Hello and Good day~
Yesterday was a busy day! As I cant grow/process everything we eat (yet! Someday maybe the majority, but until then I'm good with growing as much as possible.) it was grocery shop day. Then Did meal prep for the week, I usually do a short bit of meal prep on grocery day but I tried to be a bit better with it this week to try and save time so I can get some pattern work and sewing done later. :)

The start of the meal prep, veggie portion. I like to wash my produce with water and baking soda. (I save the rinse water for the flower patch) ratio for me is a half sink of water, 2 tablespoons of baking soda. Mix to dissolve.

Pictured~
shredded cabbage, carrots (shredded, noodle sliced, coined), mushrooms (sliced and cubed), diced tomatoes, bell peppers (diced. Julienned, coined and a few snacks), jalapeno (coined and diced), onion (diced and frozen), honeydew, potato salad

Salsa (tomato, onion, pepper, jalapeno), dumpling mix (ground pork, minced cabbage, minced carrot, onion, ginger seasonings), bag of veggie soup start.

Fermented fridge pickles (pickle solution, cucumber, onion, jalapeno, pickle seasoning)

Start of apple cider vinegar. I'm going to try and make it again for personal use.
~~~~~~
Super small garden goodies~
Our first radishes of the season!
Plus this lovely web I spotted this morning
As well as an update on the sweet potato flowers
The blooms don't last long, ive noticed most fall off the next day.
I did a little online sleuthing and like regular potatoes, sweet potatoes can make seeds (though vines are the best way to propagate them) It's advised that the seeds might not really produce anything decent but I admit I'm curious more to see how it grows now and goes through seed development. If they produce seed I'll save them for a future grow experiment and experience.
I'll likely be pinching the flowers off from the other vines so they continue producing vines and greens. I've liked having a form of fresh greens available for soups, stirfrys and omlettes.
That's it for now, I'm off to do some critter care~
A visual waxing poetic about the meaning of life through cooking in a home setting.
The Makanai Cooking for the Maiko House (Netflix) based off a manga by Aiko Koyama.
A warm, tender, and joyous delight that will have you running to your kitchen... if you love to cook for people you love that is.
An intimate look at Maiko, their "house mothers/Okasan" and some Geisha (in their respective quarters) living behind closed doors of their beloved okiyo/yakata, 'Saku House.'
We get to explore the feelings, secrets, and desires of these budding women and wise guardians with such delicate and comforting storytelling and direction. It felt so genuine even with the dubbing.
I've always found cooking for the people I love therapeutic. There are lessons that come to you while cooking meals I feel the same about caring for houseplants yet cooking is something usually done more often breakfast, lunch, dinner, and dessert/snacks.
I love how she stepped into her purpose and this story expressed that it can be filled with bits of fear or uncertainty, but once you find your footing and follow your heart you are sure to be lead to a life you can smile about. The way Kiyo felt like she was "at home" with her new role in life right near to where her heart was. Her passion wafted throughout the okiyo with grace. She faced challenges swiftly and with determination for the hearth of the okiyo to be protected and blessed. Whenever opportunity came as a learning moment be it a recipe, different ingredients used in that district versus her home district, or what type of soup is even used to aid the ill, she was open and willing to hold space for growth, for the greater good of her experience as Makanai.
Enjoy and Okini!
Broccoli Cheddar-Stuffed Chicken with roasted garlic carrots and zucchini was an interesting new dish to follow on the heels of an old standby. It included a couple things that I seldom (but not never) encounter and even less often see in the same recipe. The first of these is stuffing the main protein with a cheesy mixture. Even among other stuffed meat recipes, this one was unique in preparation as it had more than just cheese going into the chicken. The broccoli was minced, microwaved, and finally mixed with the cheddar and cream cheeses (and salt and pepper). Heating the broccoli helped make the cheese filling mix evenly though the slightly melted result of cheeses made it a little harder add into the butterflied breasts. The second uncommon recipe feature was roasting the garlic in a little pouch of foil and oil instead of mincing for addition elsewhere. The zucchini was separately tossed with olive oil and salt while the carrots and garlic roasted. Once the garlic was roasted it got smashed down into a paste and added, along with the carrots, to the zucchini and tossed with some lemon juice and zest. Everything went back into the oven for more roasting and clever readers might spot some foreshadowing that I missed until doing post on these pictures later. I didn't really have a plan for what to pair with this dish. It could've gone alright with a Chardonnay or maybe a Kolsch style beer but I didn't have either of those. What I did have was a Rosé that had been taking up space in the fridge. That's not to malign the Chateau Gigery Cotes de Provence Rosé (2021) though, it was a very bright and refreshing glass. It went surprisingly well with the veggies and helped cut through the cheeses in, and on, the chicken.
How to Use the Pinch Grip with a Chef’s Knife Like a Pro
What Is the Pinch Grip?
The pinch grip is a way to hold your chef’s knife that gives you more control. You place your thumb and index finger on the blade itself, just in front of the handle. The rest of your fingers curl around the handle. This grip is popular among chefs and culinary schools.
Why use the pinch grip? Because it helps you move the knife with ease. Your hand becomes an extension of the blade. This leads to cleaner cuts and safer movements.
Other grips like the hammer grip or handle grip don’t offer the same control. They keep your hand too far from the cutting edge.
With most of the classic burger meals migrating to the "Culinary Collection" section on Home Chef, the remaining meals (that fall somewhere within the sandwich alignment chart) are often in the realm of the Bacon Jam Steak Sandwich with roasted potatoes. I was surprised to find this recipe remained at the standard meal kit tier given its inclusion of bacon. Bacon on top of another protein has often come at a premium. The seasoning for the potato wedges was black garlic pepper which I was happy to finally get. The first time I had a recipe that included this spice, it didn't actually include the pack of spice in the bag of ingredients. I tried to find some in the store and it was sold out so I went without. This time, however, I was able to experience the elusive black garlic pepper flavors. Not bad. Kinda earthy and peppery, which was unsurprising. Now, I can substitute more easily in the future if it is, again, omitted. The "Bacon Jam" was created by caramelizing onions and then reducing down with water and brown sugar. The recipe had the bacon and onions go in at the same time, but caramelizing onions takes far too long so I started them much earlier. They are even already cooking in the "prep" shot. They ended up a little overdone but I managed to salvage enough for both sandwiches. The steak strips themselves were rather basic. Salt, pepper, and reducing down with some water and demi-glace. I'm more comfortable letting the steak strips sit and sear than in the past and the tongs I use for pasta are quite adept at separating and flipping the floppy steak strips. This allows me to get a nice sear while still orchestrating an even doneness. While not technically a hamburger, I thought an over-easy fried egg would do well as an addition. The combination of the bacon/onion jam, the tomato slices, and the steak plus the egg yolk was quite nice. I even used the potato wedges to sop up what was left. Pairing for this sandwich was a Great Lakes Hazecraft Hazy IPA. I wanted something refreshing and hoppy to go with the meal but not an IPA that was too bitter since the overcooked onions ran the risk of adding their own bitterness. Worked out about as well as I could've hoped. This sandwich was close enough to fall into the "burgers and beers" category of classic pairings.
