Vegetarian Bibimbap (비빔밥) with Crispy Tofu. Sunday Dinners with Kaja. Sunday dinners have become our version of meatless Mondays. John and I felt we were engaging in a high consumptions of meat products and wanted to slow it down. Sundays have also become the day we spend with our Goddaughter, Kaja, since her return to college. We greatly enjoy our time with her. Kaja is a vegetarian. My belief as a host/cook is always cater to dietary needs of whomever I am cooking for. In addition, Sunday dinner with Kaja has helped us with having vegetarian meals during the week. ••••••••••••••••••••••••••••••••••• Vegetarian Bibimbap (비빔밥) with Crispy Tofu. Crispy Tofu is @halfbakedharvest was oven baked and marinated in a gochujang (고추장) marinade. I made Korean pickled radish by @mykoreankitchen The Bibimbap (비빔밥) my source as with many of the Korean dishes I make is @koreanbapsang. I found @koreanbapsang’s blog four years ago. It is the wonderful mom’s blog, I learned to make Egg Fried Rice (Gyeran Bokkeumbap). Whenever I stray from this recipe, John will say this is not the real one, I like the original. @koreanbapsang’s breaks own how to cook each vegetable. I love her treatment of each component of the dish. Her Bibimbap sauce made with gochujang can always be found in my fridge. Hyosun is one of my favorite Korean chefs. **Side Note: when cooking ethnic dishes always try to find a chef/cook of the same ethnicity of the dish. My pierogis are from a Polish women’s recipe. Plov from a Uzbekistan woman. Scallion pancakes are from @chinasichuanfood. I honestly don’t want the Americanized version of ethnic foods. Support multicultural/Ethnic food blog writers. Some other kimchi recipes that I like (beside Maangchi) are Koreanbapsang's (she has a website and possibly youtube too), there are a lot of different kinds and a vegan version ! Thefoodietakesflight has a very simple/easy vegan version too that you can tweak a little if you want :)

Galbitang, Beef Short Rib Broth, with Korean radish (mu) and sweet potato noodles (dangmyeon) made easy with IntantPot. It's a special dish since beef short ribs are an expensive cut of meat. Tự làm bánh gạo ngọt kiểu Hàn Quốc ngon miệng và giàu dinh dưỡng
Với các nguyên liệu quen thuộc như bí đỏ, đậu đen, táo tàu sấy, hạt óc chó, hạnh nhân... bạn có thể tạo nên món bánh gạo ngọt không chỉ hấp dẫn mà còn rất tốt cho sức khỏe. 
Bánh gạo ngọt theo công thức của người Hàn sẽ là món khai vị hoặc bữa ăn sáng tiện lợi, nhiều dinh dưỡng cho cả nhà.
Nguyên liệu và dụng cụ
1 bát đậu đen hoặc đậu đỏ
1/2 bát táo tàu khô Hàn Quốc (có thể thay bằng nho, việt quất, hồng khô...)
1/2 bát bí ngô
10 hạt dẻ lớn
1/2 bát hạt óc chó
3-5 bát bột gạo
3-4 thìa đường
1/3 bát bột hạnh nhân (tùy thích)
Xửng hấp
Cách làm
Đậu ngâm trong nước ấm khoảng 3-4 giờ cho nở bung. Táo tàu rửa sạch, bí ngô đem gọt vỏ, cắt miếng nhỏ như trong hình rồi luộc qua cho mềm. Hạt dẻ luộc chín rồi bóc bỏ, cắt làm 4 miếng. Quả óc chó bóc vỏ để riêng một bát.
Đổ bột nếp vào một chiếc bát hoặc nồi lớn, thêm gạo, bột hạnh nhân và 2 thìa nước rồi trộn đều tay. Tiếp tục cho đậu đen, táo tàu, bí ngô, hạt dẻ và quả óc chó vào cùng bột và trộn đều.

Chuẩn bị xửng hấp tre, đặt một miếng vải xô ướt lót phía dưới rồi đổ bát bột vừa trộn vào. (Ảnh: Koreanbapsang)
Đun sôi nước để hấp bánh, hấp trong 30 phút đến khi hơi nước khiến bột chín và đóng thành khối bánh rắn chắc.
Đợi bánh nguội thì tách bánh gạo ra khỏi lớp vải. Làm ướt tay trước khi chạm vào bánh đễ đỡ dính.

Nếu ăn không hết bạn có thể bọc kín bằng màng bọc thực phẩm và để vào ngăn đá tủ lạnh. Trước khi ăn chỉ cần để ra ngoài khoảng 1 tiếng hoặc bỏ vào lò vi sóng để rã đông.
