Do you have advice on the art of sandwiches? I feel like i my best sandwich at home is still leagues below the worst sandwich ive bought at a restaurant
Since sandwiches are infinitely variable, I'm going to assume you're trying to make my favorite sandwich: the Turkey Club, sandwich style not sub style.
Your goal is to MAXIMIZE FLAVOR.
Thicker bread. Standard slice size for bread isn't going to cut it, here. You want thick-slice bread.
Sourdough, or French Bread not 'White' bread. You want it chewy, with a thicker crust. Hearty.
Extra-Heavy Mayo. Restaurants do not use standard mayo from the grocery. Extra-heavy mayo has a higher ratio of egg yolks, giving it a richer flavor and thicker consistency for both spreading and using in tuna or egg salad. It's also more of a warm ivory color, rather than 'white.'
Instead of yellow deli mustard, try a ground-whole-seed mustard. It has a spicier, richer profile, and a little more vinegar.
Be generous with condiments. You're making a good sandwich, not cutting calories.
SEASON your sandwich. Dust the vegetables - salt and pepper goes a long way! Dried oregano, onion powder, garlic powder are also champs. My fave is to take a spicy blend (like a fajita seasoning blend) and sprinkle generously over the mayo before adding other stuff.
Lettuce CRUNCH is important. Include the pale crispy parts in your sandwich, not just the soft green leaf parts. Use romaine and arugula, not 'iceburg' lettuce, which has next to zero flavor.
If you're using texture leafy greens like arugula, toss it in a vinaigrette before piling it onto the sandwich. The vinegar zing makes a statement.
The tomato should have a strong flavor of its own. Salt & pepper on ripe tomato is heavenly. Make sure your seasoning hits the tomato.
If you're adding onion, make sure the slices are super duper thin-sliced. Like, mandolin-thin. Translucent-thin. Red onion is king.
If you want it toasted, make sure the cheese and meat gets hot, but the greens/tomato/onion is added afterward so it stays cold and crisp.
Don't be afraid to STACK IT TALL. CRAM IT FULL! How many sandwiches from restaurants feel impossible to fit in your mouth at first glance? Most of 'em. Make it big. With the meat, especially, they often CRAM the meat in there. No single-layer of ham slices here.
It's ok to MIX MEATS. Fry up some bacon (extra crispy!) or crisp up some pepperoni and layer it with your turkey.
Once you're done, wrap your sandwich in parchment paper (not WAX paper, there's a difference), then slice in half. By wrapping it, you force all the ingredients to smush together and start blending flavors. This makes 'em all a little better and stops them from sliding around, so it's easy to get a bite with every ingredient at once, and stops the sandwich from actually falling apart.

for anybody who wants to make this, this is what's in here:
Tikka Masala sauce from heb
2 or 3 Tilapia filets
5 Roma tomatoes diced into pieces (I remove the seeds and stuff, so it's slightly less goopy, but you don't have to do this if you don't want to)
i used olive oil bc it was one of the cheaper options but you don't have to
I bought like 5 seasonings bc I read a recipe but really what you need is probably tikka masala seasoning, ginger, cayenne pepper. maybe turmeric. Also coriander or cumin.
I put a little oil in the pan, cooked the tomatoes on warm while I baked the fish in the oven for like 30 minutes on 325 degrees F.
Season the fish the same as the tomatoes and the sauce
I usually taste test it as I go to see if I need to adjust the seasoning
I used instant rice instead of loose rice because I'm lazy and I don't have time for it.

It's getting chilly again so I'm gonna share a cheap hearty easy recipe I like to make in winter
1 tube-thingy hot & spicy sausage (my mom always used Jimmy Dean; I've used turkey sausage and spicy Impossible sausage, your pref)
2 russet potatoes, chopped into bite size pieces (you can use red or gold potatoes, but they aren't as cheap and take a little longer to cook)
1 can black beans, undrained
1 can kidney beans, undrained
1 16 oz can tomatoes, stewed, whole, diced, whatever (I like the fire roasted kind)
1 white onion, diced (yellow is fine too)
2 or 3 cloves garlic, diced
1 or 2 bay leaves
chicken broth or water (I combine them), enough to cover
salt, pepper, thyme and herbs to taste
Sweat the onions in a pan with a little oil or fat; add garlic, add sausage. Stir frequently til sausage is crumbly and brown and onions are caramelized. Throw EVERYTHING in a pot. Stovetop at medium heat or crock pot, whatever. Just dump it all in there. (stir it up of course) I prefer crock pot bc less supervision. Cook til potato chunks are soft. It's good out the pot but way better after 24 hours in the fridge, plus you can skim any excess fat off the top after it's been refrigerated.
Ideal if u live alone for bean reasons but also bc it runs me $7-10 to make 5~6 servings depending on where I shop (but we already have the herbs/bay leaf)
anyway it's good and SUPER fuckwithable if you need substitutions.

Dracula Daily Prep: Gather Your Paprikash!
It's that time of year again. Even as we speak, Jonathan Harker has departed for Transylvania, and the unhallowed halls of Castle Dracula. And as he makes his way towards that foreboding country, he will encounter a singular, most enticing of dishes: Paprika Hendl, or as we might know it better, Chicken Paprikash!
This traditional Central European dish explodes in popularity each May as we all gather around our virtual mess hall to enjoy the spirit of this most influential of gothic novels. Perhaps you yourself are considering throwing together a pot this year? Well, if you are, let this be your guide.
So, first, let's discuss the most important of the ingredients here: authentic hungarian paprika. Now, the recipe I first used last year called only for Sweet Paprika, but I personally found that version to be a little bland. I'm remedying this by adding some Hot Paprika as well. However, this is just my personal experimentation. Hungarian Hot Paprika can in fact be very hot, so if you're not comfortable with anything too spicy, feel free to opt only for the Sweet Paprika.
(Both of these I had to order online.)
Next, is another very important addition. As youre gathering your basic cornerstones of cooking (namely yellow onion, roma tomato, and garlic for this recipe) you may find yourself passing up on something that could vastly improve your dish. I'm talking, of course, about Hungarian Wax Peppers. These peppers range in heat, from meak and mild to slightly hotter than you'd average jalapeño. As per instruction, you should only use one. But on my end, I found the single pepper to be a little underwhelming, and I had trouble picking out it's flavor. So, this year, I'll be using two of them.
I got these from Central Market, an upmarket gorcer on Westheimer. They're a cousin of HEB, and you can find one or two in every major city in Texas. If you're elsewhere, try an alternative like Whole Foods, or try to find a European or International food market in your area.
Next, let's talk chicken. You can't have Chicken Paprkiash without the chicken, after all.
You're going to want to go with dark meat cuts for this. Traditionally the dish would use a mix of legs and thighs. Personally, I suggest using only the thighs, which you'll want to get bone-in and skin-on. The thigh provides a flater surface for browning than the leg, as well as more meat.
(A note on food safety, raw chicken will usually only last 2-3 days in the fridge. So you'll want to grab that fairly close to the day you're actually cooking this. If not, you can do what I'll be doing, and sticking it in the freezer until about 24 hours before I start cooking.)
So, as you gather your meat, produce, and spice you're probably asking yourself, "what on Earth am I going to be eating this with?" And the answer to that is spaetzle! A popular dumpling present in lots of Central European cooking, this is exactly what you need to tie this all together.
Now, while you should be able to find some in the international isle of most major grocers, you might also have to visit an international food store, or perhaps something more upmarket. If none of these options work, then there are a variety of other side dishes that work just as well. Egg noodles are a very popular choice, and in my very American attempt last year, I found that mashed potatoes work especially well.
Now that you've got all these things together, you're very nearly done. All that's left is the thickener. Paprikash is thickened using a blend of flour, heavy whipping cream, and sour cream. We'll get onto preparing this mixture in my post on actually cooking the paprikash, but until then, acquiring them should be a cake walk at any place food items are sold.
Now that will conclude the actual grocery list for just the Paprikash itself, but I do have one more pointer on how to really liven up this meal. Now, if you're under 21 or if perhaps you take after our dear, depraved, beloathed Count
Then you can skip this next bit. As a wine professional myself, I find that a well paired glass can add a tremendous flare to nearly any already great dinner. In the case of something like Chicken Paprkiash, and keeping with the Central European theme, I could hardly think of a better match than a good German Pinot Noir, also known as a Spatburgunder. Pinot from Germany typically has a very light body and a refreshing acidity that plays very well with the rich and creamy sauce of Chicken Paprikash. The palate of earth and red fruit should always pair nicely with the smoke of the paprika, as well as being a general good partner for any chicken. I myself am going with this 2020 Rheingau from August Kesseler.
And with that, we are done! Hit those checkout isles and make sure to get home before dark. Terrible things have sway over the world once the sun has gone down. So if the crowd does keep you locked up until nightfall, make sure to graciously accept any crucifixes given to you by kindly, elderly grandmothers and inn keepers. My mother's bf had a fairly major surgery (he's fine and recovering well DW) and he's going to be housebound for his birthday this year, so I've been enlisted to come up with a fancy birthday meal for the special birthday boy that's primarily fruit and veg, sweeter than savory, and is something he's never had before.
Bc I'm making watermelington. It's beef Wellington, but watermelon. bc my mom only found out recently you can use watermelon as a tuna substitute. And I know that you can substitute most higher quality beef cuts with tuna or salmon.... usually. Anyways the idea fascinates her so I'm hoping to use that for bonus points.
Now he's off his ass on pain killers so I can't like. Ask him if he's ever had something before. so to meet my brief I've decided to just. commit a novel hate crime against the British I guess.
Anyways. I'm writing this because I need to walk myself through this process and think it'll be surreal enough to be worth taking y'all along for.
So, Beef Wellington. In its most basic bitch arrangement is a beef tenderloin wrapped in prosciutto/really thin bacon, with a layer of mushroom and onion mush, that has been further wrapped in mustard slathered puff pastry.
We will be ship of Theseusing this. bc beef Wellington is like. the opposite of what he wants. Which is why it's funny.
Puff pastry-> it's still just puff pastry
this one doesn't have to change (aka I can't be fucked to do pastry prep and I'm just gonna use store bought it's Fine.)
the prosciutto is also just going to be prosciutto.
Thin meat
Beef tenderloin-> watermelon,
Tbh this is a pretty 1 to 1 substitution. I'll bake the slices at like. 250-300 for an hour or so ahead of the rest of prep to dry it out a bit. bc you can't like. Sear watermelon to seal in the water like you can beef. By definition it's a very wet fruit (like me when I fall into the lake). Ill Add salt and chili and lime juice while baking maybe. this is the easy part
The mushroom mush-> salsa done bad style
As the word mush implies, this is meant to be a very soft mix. It adds a lot of nuttiness to the wellington that rounds out all of the salt from the meats. I'm replacing it with white person salsa(the birthday boy can't handle spice). Tomato, lime juice, parsley, avocado, cucumber, feta, and maybe mango so I can have an excuse to have a lil mango treat. I said I wasn't making it spicy. I'm still putting a bit of chili in it. bc it'll be better like that. This is also a ridiculously wet bit of mush, Even the original mushrooms have too much water. I'll figure something out.
Mustard -> jelly
He lives in a big city. those preserve sections are massive. I'll find a weird one. maybe apricot.
Prep:
We're in the mind palace kitchen, I have not attempted any of this. We're just thinking real hard about it and I'll edit as needed on the day and post results.
The watermelon
Preheat oven to eh. 300f? We want low and slow to dry things out without it taking a year. but idk what his oven is like. If it's gentle I'll bump it up another ten-twenty.
Slather some watermelon slices in salt chili powder and lime juice mixture.
bake for 30 min on a wire rack or directly on the oven racks (after cleaning thoroughly) if he doesn't have a wire rack. with a drip try underneath to catch the drippage. check frequently. Have one slice that's for being poked to see if it's approaching being meat. Bake longer if needed.
Salsa bad style
chop everything up and add it to a pan with some oil in it. Tbh I don't think the type of oil you use for cooking matters if you're not like, getting near any smoke points. Most people can't tell the difference unless you made your food bland as hell.
Anyways there's some wildly different moisture contents on the list so there has to be an Order to cook off as much water as possible without getting yucky.
Tomatoes and cucumbers go in together with some salt to get the cucs softening, then the mango chunks and lime juice. Once most of the water is gone the avocado feta and parsley can go in. There is a good amount of water in avocados but they're delicate and don't pan fry well, so we're just going to ignore their water crimes and hope for the best. They just need to be evenly mixed through the rest of the mush.
Putting it together
lay out the puff pastry, cut into sections to wrap each watermelon slice individually with.
Slather in jam
Take the prosciutto and lay it out on half of each section of the pastry,
spoon the salsa onto that
Melon
Another layer of salsa
another layer of thin meat
Fold the pastry over the top and pinch the edges bc watermelon slices are not a rollable shape and I don't want to carve a watermelon into a tube for this because that sounds irritating.
Brush with egg wash and more parsley
Cook in oven following the pastry's preferred temp and time. it's fucking watermelon, you're not getting ecoli from it.

BUNJY RECIPE: BERBERE POTATOS DELUXE (spicy)
before we get started, you are going to need two specialty things for this recipe: berbere spice powder and an oven-save saucepan, or dutch oven. berebere is a chili blend you can get online if you can't find it near you- I use this one!
ingredients:
2 shallots, cut into strings (I slice the bulb vertically along whatever plane leaves me with flattest halves, then thinly slice the halves. the slices will fall apart into strings on their own during cooking)
1 red bell pepper, diced
2ish pounds of thin-skinned potatoes sliced thinly (think yellow or red- I chop each potato into rough thirds and then slice the thirds vertically so there's a flat surface to keep it stable while I'm slicing)
5 garlic cloves, minced
1 can diced tomato with its liquid (I used fire-roasted)
1 1/2 tbsp berbere spice
3/4 cup water
salt to taste
pepper to taste
olive oil
first, preheat your oven to 400 F. heat your cooking vessel on the stovetop over medium heat until it comes up to temp, then add a glug of olive oil and then the shallots and red bell pepper. stir it around and let it cook until the shallots are totally broken apart into strings and are totally translucent, then add the garlic and stir around for another 30 seconds or so. Next, add the diced tomato and stir around to keep the garlic from burning, then add the water and berbere spice and mix well. (I put the water in the empty tomato can and swirl it around before adding it to get the last of the sauce in there) also add the salt and pepper. cook the mixture for maybe 10 minutes on medium heat until it thickens significantly, then turn the heat down to low. scoop out a cup or so of the mixture before moving to the next step. next, add the potatoes in maybe three batches, stirring well in between batches to separate the slices and coat them all with sauce on both sides. once all the potatoes are added, add back the cup of sauce you stole earlier on top of the mixture and spread it out evenly, making the potatoes into an even layer within the pan with a thin coating of sauce on top. before this next bit where you put the pan/cooking vessel/whatever in the oven, you can save yourself a future headache by using a wet rag or paper towel to gently wipe off any sauce that's spattered on the rim, down to about an inch or so above the mixture. this way those spatters don't burn to charcoal! once you've done that, cover with a lid or aluminum foil and put in the oven for one hour. at the end of the hour, take the cover off and then bake naked for another 10-15 minutes. and then it's done!

- Obviously you didn’t expect to fall for a guy who is shorter than you, but obviously Akashi has a huge personality and it doesn’t really matter
- You are almost the same height and it has a lot of perks: for example it’s so easy to get a quick kiss without a lot of effort
- Akashi loves to kiss your neck
- No one dares comment about lack of height difference
- Akashi actually encourages you to wear heels if you like them, because he has enough confidence to not get insecure about this kind of stuff, which you appreciate a lot
- Also all of his clothes fits you like a glove, which is a huge perk especially with the fancy expensive stuff you can wear as your own
- You sometimes kabedon him as a surprise when you are alone
- It never ends up well for you (but spicy edition)
Kagami
- Kagami just like Midorima has one braincell and he wouldn’t even notice that you are tall until someone says it out loud
- One day he saw you standing next to Kuroko and he yelled “oh you are taller than Kuroko? You should play basketball”
- One braincell golden retriever
- Just like Aomine he tries to persuade you to play basketball with him (basketball ball for brain I swear)
- He has this reflex to grab your waist and pull you closer whenever there is a crowd
- Loves it when you lay down on his shoulder and fall asleep when you watch a movie
- Loves it when you snuggle your nose in his collarbone, he gets so red
- He is not big on pda but when no one is looking he would sneak a tiny cheek kiss (he actually loves tiny kisses, as well as steamy make out sessions)
- If someone says you look like a model he would get hyped up
Takao
- Takao is a cheeky boy, he would for sure be the one flirting with you till you fall for him
- He fell first he fell harder and he would do everything to convince you to date him even when he is slightly shorter than you
- When he succeeded he couldn’t believe it and he feels like he is the happiest guy on the planet
- The Greenest Flag in here, he treats you like a queen
- Flexes about you constantly, how beautiful and amazing his gf is
- He loves it when you wear heels, and he would for fun pout and ask for forehead kisses like a baby
- HE would kabedon you for fun to make you blush
- Loves hugging you from behind and kissing your nape
- Also he would playfully bite your shoulder or whisper dirty thing to your earlobe just to make you blush out of nowhere
- Honestly just marry him already or I will

One of the fun things about a Quiet Christmas is that ex-family food traditions can be observed, ignored or played with, and on different occasions @dduane and I have done all three.
We've stayed traditional with roast turkey (a crown roast not a whole bird, easier for two to consume - or slice and freeze - before boredom sets in) as well as non-traditional roast goose and, like this year, roast beef.
We've played with non-traditional turkey as Oaxacan mole poblano, and we've had Sauerbraten, venison, and even - with some special pleading at a Dublin game butcher - wild boar.
We've completely ignored the carrot-and-parsnip mash which - in my case anyway - always sat untouched in air-rescue-orange splendour on the side of my plate, because I hated the stuff.
Instead we've discovered the delights of roasting root veggies, a vast improvement on mashing them and, given there's often meat and potatoes already in the oven at Christmas, makes a lot of sense.
And every now and then there'll be a nod towards the tomato soup which invariably started any Christmas dinner from as long ago as I can remember until I moved out.
I like tomato soup in all its forms, so that wasn't a problem like the C&P mash, and as I got more adventurous the soups did too - but not at Christmas, because of Tradition...

Soup wasn't planned at all this year, but happened unexpectedly when DD saw a recipe on-line - Spanish tomato soup with smoked paprika potatoes - and decided to try it.
This reads like a variant of Salmorejo, a cold soup like gazpacho, and having made it I think it would work well chilled in summer. In that case I'd either cut the potatoes into very small dice and fry them completely crispy, or slice them, fry them, let them cool and THEN dust them with smoked paprika / pimentón picante. Just a thought...
Because the decision was a bit spontaneous, i.e. after we'd done our last, very very last, bit of shopping, several ingredients were missing. We had no sherry, olives or orange juice, and neither of us could see the sense of two kinds of tinned tomatoes if the end result was going to be blended smooth.
It's a US recipe, so if "diced" and "crushed" have different flavours that makes sense. Here tinned toms are either whole or chopped, and I've never noticed them tasting different enough to matter.

DD's IBS meant we also left out the onion and garlic, but I remembered we had a proper Spanish chorizo in the freezer, so that was defrosted, diced and added for a ten-minute simmer after the blending but before the potatoes.
The result...
...was superb.
The broth was rich, complex, warming and tangy, the chorizo was meaty and savoury, the paprika potatoes were spicy and just faintly crunchy along their edges.
Next time we'll lay in the missing ingredients and give them a try - sherry in particular Does Things For Soup - but our tweaked-by-necessity version was seriously good, and I can think of yet another tweak.
Adding chopped sun-dried tomatoes is getting two thumbs up from my Mind Palate, and there's at least one jar in the pantry, so I've a feeling there'll be another batch of this soup before too long... :->

Avatar Yangchen's Favorite Foods
My winter break boredom combined with my chronic writing procrastination have combined to form Yangchen Thoughts at never before seen levels.
AKA, I was doing a bit of research into potential Air Nomad cuisine and suddenly found myself needing to know what Yangchen's favorite foods would be. So here we are.
Most of the foods listed will be primarily of Tibetan origin, considering that is the main cultural inspiration for the Air Nomads. However, because Yangchen spent a large portion of her life in different Earth Kingdom cities, there will be some dishes taken from other cultures as well. I will be providing links to as many recipes as possible! (Note: some of the recipes themselves are not vegetarian, but could easily be modified so to fit with the Air Nomads' vegetarian lifestyles).
Now, when it comes to food, Avatar Yangchen strikes me as someone who prioritizes function over flavor. Obviously she prefers her food to taste good, but she's more concerned with what said food can do for her, convenience-wise. She prefers foods that can be eaten on the go, snacked on while working, or downed relatively quickly. As well, she wants her food to be on the filling side, which lessens the amount of time she has to spend eating. She's quite pragmatic about her food. (Is this a good thing? I suppose that's up to you to decide). Finally, her cooking skills are pretty minimal, so most of her favorite dishes are quite simple to make.
Most of this post will be under a cut because, as per usual, I can never make anything short :)
Butter Tea
This is a very traditional Tibetan drink, and it's one that Yangchen would have grown up drinking. It's actually mentioned in The Dawn of Yangchen! It's a drink she would find very comforting, as well as filling due to it being nearly half butter.
Breakfasts
Tomato Egg Soup
It's quite literally what it sounds like. This is a breakfast dish, probably very common in the Earth Kingdom and/or Fire Nation. It's simple to make, but hearty and warm.
Shom-Dae - Rice Pudding
This is a rice pudding made with yogurt. It can be eaten with fruit as a filling breakfast, or sweetened to be made into a dessert. Yangchen doesn't have much of a sweet tooth, so she prefers this for her breakfast.
Snacks
Bhobi
This is basically a Tibetan burrito. A soft, thin flatbread wrapped around various fillings. Typically these can have anywhere from 3-5 different fillings, consisting of things such as stir-fried vegetables, noodles, eggs, you name it. Yangchen would absolutely be a fan of the versitility, and would likely make these to use up leftovers for a tasty snack.
Shogo Khatsa - Spicy Potatoes
As the name implies, this dish is made up of spicy potatoes. I think Yangchen would actually be a huge fan of spice, and as such would totally love these. She would probably also dip them in Sepen, which is a Tibetan tomato-based chili sauce.
Various Street Foods
Yangchen would love trying local street foods at all the places she visits, but she has a few favorites. Fried tofu, spring rolls, and spicy cucumbers. They're all very easy on the go snacks.
Onion Tingmo
This snack is definitely more of a comfort food. These are a type of steamed bun with green onions folded in, and I think these would be Yangchen’s guilty pleasure; the kind of food she could eat for breakfast, lunch, and dinner.
Meals
Tenchung - Lentil Soup
The Air Nomads would certainly be fans of lentils, considering their high protein and iron content. This is another very simple soup, but would be very comforting and nostalgic for Yangchen - as well as quite filling.
Mokthuk - Momo Soup
Momos are Tibetan dumplings, which Yangchen would enjoy eating on their own, but when added to a hearty soup the dish is called Mokthuk. As you're probably starting to figure out, I think Yangchen is a pretty big soup fan. Just like in the attached video, Yangchen would load her soup up with chili oil for added spice.
Pishi - Tibetan Dumpling Soup (also known as "Lemur-Face Soup")
This soup is extremely similar to Mokthuk, but the dumplings are made in a different way and more resemble wontons. This dish is often colloquially referred to as "Lemur-Face Soup" by Air Nomad children, as the folded dumplings resemble the faces of flying lemurs. Because the dumplings for this soup require a bit of extra effort, it would have been a rare treat growing up. Yangchen loves it both for the flavor and the fond memories it brings.
Desserts
Tenshi-Bhakthuk
This is a fried pastry covered in a sugar syrup that is typically served at New Year's celebrations. They are small, crunchy little snacks that Yangchen would love eating each year at the celebration.
Bulug
The best way I can describe this is that it's a Tibetan funnel cake. This is also served at New Year's celebrations. When Yangchen was younger, she and her sister Jetsun would always get one of these to split. It's a bittersweet memory now, but she still absolutely loves the food.

And there we have it! A whole selection of foods I think Yangchen would enjoy. Feel free to use this in fics, art, headcanons, whatever, and your own as you see fit!
Due to all this research I've done, I also have lots of ideas for foods that could be added to the Air Nomad cuisine as a whole - who knows, maybe that will become a separate post of its own!
Pretty much all recipes came from Palden's Kitchen ; would absolutely recommend checking his channel out! His videos are very high quality and his voice is incredibly soothing, honestly I want this man as my grandfather now.
