugby World Cup opening clash between Les Bleus and the All Blacks!!! Happy Friday!
Ingredients (serves 1):
a generous bunch Garden Cilantro
1/4 long red hot chili pepper
1 1/2 tablespoon olive oil
1/2 small lemon
a dozen fresh prawns, steamed and cooled
1/4 cup thick plain or Greek Yoghurt
2 heaped teaspoons Mango Chutney
1/4 teaspoon Garam Masala spices
1 teaspoon olive oil
100 grams/3.5 ounces freshly baked Baguette
a pinch of salt and freshly cracked black pepper
a few leaves gem lettuce, rinsed and spin-dried
1/4 cucumber
Finely chop Cilantro, and spoon into a medium bowl.
Thinly slice chili pepper, and add to the bowl. Add olive oil, and squeeze in the juice of the lemon halve. Give a good stir.
Peel prawns, and add them to the bowl. Toss well to coat in herbs, chili and oil.
Place in the refrigerator, to marinate, a couple of hours.
Spoon Greek Yoghurt into a small bowl. Add Mango Chutney and Garam Masala spices. Give a good stir, gradually adding olive oil, until well-blended. Set aside.
Halve Baguette, without cutting through completely. Generously spread mango mixture on both sides. Arrange gem lettuce leaves onto the bottom side.
Remove marinated prawns from the refrigerator, and season with salt and black pepper.
Thinly cut a few slices cucumber, and arrange them on top of the lettuce. Finally, fill generously with spicy marinated prawns, pressing gently to close sandwich.
Enjoy Spicy Prawn Sandwich immediately, or wrap tightly in cling film if bringing as a picnic!

hello!! yes here are some very easy, low effort low prep recipes i love. the bolded ones are the ones i find myself making most often when i am like wow i do NOT want to cook but if i must do so, i wish to make the easiest thing ever.
shakshuka (all recipes are basically the same! i make it with canned tomatoes to cut down on prep, add a sliced jalapeno to make it spicier, and top it with feta and cilantro. if you are not crazy about eggs my sister often makes it with chickpeas and no eggs!)
thai peanut noodles (you can make as-is but i often add roasted broccoli and air fryer tofu if i have time!)
ricotta pasta with roasted broccoli and chickpeas (i roast the broccoli rather than broiling it as i am afraid of broiling lol but it's very easy and delish)
creamy corn pasta (my beloved)
spaghetti with onion-"bacon", corn, and basil
roasted sweet potato tacos (roast sweet potatoes, warm black beans on the stove with spices, and make easy quick-pickled onions if i have time - then you can add avocado, sour cream, cilantro, and any other toppings you like!)
potato egg and cheese breakfast tacos (i roast or air-fry small-cubed potatoes, scramble eggs, melt cheese into the eggs, and top with the salsa of your choice!)
migas breakfast tacos
tortellini with pesto and roasted veggies
caprese toasts (toast bread of your choice, then add pesto, sliced mozzarella, sliced cherry tomatoes, basil if you have it, and balsamic glaze... my all-time fave easy/no-cook meal)
pesto pasta with frozen peas (another super easy one i make when i want to barely cook at all - you boil the frozen peas in the pasta pot for the last three minutes of the pasta's cook time. then add pesto, grated parmesan, a squeeze of lemon, and halved cherry tomatoes if you have them)
easy asparagus soup (thinly slice a leek and cut 1-2 bunches of asparagus into half inch pieces. melt 3 TBS of butter in your pot, then saute the leek plus 5-6 cloves of garlic for 8 min. add asparagus pieces and 4-6 cups of veggie stock, bring to a boil, salt and pepper, and simmer for 30 min. transfer it all to a blender and blend, then add 1/4th cup grated parmesan and the juice of half a lemon. serve with crusty croutons and sliced chives)
roasted sweet potato & figs dish (you can also make with dried dates if you can't find figs!)
easy chana masala
nectarine, arugula, and feta salad (best in the summer when it's nectarine season but delish all year round... you can also use peaches. i usually serve it on a bed of quinoa so it's more filling/more of a main dish. the basil dressing is to die for i could eat it with a spoon)
avocado & egg sandwich (you can make this on a bagel, english muffin, or bread... just toast your bread, mash avocado onto the bread & sprinkle with red pepper flakes, and then scramble or fry eggs to your liking and put on top)

Recent discoveries from the land of Bug lives with a chronic illness and is tired all the time:
This is probably obvious to everyone but holy shit, crock pot. I used to use this thing mostly for a few very specific recipes because I feel like there’s something about the cooking method where things can tend to lose flavor or texture (might just be a me thing) but lately it’s been a lifesaver when I am hurting and exhausted, which has been a lot.
I’m trying to cut back on premade or processed stuff where I can because I don’t think it’s good for me personally or for our budget. (No judgement from me if that’s what’s easiest for you, we all gotta eat somehow.) Cooking has become a mega effort for me when I’m having a flare up and it’s been tough. I used to do all the cooking for us because I genuinely love to do it, but it’s gotten so hard for me recently and I’m trying new methods.

This is all kind of a medium effort (unless you have someone to help, which I am lucky to have) so it might not work for everyone, because the ceramic piece of the cooker is kind of heavy to get out and clean if you’re prone to dropping things (I am) but it can go in the dishwasher. Also chopping things can be a pain; I have a little chopping thing that helps when I’m cooking alone, it looks like this:

Anyway, if you can get past those hurdles via tools or help or buying pre-chopped veggies, you’re halfway there. You can also prep veg when you’re having a good day and freeze it so you have it ready on a bad day.
Here are a few of my favorite recipes, all are kinda chicken-based and the method is basically the same but you can probably substitute another protein, this just works for my budget and dietary needs. The only thing I might not use is ground meat; something funny can happen with the texture of it, I think because you’re not necessarily stirring all the time. It can cook kinda weird if you’re not attentive, and we’re going for as hands off as possible here.
Today we chopped up a bunch of veggies and dumped them in with chicken breast, a bunch of seasoning (curry, garam masala, garlic, ginger, a little Trader Joe’s sriracha seasoning for a little heat, I mean, I don’t think you can really add too many spices here?? Add and measure with your heart, as they say), and a jar of tikka masala sauce. Then we just have to make rice later and it’s all set. 4-6 hours on high, 6-8 on low seems to be the standard and works for basically everything I’ve tried so far. Yeah, it’s kind of premade with the jar sauce, but having something hot with real veggies and chicken when you’re not feeling good is a real morale boost at the end of the day. Plus, a ton of leftovers.
Another easy one I love is chopping up an onion and a bell pepper or two, pour in either a jar of tomato pasta sauce or a big can of crushed tomatoes + whatever garlic/basil/etc seasonings you like, and throw a couple of chicken breasts on top with some seasoning on those too. Same timing as above. By the end the chicken just shreds apart by pinching it with tongs really easily (I have hand grip issues and I can do it) so shred that and stir it all together. This stuff is great on pasta, probably also would be an amazing sandwich on a bun with some mozzarella?? Last time we used a can of tomatoes so there was a ton of extra liquid and I just dumped in a package of farfalle at the end of cooking (or 30 minutes to the end, ish) and mixed it well, gave it 30 minutes to soak up the sauce, and it was really tasty. You really only have to pay attention at the end to make sure the pasta is the way you want it, not over or under done.
Lastly, tacos. Chicken, in whatever quantity you want. We are 2 people and 2 breasts is enough for a bunch of tacos and leftovers for lunch the next day. Add a little olive oil (just a dash to help stuff stick) and half a packet of any taco seasoning you like (save the rest for the end). Mix in one of those little cans of chopped green chilies plus about one tiny can of water or chicken broth if you’re feeling fancy. Cook either high or low (as above) but I find low on 6-8 hours actually does come out better on this one. When it’s done, shred the chicken like the tomato recipe. It should just fall apart with very little effort. Then add in the rest of the seasoning packet and mix; it helps thicken any liquid into sauce. If you still end up with too much liquid somehow, just scoop some out with a ladle. Then just put it on tortillas with whatever taco stuff you like. This one also works pretty well with a big chunk of pork, like pork shoulder. You may need some extra seasoning and stuff because it’s bigger, and I would also add some garlic to the pork version for better flavor. If you have the energy or assistance this stuff is also great shredded up and thrown under a broiler for a couple minutes for crispy edges, but that’s totally optional. Still tasty without it.
Anyway, just thought I’d share some of the easy stuff I’ve come across and liked because I love cooking and I hate how much trouble I’ve had making good food without running myself to exhaustion since I started having health problems. It’s a learning curve for sure.

🥯 BAGEL — what does your oc's typical breakfast look like? do they usually eat breakfast?
On normal mornings, Klara is a fan of scrambled eggs for breakfast :3 She eats it after her short morning workout/stretch thing and usually has a cup of coffee and a glass of apple juice with it. Additionally, if there is any in the fridge, she also eats leftover pizza or whatever pastry they may have had yesterday.
THAT SAID she does have very busy days sometimes (or, like, work emergencies), which kinda ruin her schedule and so she has learned to just enjoy a musli bar or something. She also keeps one w herself in her bag in case she has to basically leave as soon as she wakes up. Working for a megacorporation be like 😔
On weekends or vacations she reaaaaally loves brunches with Toby (because he wakes up very late tbh). They either order something from their favorite cafe (and then wonder why they have money issues every now and then) or just cook something together, in which case it's something simple like the previously mentioned scrambled eggs, but also some kind of porridge, fruits, sandwiches (or just bread w something, or garkic bread), yoghurt and nuts. Sometimes if they're not doing the brunch thing, she makes a nice oat porridge with strawberry :3 And if Toby manages to wake up earlier, he makes her pancakes.
🥪 SANDWICH — what does your oc's typical lunch look like? do they usually eat lunch?
At work (no meetings) she mostly goes for salads!!!! She's been very much into salad bars since high school and that habit has been a big part of her personality LMAO. She especially likes to add either salmon, shrimp or chicken in it, and also tends to have pasta w sweet chili sauce there.
THAT SAID she has meeting/discussion lunches very often. She & the person/ppl she's meeting go to some restaurant, depending on locatiob of the office or the other meeting place or who the ppl she's meeting are working for. She usually orders something with fish, her favorite dish to order is definitely salmon with potatoes, but the restaurants rarely have them. She'd mostly go for some kind of pasta or risotto, or a soup if it's something she likes. Wouldn't say no to a fancy burger either.
Sometimes her 'meeting lunch' actually means meeting up with Tobias for lunch. They usually go to their favorite little restaurant that's quite quiet during lunch time. Klara often orders their sweet potato soup or smoked tofu stir fry.
If Klara's having a lunch at home, she either makes a sweet potato soup or a mushroom pasta. If she's feeling lazy, she just does mac & cheese (happens more often than you'd think).
🍛 CURRY AND RICE — what does your oc's typical dinner look like? do they usually eat dinner?
Fun thing about Klara and dinners is that she Never Cooks Dinners. Not because her skills aren't enough but bc she is often exhausted after work and comes home much later than Tobias, which means that 1) they either order something together and then go lay on the couch, Klara watching tv and trying to relax or something OF 2) Toby cooks something. He's A Bit better cook but isn't good either so he sticks to safe, easy recipes. Most of the time it's a cheese pasta or fried rice, sometimes a butternut squash steak or a noodle soup. If they're ordering, Klara tends to either order tikka masala or a
Late work evenings usually mean quick chinese food (Klara's always buying dumplings) or pizza :3 Sometimes she manages to find time and go to some local sandwich shop and buy some kind of stuffed bread. She's somewhat fond of them for some reason.
Sometimes Klara & Toby go out for a dinner for fun, and she tends to order something light but warming. Like carbonara or baked potatoes.
🤔 THINKING FACE — what are some of your oc's quirks/mannerisms?
Klara definitely tends to cross her hands a lot when talking, or place them on her sides. She also tends to walk around while speaking for long, and taps her foot when she's standing still.
She also tends to play with her hair a lot when not doing anything, sometimes not even noticing she is doing it.
Klara also may seem a bit intimidating if you don't know her or aren't a friend of hers, or if she's at work, bc she always looks a bit over-determined when she walks and says her opinions out loud quite easily. I'd also say she rarely ever actually smiles in situations where she's not with people she does not know.
👨‍👩‍👧‍👦 FAMILY WITH MOTHER, FATHER, SON AND DAUGHTER — how many people are in your oc's immediate family? how many people are in your oc's extended family? do they have aunts, uncles, cousins, grandparents, etc? who in their family are they closest with? are they close with their birth family, or do they have a found family?
Out of blood relatives, she has her two moms Anna and Susie, and two brothers, Måns & Elliott. Of course, her immidiate family is also her spouse, Toby, and honestly she would definitely count their cat Melody as immidiate family.
Klara's family is quite big and tends to meet up every now and then, but Klara tends to skip the big events and goes to smaller ones, specifically the ones her aunt tends to visit, bc she has always been like Klara's babysitter and taight Klara lots of things. They work in the same department, though in different places and positions, and like to tell each other workplace rumors.
Klara has several cousins too, but they don't talk that much. She doesn't really know her grandparents, tho :/
She is veeeery close to her group of friends, I'd say even cmoser than she is to her family, bc they seem to be much closer and they aren't as strict about everything. :]

Molly I would like to humbly thank you for writing Mary Sharma (in general) but especially as a good cook . I was inspired to try Indian cuisine for the first time and I have honestly seen the light
I have to say, I see Mary Sharma as the most Mum™️.
And her love of cooking comes from my Mum who is always desperately trying to feed people. She invites my friends round for brunch. At 10am she turns to you and says
“Do you want a toasted sandwich? I’ll make you a toasted sandwich.”
That toasted sandwich will have 4 varieties of cheese on it.
Mary is just a nurturer. And Anthony has to stop himself from showing up at his future mother in law’s house pretending to be weak with hunger so she’ll make him some Chana Masala. He’s a hungry boy, and he can’t stop thinking about how he rejected taking home the left over two nights ago.
But also imagine Kate being like “I can make that for you.”
And Anthony just sits there like “No offense, you’re an amazing cook, but um- your Mum’s is just-”
“You’re sleeping on the sofa tonight!”
“Don’t be mad! She’s had longer to work on her recipe!” Calling after Kate as she walks away “Kate! Do you think Mary still has the left overs?!”
