#lime and the coconut

When I was a kid my dad got me an mp3 player as a way to connect with me via music. He filled it with a bunch of classic songs from his youth, songs he thought I'd like, and a list of songs I requested. Somehow, Lime and the Coconut ended up on my mp3 player three times in a row.

When I heard the song I HATED it, and complained why he'd put it on. Apparently it had just slipped in (three times) while he was choosing other songs. Since I didnt know how to remove songs, I just skipped it whenever it came up, but I ended up hearing it a LOT. That little mp3 player was beloved to me.

Eventually I went from elementary school to middle to high school and learned to change the songs on it, and as I was adding a bunch of modern music, I saw the three Lime and Coconuts and hesitated, wondering if I should finally delete my old nemesis. I ended up keeping them because the nostalgia was so strong. My mp3 player just wouldnt be the same if every time I listened to those oldies I wasn't forced to skip Lime and the Coconut.

So now that dumbass song evokes strong and complicated feelings of nostalgia in me every time I think about it. That stupid dumbass song. And I'm kind of attached now.

Ingredients:

juice of 1 lime

large handful of mint leaves

1 tbsp simple sugar syrup (such as Monin)

100ml coconut rum

50ml coconut cream

100ml chilled soda water

To garnish:

pomegranate seeds

mint leaves

Step by step:

Half-fill two glasses with ice. Put the lime juice and a large handful of mint leaves in a cocktail shaker and muddle together. 

Add a large handful of ice to the shaker and pour in the sugar syrup, coconut rum and coconut cream. Shake well until very cold, then strain into the glasses. 

Top up with 50ml soda water per glass. Garnish with pomegranate seeds and extra mint.

posting a lot this hour but in my defense i made the worst taco soup this planet has ever seen. made doubly bad by the fact that the grocery store only had vegan sour cream and i was like well it's probably the same, vegan food has made a lot of advances NO BC IT WAS COCONUT AND CASHEW. HAVE YOU EVER EATEN COCONUT AND CASHEW FLAVOR WITH TACO SEASONING. NOT GOOD. the worst part of all is it was in a crock pot so now i have one million days of bad taco soup to eat
