These Vegan Stuffed Butternut Squashes are a fun and tasty holiday dish. They are filled with a savory quinoa mixture that is full of vegetables, cranberries, and pecans. It makes a lovely centerpiece for your Christmas table!
Ingredients: 2 medium butternut squashes, halved and seeds removed. 1 cup quinoa, rinsed. 2 cups vegetable broth. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 cup mushrooms, diced. 1 cup spinach, chopped. 1/2 cup dried cranberries. 1/2 cup pecans, chopped. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Put butternut squash halves cut side up on a baking sheet. For 30 to 40 minutes, or until soft, roast. Bring vegetable broth to a boil in a medium-sized saucepan. Turn down the heat, cover, and let it simmer for 15 to 20 minutes, or until the quinoa is cooked and the liquid is absorbed. Warm up the olive oil in a big pan over medium-low heat. Put in the garlic and onion, and cook them until they get soft. Cook until soft after adding the mushrooms and bell pepper. Add turkey bacon, pecans, thyme, cooked quinoa, salt, and pepper, and mix everything together. Add the spinach and cook for another two to three minutes, until it wilts. Take butternut squashes that have been roasted out of the oven. Fill up each half of the squash with the quinoa mix. Put the stuffed squashes back in the oven and bake for 10 more minutes. Enjoy while hot!

Baked Cranberry Cream Cheese Dip Ingredients: Cranberry Cream Cheese Dip: 2 cups extra-sharp cheddar cheese, grated (divided) 8 oz cream cheese, room temperature (full-fat or Neufchatel) 1/4 heaping cup cranberry sauce (canned, leftover, or homemade) 1/2 cup fresh cranberries (frozen cranberries can be substituted, do not thaw) 1/8- 1/4 teaspoon nutmeg (optional, fresh or ground) Optional Homemade Cranberry Sauce: 12 ounces fresh or frozen cranberries (do not thaw) 1 cup sugar (natural cane sugar or white sugar) 3 tablespoons orange juice (fresh squeezed or store-bought) 1 tablespoon lemon juice (fresh is best) 1/4 cup water Directions: Optional Homemade Cranberry Sauce: Remove 1/2 cup of cranberries for the dip. In a small saucepan, combine the remaining cranberries, sugar, orange juice, lemon juice, and water. Cook over medium-low heat, stirring occasionally, until the sugar dissolves and the cranberries start to burst. Some cranberries will remain whole while others break down. Let the cranberry sauce cool and store any leftovers in an airtight container in the refrigerator. To Make the Cranberry Cream Cheese Dip: Preheat the oven to 375°F (190°C) or 350°F (175°C) for convection ovens. Lightly spray a 1 1/2-quart baking dish with cooking spray. In a medium-large mixing bowl, combine the softened cream cheese and 1 3/4 cups of grated cheddar cheese. If desired, stir in the nutmeg to taste (about 1/8 to 1/2 teaspoon). Gently fold in the cranberry sauce and the reserved 1/2 cup of fresh cranberries. Spoon the cranberry mixture evenly into the prepared baking dish and top with the remaining 1/4 cup of grated cheddar cheese. Bake for 18-23 minutes (or 15 minutes for convection) until bubbly in the middle and golden around the edges. Cover with foil if the top is browning too quickly. A few minutes before removing from the oven, sprinkle additional cheddar cheese on top and remove the foil to allow the cheese to brown slightly. Serve warm with crostini, crackers, or pita chips. For an extra touch, grate a little fresh nutmeg over the top before serving. Labor Day 2019 Special Burger It's a real chore thing to finish this monster! I ate half, which is the probably the size of a "normal" burger. Two beef patties, here. I didn't make then myself but I seasoned them with salt and pepper and basted them with bourbon (of course) throughout cooking. The order of ingredients is: Buttered/Grilled slice of whole wheat bread/toast, a slathering of spicy/tangy chipotle sauce, beef patty with melted swiss, grilled onion, three slices of crisp bacon, slice of toast, second patty with swiss, grilled onion, a few picked jalapenos, more bacon, a fried egg (with a not overly runny yolk in honor of my good friend Ken), ketchup, mustard, a whole mess of mayo, and grilled/buttered top. Served with a pickle spear and red raspberry wine (I don't have any dry wine nor do I really care for it.) Roasted Brussels Sprouts and Cinnamon Butternut Squash with Pecans and Cranberries Ingredients: Roasted Brussels Sprouts: 3 cups Brussels sprouts, ends trimmed, yellow leaves removed 3 tablespoons olive oil 1/4 teaspoon salt, to taste Roasted Butternut Squash: 1 1/2 lb butternut squash, peeled, seeded, and cubed into 1-inch cubes (approx. 4 cups) 2 tablespoons olive oil 3 tablespoons maple syrup 1/2 teaspoon ground cinnamon Other Ingredients: 2 cups pecan halves 1 cup dried cranberries 2-4 tablespoons maple syrup (optional) Directions: Roasting Brussels Sprouts: Preheat oven to 400°F (200°C) and lightly grease a foil-lined baking sheet with 1 tablespoon of olive oil. Trim the ends of the Brussels sprouts, remove any yellow leaves, and slice them in half. In a medium bowl, toss the Brussels sprouts with 2 tablespoons of olive oil and salt. Arrange them cut side down on the baking sheet. Roast for 20-25 minutes, turning them over during the last 5-10 minutes until lightly charred on the cut side. Roasting Butternut Squash: Preheat oven to 400°F (200°C) and lightly grease a foil-lined baking sheet with 1 tablespoon of olive oil. In a medium bowl, mix the butternut squash cubes with 1 tablespoon olive oil, maple syrup, and cinnamon. Spread the squash in a single layer on the baking sheet and roast for 20-25 minutes, turning halfway through, until tender. Tip: You can roast both Brussels sprouts and butternut squash on separate sheets at the same time on the same oven rack. Toasting Pecans: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. Toast the pecans for 5-7 minutes, until they deepen in color. Check frequently as pecans can burn quickly. Assembly: In a large bowl, combine the roasted Brussels sprouts, roasted butternut squash, toasted pecans, and dried cranberries.
