This indulgent twist on classic mac n' cheese combines savory sausage, colorful bell peppers, and creamy cheddar cheese sauce for a comforting meal that's perfect for any occasion.
Ingredients: 8 oz elbow macaroni. 8 oz sausage, sliced. 1 bell pepper, diced. 2 cups shredded cheddar cheese. 1 cup milk. 2 tbsp butter. 2 tbsp all-purpose flour. Salt and pepper to taste.
Instructions: Cook macaroni according to package instructions, drain and set aside. In a skillet, cook sausage until browned, then add diced bell pepper and cook until softened. Remove from skillet and set aside. In the same skillet, melt butter over medium heat. Stir in flour until smooth to create a roux. Gradually whisk in milk until mixture is thickened. Reduce heat to low, add shredded cheddar cheese, stirring until melted and smooth. Combine cooked macaroni, sausage, and bell pepper with the cheese sauce. Season with salt and pepper to taste. Serve hot, optionally garnish with chopped parsley or grated Parmesan cheese.

The rich, savory flavors of caramelized onions are mixed with the creamy, cheesy macaroni in French Onion Mac and Cheese. It's a comforting and rich take on a traditional dish.
Ingredients: 8 oz elbow macaroni. 2 large onions, thinly sliced. 3 tbsp butter. 2 tbsp all-purpose flour. 2 cups milk. 2 cups shredded Gruyere cheese. 1 cup shredded mozzarella cheese. Salt and black pepper to taste. 1/4 cup breadcrumbs. 2 tbsp grated Parmesan cheese.
Instructions: Preheat oven to 375F 190C. Cook macaroni according to package instructions until al dente. Drain and set aside. In a large skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and cook until caramelized, about 15-20 minutes. Set aside. In the same skillet, melt remaining tablespoon of butter. Stir in flour and cook for 1-2 minutes until lightly golden. Gradually whisk in milk until smooth and thickened, about 5 minutes. Stir in Gruyere and mozzarella cheese until melted and creamy. Season with salt and pepper to taste. Add cooked macaroni and caramelized onions to the cheese sauce, stirring until well combined. Transfer the mac and cheese mixture to a greased baking dish. In a small bowl, mix breadcrumbs and Parmesan cheese. Sprinkle evenly over the mac and cheese. Bake for 20-25 minutes, or until the top is golden and bubbly. Serve hot and enjoy!

A quick and better way to make traditional mac and cheese on the stove. It uses whole wheat pasta, low-fat cheese, and a creamy sauce.
Ingredients: 2 cups whole wheat macaroni pasta. 2 cups low-fat milk. 2 cups grated reduced-fat cheddar cheese. 2 tablespoons whole wheat flour. 1 tablespoon olive oil. 1 teaspoon Dijon mustard. Salt and pepper to taste.
Instructions: Follow the directions on the box to cook the macaroni until it is al dente. Remove the water and set it aside. Put olive oil in a saucepan and heat it over medium-low heat. This will make a roux. Add the whole wheat flour and whisk it in continuously for one minute. Pour the milk in slowly while whisking all the time. Keep doing this for about 3 to 4 minutes, or until the mixture gets thick. Turn down the heat. Add grated cheddar cheese and mix it in until it melts and is smooth. Combine the Dijon mustard, salt, and pepper by stirring them in. Mix the cooked macaroni into the cheese sauce and heat it all the way through, which should take about two to three minutes. Serve right away, with chopped parsley or chives on top if you want.
